You are who you are right at this moment for a bunch of reasons, triggered by a series of events, despite countless struggles. For convenience sake, call it Karma.
Back home, there is no one to cuddle you, karma. There is someone to cuddle you, also karma. You earning seven figures, karma. You struggling with your rent, karma. You have done work recognised by hundreds of people, karma. Your work only matters to a few, karma.
The funny thing is, some people are offended by what I just wrote. Know what, you cannot be offended if there is not an inferiority complex inside you in the first place. If you are proud of yourself, you will be proud of yourself for needing no one to cuddle, for struggling with your rent every day (at least you’re on your own), for dealing with work that matters to a few.
Take a good look at yourself.
When was the last time you think you did something bad or made a mistake? Two days ago? A few minutes ago? Six weeks ago? Ten years ago? It is a HUGE problem if you don’t recognise the bad that you have done. It is a HUGE problem that you are too wrapped up by the bad that others have done.
My guess is, however small, we do something bad every day. Don’t just recognise the bad you have done. Recognise its magnitude as well. It is a HUGE problem to think that your mistake was just something you did “a little out of line” while the mistakes others made were ALWAYS WAY OUT OF LINE. It is a HUGE problem to think you are not a huge problem.
When was the last time you made a donation to charity? When was the last time you helped someone in need who is not related to you at all? When was the last time you made a compliment to someone just to hope that person could get through the day?
You probably start to have a little idea why you are who you are now.

If you're not from Singapore or Thailand (which other country has Samurai burger? - lemme noe if you noe), you may not have heard about this burger before. This is a seasonal burger meaning McDonald's only serve this once a year. I love Samurai Burger because it's so juicy - drenched with the yummy sauce. Ooh Lala!! Next up, I shall get Roland to try and make McDonald's Prosperity Burger. Who here likes that too?

McDonald's Inspired Samurai Burger ingredients
Serves 4 pax

700g ground beef (20% fats 80% lean meat - you can use pork or chicken instead)
1 teaspoon garlic powder
1/2 teaspoon ground black pepper
1 teaspoon salt
Teriyaki sauce

250ml sake
1/2 thumb sized young ginger - grated
2 cloves garlic - grated
125ml low sodium light soy sauce
125ml mirin
2 tablespoons brown sugar
Other ingredients

1 red onion - sliced (you can use yellow onion)
4 burger buns
4 eggs
Some lettuce
4 slices cheddar cheese

In this video, I will show you how to make very basic Inarizushi with plain Sushi rice. Easy yet delicious, perfect for party, picnic, or any kind of event!
Inarizushi (Inari Sushi) is Sushi rice stuffed in tasty Aburaage (Fried Tofu pouches).
In Japan, Inarizushi can be widely found at restaurants, supermarkets, conbini (convenience stores), and etc... Sometimes store-bought ones are too sweet but this one is very mild. Homemade is the best 😉

How to Make Basic Inarizushi
Difficulty: Easy
Time: 1hr + cooling time
Number of servings: 20 pieces
Ingredients:
660g (1.5lb.) cooked Japanese rice (short-grain rice)
A
* 3 tbsp. rice vinegar
* 3 tbsp. sugar
* 1 tsp. salt
10 square Aburaage (deep-fried tofu pouches)
B
* 4 tbsp. soy sauce
* 4 tbsp. Mirin (sweet Sake)
* 4 tbsp. sugar
* 400ml Dashi broth
4 tbsp. roasted white sesame seeds
Directions:
1. Place the Aburaage on a cutting board and trace the Aburaage with a chopstick to make it easy to open. Cut into half and open. If you are using square Aburaage (deep-fried tofu pouches) cut diagonally into half to get 2 right-angled triangles. If you are using rectangular Aburaage, cut into half to get 2 squares.
2. Put Aburaage in boiling water for a minute to remove the excess oil. Drain in a strainer and wash with warm water. Stack up 3-4 pieces at a time, then press with your hands to drain well.
3. Put B and Aburaage in a pot, then bring to a boil. Turn the heat down to low and cover with an Otoshibuta or a wooden drop-lid (you can substitute it with with a sheet of aluminum foil and use any small lid or a plate as a weight if needed) and simmer for 20 minutes. Stop the heat and let them cool completely for a few hours or overnight is OK.
4. Make Sushi vinegar by mixing A (or use store-bought Sushi vinegar). Add the Sushi vinegar while the rice is hot and slice through the rice using a rice paddle to separate the grains. Mix sesame seeds in the Sushi rice. Divide the rice into 20 equal portions. Wet your hands and make small balls of Sushi rice.
5, Take a piece of Aburaage and lightly press with your hand to remove the excess liquid. Stuff a ball of Sushi rice and close the pouch. *Please see the video for details.

Yakitori or 焼き鳥 in Japanese language, is a type of skewered chicken in Japanese cuisine. Preparation of yakitori involves skewering the meat with sticks made of steel or bamboo. Once done, they are grilled over charcoal fire but for home cooking, you can consider grilling them in an oven or airfryer. The effect? Not as fragrant compared to charcoal grilled yakitori but definitely still super yummy because of the sauce over the chicken. Yum!

Ingredients:
Makes 7 skewers
1/3 cup of water
1/2 cup of sake
1/3 cup of light soy sauce
1/3 cup of mirin
1/2 onion
1 stalk of scallion (green part only)
1 tablespoon of brown sugar
2 pcs of chicken thigh (weighing a total of 420g in total)
7 bamboo skewers (soaked in water for at least 30 mins)
2 stalks of scallions (white part only)
Bake at 220C for 20 mins
On the 10-min mark, take the yakitori out and brush 2/3 part of the sauce on each skewer.
At the end of the 20-min, after removing yakitori from oven and brush the remaining sauce on each skewer. Serve hot and enjoy!
