WE ARE ON DAY 18 of self-quarantine and still really like each other! Here are some of our favorite play ideas that we've loved doing as a family and independently.

*Food sources are a precious commodity at the moment (we haven't been to a grocery store!) so we've really been conserving all our dry goods for however long we might need to quarantine for which means we're really rotating between just a few things (water, soil, slime, etc) so don't worry about having to come out with something new everyday. They are honestly happy to play with the same medium, it allows them to come out with different creations and explore deeper!

Honestly, Ella Grace has a little art table so she really just leads this. We just make the materials available for her and she comes out with some gems! My best advice however is for painting or anything that's "messy", let them paint in the shower! We strip her down, she paints on the glass to her heart's content, the clean up and hosing it down is part of the fun then a shower after! No stains on clothes, no worrying about wet paint or where to hang all the artwork later and best of all, minimal clean-up!

The sky is the limit on this one and honestly, the world (or anything she can find within our four walls) is her oyster
Dress-up
Costume jewelry
Blanket - she has a soft bamboo muslin wrap from when she was little that she uses for everything. It's probably her most used toy in the house she plays w it so much - cape, hat, skirt, scarf, etc
Forts - use flat sheets or blankets and pillows and see what you can build with what you have!
Cardboard - build a robot suit or an entire landscape!
Restaurant - there's an instruction leaflet from a game that Ella Grace likes to use as a "menu" which again goes back to…use your imagination! You don't have to have a "kitchen" to play cooking!
Salon - hair, facials, manis, pedis, even daddy gets to have a go!
Construction - one of our favorite things to do is just build. We recycle old egg cartons, boxes, packaging materal, magnatiles - Bueno Blocks has an incredible selection of open-ended toys!
Real life - honestly this the best and total win-win! She helps me cook, cut, prep, mop, sweep, vaccuum, make beds, wipe, clean, etc and is actually a really big help!!

Reading (she does a lot of this both independently and together as a family)
Writing/activity books - this is really optional. Our ethos is play is learning and learning has to come from within so we don't push "school" at all. She has a bunch of workbooks gifted from various places that she likes to take out and work on whenever and we just allow it to be part of free play and because it's not a "chore" she loves it
Pretend cooking show!!
Podcasts (refer to previous post for our extensive list of favorites!)
TV time - she has set tv time while I make dinner and her favorite programs are Hi-5, The Wiggles, Fireman Sam, Paw Patrol! We also do movie night once a week and it includes snacks and lots of cuddling!
Gardening - grow a little patio/balcony garden. We planted some cilantro roots and sprouted onions!!
Friendship bracelets
Make a jumprope!
Learn a new language or skill
Picnic on your balcony if you have one or a pretend picnic in your living room!
Balls - seriously, there are so many things you can do w ball! Ella Grace had an entire afternoon of fun and made-up games by herself with just a little wooden ball and basket.
Mostly, just remember this. It's okay if they get bored. In fact, allow them to be. Remember the ball and the basket story? She had so much fun because we've actively allowed her to just explore, be creative, be bored, use her imagination, and not micromanage or set up all her play for her. The key to surviving and even thriving(!) isn't to plan out every second of their day, the key to surviving MCO is to trust her and allow room for adventure and fun. Be flexible. Freedom within boundaries, mama.
The only way through is to do it together and sometimes that means having her play by herself while I work and the other times, it means really checking in, being present, and playing along with her!
That's the secret.❤

今天雖然休假,一整天卻也挺充實
跑去醫院探望外婆,跟堂弟打球,晚上跟家人吃飯聚餐,試著在創業期間擠出點時間陪家人之外
我滿~~腦子,還是想著接下來要在菜單上做的改變
而由於思考習慣的關係,我常常以英文去做各種思考
我想這受益於我上個專業 - 英文 的關係
最近由於健忘,所以習慣把自己自言自語般的思考過程記錄下來
紀錄完成後覺得這件事有點ㄎㄧㄤ
所以決定拿出來博君一笑,滿腦子想著食物的人到底是怎麼思考的

關於親子丼與漢堡排的故事

OYAKODON, a dish that known to every Japanese
and of course its popularity around the world shows the value and power within few ingredients
under the pressure of putting more items on the menu
This sensationally simple yet delicious dish came to my mind
But, how to make it a restaurant worthy dish, instead of most people can recreate in their house
IS a everyday issue to most chefs lol
So after couple of hours doing researchs online
A method sounds pretty sexy to me
Pre-poach your seared, still raw chix thigh in wings stock and flavor it with spring onion juice, while it set in the fridge, the gelatin from the cooking of wings seal all the fragrance and flavor
then all you have to do is to scoop out your chix and jelly while you get order, heat it up with some sweetened soy, finish it with free range egg
viola, Oyakodon that is perfect both for service side and flavor side,,,,amazing
and also i was thinking about rearranging the sequence that i do my tofu burger,,,
i used to simply smash the tofu with the mince, season it, shape it and cook it just above 65 degrees
finally, bagging it up with some teriyaki sauce and chill
while in service all i have to do is to take it out from 62 degrees water bath and heat it up with all the veggies
but you know, after smashing tofu with everything, you only get the soft texture from the end result - the whole patty
But
you dont get the soft texture from the tofu
so while i was brainstorming about this, sitting on the toilet in my house ( unfortunately im sorry
i was like, well
in order to get the texture from the tofu, i must not break it too much, but in the meanwhile i gotta try to combine it with the mince well enough to form a patty
So,,,
Instead of breaking the tofu with the mince
I can sear it first to get a bit of the water content out of it, then smash it gently with pork skin jelly ( sth that you boil the shit out of pork rind and you'll get gelatin like skin stock, then you dice it into cubes,,,)
then combine it gently with skin jelly, and just like making a scotch egg, you shape your patty into an one inch flat layer, then on the other hand you shape a ball of tofu/skin jelly mixture
then wrap it up and press it just like any other patty
so while you sear it in the pan, the jelly inside the patty will slowly melt and your burger will be fucking sexy and juicy
and to prevent from any juice leaking out in the cooking process
i might dust the patty with a bit flour before cooking
wishing that the flour will create a crust to encase all the juice inside,,,

thats passion right here, for no reason at all to think of food and cooking all the time
thats how I loveee cooking lol
and funny things is that though my first language is Mandarin
But while i was thinking of food, most of the time it is English version lol

令人吃得有點生氣的Atelier Crenn,連廚房沒有參觀就走了。
之前聽過好些食友對這家餐廳貶多於褒,所以來三藩市都沒有特別想試。這一次因爲該吃的名店也大致上吃過了,不如就試試這家吧,更何況去年摘了三星。
不信邪,結果⋯⋯
四大問題:
1. 技術的根基很薄弱(我邊吃邊跟Eric 說,應該沒上過廚藝學校也沒跟過嚴厲名師被鞭策才會那麼弱,他上網一查,果然。至於從何看到根基薄弱種種細節,留待專欄寫)
2. 菜單的建立完全失敗,我們邊吃邊等主菜上來,然後被告知要上甜點了⋯⋯ 嚇?!
3. 每一道菜都有個明顯的缺點,大致想到可以如何改進。
4. 重複的技術(從amuse bousche 到三道甜點,同一個技術出現四次!!!傻眼)、調味素材不斷出現,反映廚師見識及想象局限。
Arzak之後,另一家搞不懂為何得三星的餐廳。如果這家能得三星,我吃過的好些三星餐廳應該有四星或五星。
這頓埋單兩人吃了835美金,回去再吃Benu 一頓好過。完。

A slightly pissed off meal at Atelier Crenn, left without a visit to the kitchen.
I've heard more bad things than good for this restaurant, so I wasn't too eager to try it even when I was in San Francisco. This time, I've already tried a lot of the renown restaurants, so I thought why not, since it's recently got a third star.
But jinxed...
Four problems:
1. The technical foundation is weak (I was telling Eric, maybe because she never went to culinary school, so no one was on her back about techniques. He checked online, lo and behold. As to why I can see the technical foundation is weak, I'll write more in my column.)
2. The menu development is a complete failure, we were eating course after course, waiting for the main course to come, then suddenly are told, the dessert is coming... huh?!
3. Every dish has a glaring shortcoming, and I have ideas on how they could be improved.
4. Repetition of techniques (From amuse-bouche to dessert, the same technique was used 4 times!!! Shocked), the seasoning elements appeared again and again, showing the chef's knowledge and imagination have reached a limitation.
After Arzak, this is another restaurant I don't get how it deserves 3-star. If this is a 3-star restaurant, then some 3-star restaurant I've been to should be 4 or 5 star.
This ended up costing US$835 for 2 people. It would have been better spent at Benu. The end.

Chabuton is a ramen restaurant with branches in Tokyo, Kyoto, Osaka & elsewhere in Japan. They serve regular meat ramen and have a vegetarian option too! They also have veggie gyoza.

Most ramen in Japan isn't vegetarian, so it's great that Chabuton offer a vegetarian/vegan option. You order on a vending machine, but they have an English menu and it's easy to tell which is the veggie ramen. The Osaka branch is in Yodobashi Camera in Umeda. The Tokyo Chabuton is in Shimokitazawa, and the Kyoto branch is also in Yodobashi Camera, near Kyoto Station.

This Fish Head Claypot dish is one of our favourite dishes to order at our local tze char stalls in Singapore. For those of you who have no idea what's a tze char stall, basically you just pick what they have on the menu and they will cook it on the spot for you. Technically it's like a restaurant except that in Singapore, a tze char stall usually operates in a coffeeshop or a hawker centre where other stalls operate as well. Compared to a restaurant, it's must cheaper to dine in a tze char stall because it doesn't have any bells or whistles such as air-condition or service. If you ever come to Singapore for a holiday or for work, ask your friends to bring you to one and order this Fish Head Claypot dish.

INGREDIENTS
Serves up to 4
Fish Head Marinate
1/2 a garoupa fish head
Juice from 1 thumb size ginger - grated
Dash of pepper
1 & 1/2 teaspoons of light soy sauce
1/2 cap of shaoxing huatiao cooking wine
Add rice flour or all-purpose flour to fish head after 20 mins of marination and before frying
For cooking
1 bulb of minced garlic
3 medium size onions - sliced
1 thumb size ginger - sliced
5 Shitake mushrooms or dried mushrooms
2 tablespoons Spicy bean paste
1 tablespoon Chinese hot sauce
1/2 tablespoon yellow bean paste
2 tablespoon of oyster sauce
1.5L of water
1 tablespoon of light soy sauce
1 tablespoon of dark soy sauce
1.5 teaspoons pork stock powder
1/4 Cabbage
150g roasted pork
2 eggs
2 tubes of egg tofu
Corntarch solution
2 teaspoons sugar
Dash of pepper
1.5 caps of Shaoxing Huatiao cooking wine
