菠蘿包脆皮材料Crust:
含鹽奶油120g salted butter, room temperature
蛋黃2 egg yolks
糖150g sugar
麵粉120g flour
OREO 80g oreo cookies, processed
吉士粉5 tbsp custard powder
泡打粉1/2 tsp baking powder
水1 tsp water
蛋白2 egg whites, beaten for brushing
Molten Chocolate Cake for the centre
115g 黑朱古力Dark Chocolate (or any chocolate you like)
45g 牛油 Butter
¼ cup (25g) 糖粉 Icing sugar
2 tablespoons (15g) 朱古力粉 Unsweetened cocoa powder
2 雞蛋 eggs
For greasing the ramekins:
2 teaspoons 牛油 butter for greasing the ramekins
2 teaspoons 砂糖 caster sugar
Dough Ingredients:
Part 1 - Roux:
麵粉3 tbsp flour, 24g
奶1/4 cup milk, 60 ml
水1/4 cup water, 60 ml
Part 2 - 麵團材料Dough
麵粉2 1/2 cups flour, 325g
糖1/8-1/4 cup sugar, 25g-50g (depends how sweet you like your bread)
酵母2 tsp instant yeast, 7g (Christian 提供)
鹽1/2 tsp salt, 3g
雞蛋1 egg
奶1/2 cup room temp milk, 120 ml
牛油4 tbsp softened butter, diced, 56g
麵粉1/4 cup extra flour
Instructions:
Make the molten chocolate cake filling: In a bowl, melt the chocolate and butter (in the microwave, or gently in a pan or in a bowl over steam) cool slightly and then add the eggs and sifted icing sugar and cocoa powder.
Grease the ramekins and coat the inside with butter caster sugar.
Fill the ramekins to ½ full then wrap with cling film or aluminium foil. Bake in a 200C preheated oven for 8 minutes. Cool down and place in the freezer overnight.
For the dough, cook part 1 and mix well and set aside to cool.
Then make part 2, by mixing all the wet ingredients with the yeast, then mixing in the dry ingredients. Then mix in Part 1.
Knead and allow to rise for 1 hour.
Form into balls and place the chocolate in the centre and then allow to rise on a greased oven tray.
Make the crust by mixing all the ingredients together, form into a tube and wrap with cling film.
Then place in the fridge for 30 minutes.
Cut and the roll and then place on the dough balls, then brush with egg whites.
Preheat the oven at 180C
Bake for 18-20 minutes.
Serve hot!

Recipe: Oven-less, Flourless Molten Chocolate Pudding
Please share your version when you cook it! I would love to see what you make!
Recipe:
115g 黑朱古力Dark Chocolate (or any chocolate you like)
45g 牛油 Butter
¼ cup (25g) 糖粉 Icing sugar
2 tablespoons (15g) 朱古力粉 Unsweetened cocoa powder
2 雞蛋 eggs
For greasing the ramekins:
2 teaspoons 牛油 butter for greasing the ramekins
2 teaspoons 砂糖 caster sugar
In a bowl, melt the chocolate and butter (in the microwave, or gently in a pan or in a bowl over steam)
cool slightly and then add the eggs and sifted icing sugar and cocoa powder.
Grease the ramekins and coat the inside with butter caster sugar.
Fill the ramekins to ½ full then wrap with cling film or aluminium foil.
Steam on high heat for 18 minutes.
Invert it onto a plate
Serve hot with your favourite ice cream!
No oven no problem!

🍫繪本與巧克力
7/7是世界巧克力日,有人私訊問我有沒有中文版的巧克力繪本可以介紹。我想到一本《麗莎和卡斯柏的甜點食譜書》。三級警戒時期,博客來童書銷售狂漲八成。去年我們在podcast中也提到日本在疫情期間也是書店銷售成績狂漲,加上鬼滅的風潮,銷售成績甚至比疫情前幾年都還好,也讓許多地方書店起死回生。除了童書、練習本,親子食譜也賣得很好。
這本《麗莎和卡斯柏的甜點食譜書》現在博客來賣399,我覺得超便宜阿!因為他書後還附有42片磁鐵,除了可以把磁鐵拆下來,在做甜點之前挑出來黏在冰箱上外,還可以玩找找看&配對遊戲。(我找一片找超久,後來發現是兩片黏在一起)
這本的新書腰上加了STEAM教育,我真的看不出來跟STEAM有什麼關係阿XD~跟食育比較有關吧。由此可知現在STEAM是多夯的關鍵字。
另一本要推薦的是《CHOCOLATE巧克力》,這本字較多,介紹了巧克力的22個知識,包含人文及科學,這種 #跨領域的知識性繪本是這幾年的主流。(台灣沒有,台灣只愛STEAM)
還有一本超可愛的刀根里衣的《Hot chocolate for you モカとつくるホットチョコレート》,當初我買的是義大利文版,後來有日文版,買起來方便多了,是本溫馨可愛的迷你繪本。介紹可以看這邊:https://pse.is/3kqnj8

抹茶とチョコの蒸しパンをご紹介します!
フライパンでお手軽に作れて、とってもふんわり仕上がります♪

2色の蒸しパン
4個分
材料:
■抹茶風味
ホットケーキミックス 50g
抹茶(粉末)小さじ1/2
甘納豆 30g
A牛乳 大さじ2
A溶き卵 1/2個分
A砂糖 小さじ1
A米油 大さじ1/2
■ココア風味
ホットケーキミックス 50g
ココアパウダー 小さじ1/2
チョコチップ 20g
B牛乳 大さじ2
B溶き卵 1/2個分
B砂糖 小さじ1
B米油 大さじ1/2
作り方:
1.抹茶風味を作る。ボウルにAを泡立て器でよく混ぜ、ホットケーキミックス、抹茶を加えて、だまが消えるまでさらによく混ぜる。2/3量の甘納豆を加えてざっと混ぜる。
2.ココア風味を作る。ボウルにBを泡立て器でよく混ぜ、ホットケーキミックス、ココアを加えて、だまが消えるまでさらによく混ぜる。2/3量のチョコチップを加えてざっと混ぜる。
3.ココット等の耐熱容器4個に紙カップをしく。(1)、(2)を半量ずつ入れる。抹茶風味には残りの甘納豆をちらし、ココア風味には残りのチョコチップをちらす。
4.フライパンに深さ3㎝くらい水を入れて沸かし、(3)を並べる。濡らした布巾で包んだ蓋をして強火で15分ほど蒸す。竹串を刺して生地はついてこなければ完成!

INGREDIENTS
-Matcha flavor
50g Pancake mix
1/2 teaspoon Matcha (powder)
30g Amanatto
A 2 tablespoons Milk
A 1/2 Beaten egg
A 1 teaspoon Sugar
A 1/2 tablespoon Rice oil
-Cocoa flavor
50g Pancake mix
1/2 teaspoon Cocoa (unsweetened)
20g Chocolate chips
B 2 tablespoons Milk
B 1/2 Beaten egg
B 1 teaspoon Sugar
B 1/2 tablespoon Rice oil
PREPARATION
1. Make matcha flavor. Mix A ingredients well in a bowl with a whisk, add the pancake mix and matcha, and mix well until the lumps disappear. Add 2/3 amount of Amanatto and mix gently.
2. Make cocoa flavor. Mix B ingredients well in a bowl with a whisk, add the pancake mix and cocoa, and mix well until the lumps disappear. Add 2/3 amount of chocolate chips and mix gently.
3. Put a paper cup in 4 heat-resistant containers such as cocotte. Add 1 and 2 in halfway up the containers. Sprinkle the remaining sweet natto on the matcha flavor and sprinkle the remaining chocolate chips on the cocoa flavor.
4. Put water about 3 cm deep in a frying pan and bring to a boil, then line up the containers in the pan. Cover with a damp cloth and steam on high heat for 15 minutes. If you stick a bamboo skewer and there is no batter residue the cakes are ready.
5.Enjoy!

Resepi Apam Mekar Tembikai
Bahan-bahan
1 cwn tepung gandum
1/2 cwn gula kastor
1 biji telur (A)
100 ml susu segar
1 sk ovalet
1 sk esen vanila
3 sb coklat urai
pewarna makanan (merah, hijau)
Cara memasak
1. Dengan menggunakan mesin pengadun, pukul telur, gula kastor, esen vanila dan ovalet sehingga kembang.
2. Masukkan tepung gandum dan susu segar. Gaul sebati menggunakan teknik kaup-balik.
3. Kemudian, ambil sebahagian adunan dari bekas pengadun dan bahagi kepada tiga mangkuk.
4. Tambahkan pewarna hijau dalam satu daripada adunan dalam mangkuk tadi dan kacau sebati dan satu lagi biarkan berwarna putih.
5. Untuk lebihan adunan di dalam bekas pengadun, tambahkan pewarna merah dan kacau sebati.
6. Masukkan coklat urai dan kacau sekali lagi sehingga rata.
7. Setelah itu , sendukkan adunan merah ke dalam acuan kek cawan diikuti dengan adunan putih di tengah dan adunan hijau di atas.
8. Akhir sekali, celupkan pencungkil gigi ke dalam pewarna hijau.
9. Lorekkan pada bahagian atas adunan dengan garis menegak serta melintang untuk menghasilkan corak tembikai.
10. Kukus pada api tinggi selama 10 minit.
11. Apam Mekar Tembikai siap untuk dihidangkan.

Apam Mekar Tembikai Recipe
Ingredients
1 cup of wheat flour
1/2 cup of castor sugar
1 egg (A)
100 ml fresh milk
1 tsp of ovalette
1 tsp of vanilla essence
3 tbsp of chocolate rice
food coloring (red, green)
Cooking methods
1. Using a mixer, beat egg, castor sugar, vanilla essence, and ovalette until rising and fluffy.
2. Add in flour and fresh milk. Mix well using the folding method.
3. Then, take out parts of the batter into two bowls.
4. Add green food coloring into one of the bowls and mix evenly.
5. For the remaining batter in the mixer, add red food coloring and mix evenly.
6. Add in chocolate rice and mix again until everything is well combined.
7. After that, scoop the red batter into the cupcake molds followed by the white batter in the center and finally the green batter on top.
8. Finally, dip a toothpick into the green food coloring.
9. Draw vertical and horizontal lines on top of the cupcakes to produce a watermelon pattern.
10. Steam on high heat for 10 minutes.
11. Apam Mekar Tembikai ready to be served.
