Will recommend that you get the super value for money Yakiniku-Go Set ($15.80 for 100g (short plate + beef tongue) + 60g ribeye steak), Jyo Karubi ($11.90/100g), Salmon Batayaki($9.80) and Chawanmushi($2). The house-made sauces are delicious and my fave is the yuzu one! I really think that the quality of the meats here is pretty great given their price points, and I’ll definitely be back. Don’t forget to come by on 30th August to enjoy the signature Yakiniku-Go set at just $7.70!!! Oh and I really love that the whole grilling experience is smoke-free so I didn’t smell like a walking bbq after 👍🏻

🥩沙朗 Sirloin
(屬於腰脊邊肉) 此部位取自於牛隻肋脊部靠近背肌之肌肉,肉質嫩度僅次於菲力,大理石油花分布均勻,中間部位有塊明顯油脂,散發出牛油香味。
建議:燒烤5 - 7分熟把油脂燒透來吃更美味,肉質鮮嫩,具有嚼勁。
🥩肋眼蓋 Ribeye Cap
(屬於腰脊邊肉) 非常特殊部位,入口即化,肉質珍貴,肥嫩,肉汁富有奶香,是頂級中的極品。
建議:牛排5 - 7分熟。
🥩紐約客 Strip
(屬於腰脊邊肉) 此部位運動量較大肉質較緊實 ,大理石紋油花分布均勻,油脂含量介於肋眼與菲力之間,具豐富牛肉風味,嚼勁十足適合豪邁 品嘗。
建議:牛排 3 - 5 分熟
🥩菲力 Filet
(屬於腰部肉) 取自牛隻腰內肉部位,每頭上千磅的牛只能切出幾磅的菲力,是牛肉最嫩的部位, 通常也是最昂貴的牛排,這部位運動量極少所以肉質如奶油般的細嫩,且油脂含量較低是可以優雅來品嘗的牛排。
建議:牛排3分熟,過熟就無法品嘗出它的鮮嫩多汁、微妙精緻的口感。
🥩後腰翼板肉 Bottom Sirloin Flap
(屬於腹部肉) 位於肋骨之後,瘦肉與油脂比例均勻,外型和側腹橫肌十分相似,側面內腹筋的部份內纖維為細,切成厚片也很柔嫩美味。
建議:烤肉、燉、鐵板燒。
🥩牛肋條 Rib Fingers
(屬於腹部肉) 肋骨間的條狀肉, 肉塊上方有一層白色的筋膜,燉煮後吃來入口即化,台灣知名小 吃牛肉麵經常使用的部位。
建議:可兩面先煎至酥酥的,再 進烤箱烤約15-20分鐘,依肉的厚度大小而定。
🥩牛小排 Short Rib
(屬於腹部肉) 取自牛隻的前胸肋骨,油脂含量豐富且肉質結實。
建議:非常適合炭烤或燒烤,與骨頭連接的筋膜處,會烤得相當酥脆誘人,也可以切成薄片香煎 、熱炒。
🥩中腹肉 Short Plate
(屬於腹部肉) 是脂肪沉積到肌肉纖維之間形成明顯的紅白相間, 狀似大理石花紋的牛肉,含有大量人體所需脂肪酸。
建議:涮涮鍋、燒烤。
🥩內橫膈膜 Hanging Tender
(屬於腹部肉) 俗稱的肝連或是隔間肉,支撐內臟的一塊肉,由於 靠近肝臟,鐵質含量高,類似紅豆色,非常軟嫩稀有,卡路里含量較低,深受日本女性喜愛。
建議:牛排、燒烤皆宜。
🥩扇子肉 Flank
(屬於腹部肉) 油花一般分佈就像 一把扇子,優雅的扇子肉位於菲力下方與後腹肉旁,一般稱牛腩的部位最前端出的位置,擁有菲力的鬆軟口感與後腹肉剛剛好的油脂,均勻的分佈在整個面積, 大火燒烤入口更能充滿油花與牛肉香味。
建議:燒烤、香煎、醃製。
🥩肩卷心 Chuck eye log
(屬於背肩肉) 位於牛的後頸,油花分布均勻,肉味濃郁,口感鮮甜且香氣十足。
建議:火鍋、燒肉、鐵板。
🥩翼板肉 Chuck Flap
(屬於背肩肉) 又名羽下,含有許多筋絡及油花,吃起來軟嫩適中,是牛肩唯 一較軟的部位。
建議:可以切厚片當作煎烤牛排 或薄片肉片。
🥩肩胛蓋肉 Rib Cap
(屬於背肩肉) 由於肩胛是經常運動的部位,肌肉發達,筋多,肉質較堅實,厚度均勻,脂肪含量低富有嚼勁。
建議:煎、烤、炒,煎的時間過長會使肉汁流失,每面建議煎5分熟即可。
🥩下肩胛 Chuck Roll
(屬於背肩肉) 又名鞍下,位於牛隻肩胛的部位,是牛運動量較大的部位,肉質有嚼勁、油花豐富,是由多塊 不同紋理的肌肉所組成,因此口感豐富。
建議:燒烤、燉、滷。

🥩臀肉心 Roast beef

🥩頭刀 Top side
(屬於後腿肉) 來自後腿近臀部的一塊肌肉。
建議:切塊作碳烤、燒烤、煨或 紅燒皆宜,較大塊的則宜用來燉 ,兩端較小肉塊可製沙嗲、串燒 或肉絲、煎炸皆宜。
🥩和尚頭 Knuckle
(屬於後腿肉) 位於牛後腿內側, 因為外型渾圓光滑,使得台灣人 將其命名為和尚頭,肉質較瘦、 纖維粗較有嚼勁。
建議:涮涮鍋、烤牛肉,切肉絲後熱炒,或是用於燉煮。
🥩三角肉 Tri Tip
(屬於後腿肉) 位於牛後腿外側, 靠近股骨一端臀肉中分割而出, 主要由闊筋膜肌等肌肉組成,一頭牛只能取出兩枚三角肉,非常稀少珍貴,淡粉的牛肉中夾雜著雪花般美味的豐富脂肪,是烤肉店最受歡迎的品種。
建議:燒烤、燉、壽喜燒。
🥩三叉 Outside Round
(屬於後腿肉) 取自牛隻的後腿部位,可分為兩塊主要肌肉:三叉和鯉魚管,絞理細嫩但肉質韌。
建議:可做牛排、炒牛肉、慢火燉煮菜色、醃薰。
🥩鯉魚管 Eye Round
(屬於後腿肉) 居於外側後腿肉部位,狀似菲力,但是肉質比較粗且硬質,處理時先去筋或以拍打方式加以嫩化,口感更佳。
建議:用來做炒肉或火鍋肉片。
🥩腱子心 Heel Muscle
(屬於腿肉) 是牛隻前後小腿去骨後的肉塊,和腰窩肉一樣,腱子肉中的脂肪很少,肉中有許多連結組織,筋紋呈花狀,烹煮後Q勁又多汁。
建議:適合滷、燉、煮。
🥩板腱 Top Blade
(屬於前腿肉) 附著於肩胛骨上方的肉,梅花牛肉和嫩煎里肌即出於此處,中間帶筋、油花較少、 肉質結實、肌肉纖維多,CP質相當高。
建議:喜歡嚼勁的人可直接香煎或燒烤,牛排5-7分熟,或是燉煮 ,也是做成牛肉乾的上選部位。
🥩黃瓜條 Chuck Tender
(屬於前腿肉) 背肩部中較軟的部位,肉質甚佳。
建議:適合炒條狀、烤塊狀、煎牛排,除此之外,還可以用微波爐烹調或火鍋薄片食用。
🥩三角肩小排 Chuck Short Rib
紋路明顯下方成逆紋,層次較分明,筋較少、薄膜較多,覆蓋第1-5根肋骨上方的肉成三角形,脂肪的甘美和肉的味道性格強烈。
建議:燒肉片3-5分熟,燒烤要讓瘦肉流出的肉汁和油脂達到平衡 ,建議 7分熟。
🥩前腿心 Clod Heart
由三頭肌組織所構成,取自牛隻的前腿部分,位於白骨前段,是連接牛頸的主要肌肉,屬於經常運動部位,肉質結實有彈性,油脂分布適中、肉味甘甜。
建議:燒烤、火鍋、燉。

白汁蘑菇芝士牛仔骨意大利粉
材料:
急凍牛仔骨1磅半(6件)
磨菇湯1罐
磨菇片1罐
芝士2片
意大利粉(500克)1盒
青瓜2條
蕃茄2個
處理/程序:
1. 大火煲滾1鑊水。
2. 牛仔骨:
a. 清水解凍,用廚紙輕手索乾。
b. 加入黑椒蒜鹽1茶匙,兩面搽勻,醃3分鐘。
3. 水已煲滾,加入鹽1茶匙。
4. 扇形放意粉,冚蓋,大火滾起後,轉慢火煮大約3分鐘,打開蓋,攪動一下,冚蓋再煮2分鐘。
5. 另一邊,大火在鑊中燒熱油1茶匙。
6. 放牛仔骨在鑊內,煎1分鐘,反轉另一面再煎1分鐘。
7. 牛仔骨已煎好,放上碟。
8. 意大利粉已烚好,擎乾水。
9. 在鑊內,蘑菇湯加入半罐清水,大火煮滾及攪勻。
10. 在意大利粉上,放2片芝士。
11. 蘑菇汁已煮好,加入已擎乾水分的蘑菇片,煮至大滾。
12. 蘑菇汁已煮好,淋在意大利粉上。
13. 加入已預先冷凍的切片蕃茄及青瓜伴碟。
14. 完成,可享用。
Beef short ribs spaghetti in cheese mushroom sauce
Ingredients:
Frozen beef short ribs 1.5 lb (6 slices)
Mushroom soup 1 can
Sliced mushrooms 1 can
Cheese 2 slices
Spaghetti (500g) 1 box
Cucumber 2 logs
Tomatoes 2 Nos.
Preparation/Steps:
1. Heat up a wok of water at high flame.
2. Beef short ribs:
a. Defrost with tap water. Lightly dry with kitchen towels.
b. Add in black pepper garlic salt 1 tsp. Mix well and season for 3 minutes.
3. Water boils up. Add in salt 1 tsp.
4. Put spaghetti and cover up the wok. Boil up at high flame, turn to low flame cook for 3 minutes. Stir it. Cover up the wok again and cook for 2 minutes more.
5. On the other side, heat up oil 1 tsp at high flame in wok.
6. Put beef in wok. Fry for a minute. Flip it over and fry for a minute more.
7. Beef shorts ribs have been cooked well, put on plate.
8. Spaghetti has been cooked well, drain.
9. Mushroom soup, add in half can of water. Heat up at high flame in wok and mix well.
10. Put 2 slices of cheese on top of spaghetti.
11. Mushroom sauce has been cooked well, add in drained sliced mushrooms. Heat it up at high flame.
12. Mushroom sauce is ready, pour on top of spaghetti.
13. Put the frozened sliced tomatoes and cucumber next to the beef.
14. Complete. Serve.

In this episode, we headed down to Carnivore to rampage through a Brazilian AYCE Steakhouse Buffet! Carnivore, located at Chijmes, is a Churrascaria, which is a buffet restaurant that specialises in Churrasco (Spanish/Portuguese-style Grilled Meat). Only offering dinner service, prices range from $59++ to $69++ depending on the day for an all-you-can-eat Brazilian buffet.
Due to the Covid-19, their usual salad bar, where you could pick 15 different hot and cold sides, is now an ala minute service. Sides range from the iconic Brazilian dish, Feijoada, which is a black bean stew cooked with chunks of beef and pork, to salads.
Their meats are still served similar to the standard rodizio style, where meat waiters roam around with skewers of delectable meat, offering portions to tables. However, the carving is done at an isolated table and a designated staff member brings it to your table upon request. Choices range from beef, chicken, lamb, fish and pork, including beef hump, beef short ribs, beef brisket, chicken hearts, butterfish and lamb leg.
Realising that having them serve me their usual way would be too slow, I brought my giant plate along and had them plate a sumptuous meat feast. I got every single one of their grilled meats, rounding it off with their feijoada set. The feijoada set actually stood on its own very well versus the grilled food. The combination of the stew, garlic rice, sautéed kale and toasted cassava flour (farofa) brought many contrasting flavours and textures together in wonderfully pleasant fashion.
The standout meats would be the beef brisket, beef short rib and beef rump. Each were spectacularly tender and rich with a deep meaty flavour. Carnivore also offers a selection of sauces to go along with your meat, with the ideal one being chimichurri, a vinegar-heavy sauce that helps to cut through the fattiness of the meats.

For this video, we headed down to Mischief at Esplanade to complete a 5KG Viking Meat Platter! With the recently released Assassin Creed Valhalla, we were inspired to find and devour a Viking-themed platter, and Mischief generously offered us their food with a bit of customisation. Mischief is a bar/restaurant located at the Esplanade that serves American-Asian fusion food that you can pair with a large variety of alcoholic beverages.
Assassin’s Creed: Valhalla attempts to be historically authentic, immersing you into the 9th Century Viking experience as a raider in England. Together with the classic features of the Assassin’s Creed series such as stealth and assassinations, you will find yourself building your clan and amassing resources as a conqueror in a realm ripe with wealth for the taking.

For this 5KG Viking Platter, we had to make do with what was available at Mischief while trying to Viking-ise the platter as possible. We added BBQ Baby Back Pork Ribs, Sliced Beef Brisket, Angus Beef Short Ribs, Pork Sausages, Smoked Salmon and a whole BBQ Chicken for the protein. Then for some diversity and colour, we placed Garlic Bread, Green and Red Grapes, Sauerkraut, Grilled Corn and Cherry Tomatoes onto the Viking Platter. The result - a beautifully vibrant plate of food fit for a Viking King.
In line with the Viking-theme, I dressed up in a fur-clad Viking suit to complete this challenge, but it became too hot so I had to remove part of the outfit. The food was delicious, especially the Beef Brisket and BBQ Chicken. The Asian-American fusion came through stunningly, with the chicken being slightly sweet and very moist with notes of turmeric and other Asian spices. The Brisket was extremely tender with a deep “meaty” flavour that can only come from hours of slow-cooking to concentrate the flavour. I completed the Viking Platter with little difficulty other than the sweltering heat.
