Hi, everyone. :) Today we'll show you how to make the Queen's scones (British Scones).
Scones are biscuit-like pastries, are often cut into round shape or wedges. According to the scone's history, it became popular and an essential part of the fashionable ritual of tea time in England Anna, the Duchess of Bedford, and now it's an English tradition known as "Afternoon Tea"
In England, scones are served at "cream tea" in the late morning or with afternoon tea. You might hear this: What goes on a scone first? Jam or clotted cream? There's much debate about it. For us, we prefer cream first. :-)
In this video, we follow the recipe of the former royal chef Darren McGrady, but we reduce the sugar just a little bit. The ingredient are simple and recipe is easy to make. Use this recipe, you can make the Queen's scones at home. Hope you like this video. Enjoy. :-)

Queen's Favourite Scones Recipes
☞ cutting size: Ø5.3cm, can make 6~7 scones
✎ Ingredients
all-purpose flour 210g
granulated sugar 50g
a pinch of salt
baking powder 8g
cold unsalted butter 55g, cut into small cubes
cold whole 㔹milk 85ml
half egg, cold
one egg yolk for brushing
✎ Instructions
1. Sift flour, sugar, salt and baking powder together in a large bowl, and mix well.
2. Add the frozen butter cubes, then rub in with your floured fingers until the mix looks like fine bread crumbs. Place in the refrigerator for 5-10 minutes.
3. We just need half egg, so crack an egg into a small bowl and whisk it into a homogenous mixture, then split in half.
4. Add beaten egg and pour half milk, this stage you don't need to add too much milk, just lightly bring all ingredients together.
5. Keep adding the milk until the dough comes together. It's really important that we don't overwork to knead it, once the dough come together, put the dough onto the table.
6. Dusting a little flour, just knead it a little bit, then lightly roll the dough to an inch thick.
7. Using a well-floured round cookie cutter to cut the dough. Gently brush the top of scones with egg yolk.
8. Preheat the oven to 180C, and bake for 20~22 minutes.
9. Remove the baked scones form the oven and let cool, then serving with clotted cream and jam. Enjoy.

使うタピオカによっては、浸水してから茹でるタイプや、そのまま茹でるタイプなど色々あるので、お使いのタピオカに記載されている茹で方に準拠してください!
あとすでに茹でてあって、数分再加熱するだけで使えるタピオカなども売られていますので、よりお手軽に作りたい場合はそちらもおすすめです(業務スーパーの冷凍タピオカとかがこのタイプです)
今回は珍珠王粉圓というところのブラックタピオカを使いまして、こちらは浸水すると崩れてしまうタイプなので、沸騰したお湯に加える茹で方をしていきます!
【タピオカの茹で方】
1. 沸騰したタピオカの5倍以上の量のお湯に、タピオカを加える
2. はじめタピオカ同士がくっつくのでほぐして、弱火にして時々混ぜながら20分ほど煮る
3. 火を止めて蓋をして、25~40分、お好みのかたさになるまで蒸らす
4. 1粒食べてみて好みのかたさになったら、冷水で冷やす(冷水はぬるくなってくるので、何度か水を変えながら冷やす)
5. はちみつやシロップに浸して保存する(フリーザーバッグで冷凍可、冷蔵庫なら1週間程度)
【食感がなくなってしまった時】
数時間経つと、かたくなって食感が悪くなってしまいます。作り置きする場合は、食べる前にまた沸騰したお湯で数分茹で、冷水で冷やせばもちもちの食感が復活します。あとレンジで温めてから冷やしてもOK(ただしレンジはムラになりやすいので、茹でるのがおすすめ)
【冷凍したタピオカの解凍方法】
ジップロックなどフリーザーバッグで冷凍したタピオカは、同じく沸騰したお湯で数分茹でて、また冷水で冷やせば使えるようになります。冷凍だと長期間保存できるので、食べきれない場合はささっと冷凍しちゃいましょう。
【ロイヤルミルクティー・チャイベースのミルクティー】
~材料~
・水 125g
・茶葉 6g
・牛乳 225g
・砂糖 20gくらい(お好み)
~作り方~
1. 水を沸騰させ、茶葉を入れてごく弱火で2~3分煮出す
2. 茶葉がしっかり開いたら、牛乳を入れて沸騰直前まで温め、茶漉しで濾す
3. 砂糖を溶かして氷水に当てて冷やし、容器でタピオカと合わせて出来上がり
分量は1杯分。シナモンなどスパイスを加えても美味しいです!
牛乳に直接茶葉を入れてしまうと、上手く紅茶の成分が抽出されず、香りも味も薄いミルクティーになってしまいます。一度お湯でしっかりと茶葉を開かせ抽出し、そこに牛乳を加えることでしっかりとしたミルクティーを作ることが出来ます!
【濃く淹れた紅茶を牛乳で割るミルクティー】
~材料~
・水 300ml
・茶葉 10g
・砂糖 30gくらい(お好み)
・低温殺菌牛乳 容器で半々で割る
~作り方~
1. 温めたティーポットに茶葉を入れ、沸騰したてのお湯を注ぐ
2. 蓋をして保温し、数分待つ(茶葉の推奨抽出時間より長めでOK)
3. 十分抽出されたら茶漉しで濾し、砂糖を溶かして氷水にあてて冷やす
4. 容器にタピオカ・紅茶を入れ、低温殺菌牛乳で割って出来上がり
濃いめに入れた紅茶を牛乳で割るこちらでは、低温殺菌牛乳を使うのがおすすめです。紅茶の風味を邪魔せず、より美味しいミルクティーになります。絶対ではないので、高温殺菌の牛乳でも全然大丈夫です。

4.Once you've eaten 1 tablet and it has reached your desired hardness, chill in cold water (The cold water will become lukewarm, so change the water several times while cooling it.).
5.soak in honey or syrup to preserve (It can be frozen in a freezer bag. It will take around 1 week in the fridge.)
[When the texture is gone.]
After a few hours, it becomes hard and the texture becomes bad. If you're making and storing it, boil it in boiling water for a few minutes before you eat it, then cool it down in cold water to restore the chewy texture. You can also warm it up in the microwave and chill it (However, it tends to be uneven in the microwave, so I recommend boiling it.).
[How to defrost frozen tapioca]
If you freeze tapioca in a Ziploc freezer bag, you can boil it in boiling water for a few minutes and then cool it in cold water. If you freeze it, you can keep it for a long time, so if you can't finish it, quickly freeze it.
[Royal Milk Tea Chi Base Milk Tea]
~ Ingredients ~
*Water 125 g
*Tea leaves 6g
*225 g of milk
*about 20 g sugar (To taste)
How to make it.
1.Bring water to a boil, add the tea leaves and simmer over a very low heat for 2-3 minutes.
2.When the tea leaves are well opened, add milk and heat it until just before it boils. Strain it with a tea strainer.
3.Melt the sugar and cool it in ice water. Mix it with tapioca in a container and it will be complete.

~ Ingredients ~
*Water 300 ml
*Tea leaves 10 g
*about 30 g sugar (To taste)

Ingredients:
60g almond
600g water
100g dates(or any kind of sweetener)
2 tsp matcha powder
10g jelly fig seed
1 tsp vanilla extract(optional)
*you could use any kind of milk(store bought one) instead of making homemade almond milk. use 600g milk if you do that.
Instructions:
1. soak raw almonds overnight
2. drain and rince the almonds and blend with dates and water
3. strain with mesh bag
4. blend the almond milk with matcha and jelly fig seed
5. massage the seeds until the mixture thickens
6. leave for 30 minutes.
