延宕4個多月的「加州Chardonnay雙講師講座」，終於再度開辦，感謝這次來參加的15位中部酒友，「加州Chardonnay」中部場一共會舉辦三場，接下來的二場如果有興趣的酒友可以跟我聯絡。
第一場講座使用了六款酒，分別是：
1.Chamisal：金醇
2.Crossbarn：酩洋國際
3.Cycle Gladiator：泰豐
4.The Hilt：酒堡
5.BV：TWE
6.Black Stallion：橡木桶
其實每一款酒都有他的特色，從橡木桶使用，釀酒手法、產區、地塊的差異，其實是讓我很有感觸的，今天使用的酒款水準都不錯，唯一的差別是「品飲者各有的喜好」，我會在三場講座結束後寫一篇專文介紹「加州Chardonnay」，等審稿通過後我會發表個人的看法，大家敬請期待！
ps.哈斯葵的場地真的又大又舒服，而且還嚴守防疫規定，隔板、容留人數皆按規定辦理！

-ซอสคาราเมล-
วิปครีม 100 มิลลิลิตร
เนย 10 กรัม
น้ำตาลทราย 150 กรัม
เกลือ ¼ ช้อนชา
-แพนนาคอตตากาแฟ-
เจลาตินผง 1 ช้อนโต๊ะ
น้ำสะอาด 3 ช้อนโต๊ะ
นมข้นจืด 250 มิลลิลิตร
กลิ่นวานิลลา ½ ช้อนชา
น้ำตาลไอซิง 50 กรัม
กาแฟเอสเพรสโซ่ 90 มิลลิลิตร
วิปครีม 50 มิลลิลิตร
วิปปิ้งครีม สำหรับเสิร์ฟ
1. เตรียมแก้วเสิร์ฟแพนนาคอตตาขนาด 1 ถ้วย จำนวน 4 ใบ
2. ทำซอสคาราเมล โดยนำครีมเข้าไมโครเวฟให้พออุ่น พักไว้ ละลายน้ำตาลในกระทะด้วยไฟกลาง ค่อยๆ ให้น้ำตาลละลาย และเคี่ยวจนมีสีน้ำตาล ใส่เนย และเกลือ ยกออกจากความร้อน ใส่ครีมลงไปทีละน้อยเพื่อเป็นการลดความร้อน
3. แบ่งคาราเมลออกมาเล็กน้อย เพื่อให้ใช้แต่งหน้า นำส่วนที่เหลือแบ่งใส่แก้วที่เตรียมไว้ พักให้เย็นลง
4. ใส่น้ำสะอาดลงในผงเจลาติน พักไว้ นำนมข้นจืด กลิ่นวานิลลา และน้ำตาลไอซิงไปตั้งไฟ พอเดือดลดไฟ เคี่ยวต่อ 1 นาที
5. ยกส่วนผสมออกจากความร้อน ใส่เจลาตินที่พองตัวแล้วลงไป คนให้ละลายดี ตามด้วยกาแฟเอสเพรสโซ่ และครีม กรองส่วนผสมและพักให้เย็นลงเล็กน้อย
6. ค่อยๆ รินแพนนาคอตตาลงบนคาราเมล นำไปแช่เย็นจนเซ็ตตัวดี เป็นเวลา 3 ชั่วโมง
7. ก่อนเสิร์ฟ นำซอสคาราเมลที่เหลือใส่ขวดบีบ ถ้าซอสแข็งตัว ให้ละลายในไมโครเวฟสัก 15 นาที
8. ตักวิปครีมที่ตีอ่อนๆ ลงบนหน้าแพนนาคอตตา ตกแต่งด้วยซอสคาราเมลให้สวยงาม รับประทานทันที
This smooth and creamy panna cotta copied the look and taste of caramel macchiato to the hilt.
- Caramel Sauce -
Cream 100 ml
Butter 10 g
Sugar 150 g
Salt ¼ tsp
- Coffee Panna cotta -
Gelatin Powder 1 tbsp
Water 3 tbsp
Evaporated Milk 250 ml
Vanilla Extract ½ tsp
Icing Sugar 50 g
Espresso 90 ml
Cream 50 ml
Whipping cream for serving
1. For this recipe, you will need four of 250 ml serving glasses.
2. For Caramel: Slightly warm cream up via microwave. Add sugar to a wide base saucepan, gently heat until sugar melt and turns amber then add butter and salt before removing from the heat. Gradually add the warm cream to temper the caramel and combine.
3. Pour caramel into a base of each glasses, save some for garnish later. Leave to cool.
4. For Panna Cotta: Combine gelatin with water, leave to bloom. Add evaporated milk, vanilla and icing sugar to the pot and bring to the boil, simmer for a minute before removing from the heat.
5. Add gelatin, espresso and cream. Mix through, strain and leave to cool.
6. Evenly disperse mixture into each glass and refrigerate until set.
7. Serve each panna cotta with a dollop of lightly whipped cream and a drizzle of caramel we made.

The Happy Prince
In a town where a lot of poor people suffer and where there are a lot of miseries, a swallow who was left behind after his flock flew off to Egypt for the winter, meets the statue of the late "Happy Prince," who in reality has never experienced true sorrow, for he lived in a palace where sorrow was not allowed to enter. Viewing various scenes of people suffering in poverty from his tall monument, the Happy Prince asks the swallow to take the ruby from his hilt, the sapphires from his eyes, and the golden leaf covering his body to give to the poor. As the winter comes and the Happy Prince is stripped of all of his beauty, his lead heart breaks when the swallow dies as a result of his selfless deeds and severe cold. The statue is then brought down from the pillar and melted in a furnace leaving behind the broken heart and the dead swallow, and they are thrown in a dust heap. These are taken up to heaven by an angel that has deemed them the two most precious things in the city. This is affirmed by God and they live forever in his city of gold and garden of paradise.

Bloody Tyrant's upcoming album HAGAKURE, set to be released in 2018, has differed from the previous fast, aggressive musical direction, and has instead changed into more of a folk metal influence while exploring the mysterious sense of Japanese zen style.
