#1 Lentil Meatloaf
90 g (1/2 cup) cooked brown lentils
1/2 Tablespoon olive oil
1/4 large onion, chopped
2 cloves garlic, minced
1/2 (~50 g) carrot, peeled and chopped
30 g (1/4 cup) chopped walnuts
90 g (1/2 cup) quinoa, soaked (use cooked quinoa would produce more soft texture)
1.5 Tablespoons liquid amino or tamari/soy sauce (https://iherb.co/2fWjbD55)
1.5 Tablespoons tomato puree (tomato paste)
1.5 Tablespoons ground flaxseed
1 Tablespoons nutritional yeast
1 teaspoons pure maple syrup
1/2 teaspoon apple cider vinegar
1/2 teaspoon dried oregano
1/8 teaspoon smoked paprika
1/8 teaspoon ground pepper
1/8 teaspoon salt
(I grind some celery seeds and salt together, you can also use celery salt - https://iherb.co/ynv54sPP)
→ Bake at 175 C / 350 F for 10 minutes first then spread some BBQ sauce. Return to bake for another 25-30 minutes.
PS. I use the recipe in my e-book. You can use a store-bought one or ketchup. Just make sure it's vegan. Here is a vegan BBQ sauce I recommend - https://iherb.co/AGaiCS2h

#2 Rosemary Roasted Pumpkin
1/4 pumpkin ~100 g pumpkin kin (or whatever you want to make)
A few drizzles of olive oil
2 tsp dried rosemary
salt & pepper
→ Bake at 175 C / 350 F for 25-30 minutes.

We became interested in this Basque-style cheesecake after it was sold at the Lawson convenience stores. We tried making a unique tasting cheesecake with a smooth texture on the inside and a crisp caramelized outside. It is very rich and delicious! Moreover, we came up with a simple recipe that could be made using a mixer. We created a Baschee that can satisfy Moso Gourmet!
*Recipe* (round pan with a 16 cm diameter and 6 cm height)
1. Scrunch parchment paper into a ball, wet it with water, and squeeze to wring the water out. Spread it onto the pan.
2. Put 290 g of cream cheese, 100 g of granulated sugar, and 3 eggs in a mixer and mix together.
3. Add 170 g of fresh cream, 1 tbsp of cake flour, and 1/2 tbsp of corn starch, then add 2/3 tsp of lemon juice and mix.
4. Pour into the mold from step 1.
5. Bake in a 220°C preheated oven for 20 minutes. If you prefer a slightly firmer cake, bake for an additional 3 minutes.
6. After it cools down, leave it in the mold and chill in the refrigerator.
7. Cut with a warm knife, and enjoy.
If you are not using a springform pan, we recommend removing the cake from the pan after it has cooled for about 5 hours. The parchment paper may become damp, torn, and difficult to remove.

デザートが充実しているコンビニのローソンでも発売されていて気になっていたこのバスク風チーズケーキ。中のなめらか食感と外の焦げのカラメル感が新しい味わいのチーズケーキ作ってみました。とっても濃厚でうまい。しかもミキサーで混ぜるだけのお手軽レシピにしてみました。チーズケーキ好きの妄想グルメも満足のバスチーできました。
*レシピ*(直径16✕ 高さ6センチの丸型)
1.オーブンシートをくしゃくしゃと丸め、水で濡らし水気を絞る。型に敷き込む。
2.ミキサーにクリームチーズ 290g、グラニュー糖 100g、卵 3個を入れ混ぜる。
3.生クリーム 170g、薄力粉 大さじ 1とコーンスターチ 大さじ 1/2を合わせてふるったもの、レモン汁 小さじ 2/3を加え更に混ぜる。
4.1に流し込む。
5.220度に予熱したオーブンで20分焼く。もう少しかためがお好みの方は、もう3分追加して焼く。
6.粗熱が取れたら、型のまま冷蔵庫でしっかりと冷やす。
7.温めたナイフで切り分けて、いただきます。
底取れでない型を使用の場合、5時間ほど冷やした段階で型から取り出すことをオススメします。オーブンシートが湿って、破れ、取り出しにくくなる可能性があります。

Ingredients:
For the dough:
300g bread flour
30g oil
20g cane sugar
3g salt
150g water
5g beet
3g dried yeast
For the sakura an paste:
150g navy beans
100g cane sugar
15g pickled cherry blossoms
Instructions:
1. soak navy beans overnight. bring to a boil.
2. add water a few times, drain and rinse. bring to a boil again and keep simmering until tender. add water as needed.
3. blend beet and water with a blender. then strain. add dried yeast.
4. combine all the ingredients for the dough and knead well.
5. let it ferment until it doubles in volume.
6. strain the navy beans. add cane sugar and pickled cherry blossoms(rinse and drain beforehand).
7. keep heating until you get the desired texture.
8. divide the dough into 10 equal pieces.
9. roll out the dough into round shape. put sakura an paste and wrap it with the dough(use 20g sakura an paste for each)
10. make a slit evenly at five points. make it into sakura shape.
11. let it ferment for 30 - 60 mins
12. bake at 320F/160C for 12 mins

「材料」
パン生地
強力粉 300g
オイル 30g
きび砂糖 20g
塩 3g
水 150g
ビーツ 5g
ドライイースト 3g
桜餡
手亡豆 150g
きび砂糖 100g
桜の塩漬け 15g
「作り方」
1、手亡豆を一晩浸水し、鍋に移して沸騰させます。
2、差し水を数回して、一度茹で汁を捨てて水ですすぎます。新しい水でまた沸騰させ、柔らかくなるまで弱火で煮ます。必要に応じて水は足してください。
3、ビーツと水をブレンダーにかけ、漉してからドライイーストを加えます。
4、パン生地の全ての材料を混ぜ合わせ、よく捏ねます。
5、二倍に膨らむまで一次発酵させます。
6、煮た手亡豆を裏ごしします。水にさらした桜の塩漬けときび砂糖を加えます。
7、適度な固さになるまで煮詰めます。
8、パン生地を10等分します。
9、生地を丸型にのばし、桜餡を乗せて包みます。(桜餡は1つ20gずつ)
10、5箇所に切れ込みを入れ、桜の花の形に成形します。
11、30〜60分ほど二次発酵させます。
12、160℃で12分ほど焼きます。
