This time, we went to the wet market for congee 🤤 When you visit a Public wet market, go to the upper floor and check out the cooked food centres, where you can find a number of authentic HK food stalls!
We went to Fa Yuen Street Wet Market 花園街街市 earlier and checked out Mui Kee Congee妹記生滾粥品 Mui Kee Congee - Hong Kong , which has stood in Mong Kok for more than 40 years.
This place is famous for its 生滾粥 in which raw ingredients are cooked in boiling rice porridge such that their flavours blend into the congee.
The most exciting part is to see them cooking the fish belly with rice wine in a copper pot (swipe to see the video!).
We have ordered Fish belly congee 生滾魚腩粥 and Scholar Congee (with different pig organs 😅) 生滾及第粥. The two of them have a very different tastes. The fish belly congee has a stronger wok “flavour” 鑊氣 as it is cooked before adding to the congee. Which one do I like more? Fish belly congee 生滾魚腩粥 🙋🏻♀️
Noted that it could be quite hot to have a bowl of hot congee during summer 😅

Due to pandemic situation, wineries have different ideas of how to host en-primeur tasting and it’s my first time trying en-primeur in test tube format, including Château Pichon Baron 2020, Les Griffons de Pichon Baron 2020, Chateau Pibran 2020, Blanc Sec de Suduiraut 2020 & Chateau Suduiraut 2020. Very happy to sit with Principal Lau Chi Sun & tasted wine together. He has shared many tips with me & learnt a lot from him. Château Pichon Baron 2020 is very elegant, fruity and with complexity. A great vintage not to be missed! Cheers! 🥳🍷🎉

?豉油豬皮 重點?
1,豬皮,首先用鹽及紹興酒煲滾,
熄火,焗一焗,再清洗,將污漬及
異味,徹底清除
2, 豬皮會越煲越淋,想食有口感
嘅豬皮,無須煲太耐,入味,彈牙,
就最好食啦
材料:
豬皮100克(約2兩)
調味料:
生抽2湯匙
冰糖2粒
鹽1湯匙
紹興酒1湯匙
處理:
1. 煲一大煲滾水,加入1湯匙紹興酒及1湯匙鹽將豬皮出水2分鐘,熄火冚蓋,焗出異味。
2. 焗了5分鐘,清洗豬皮及洗走黑色粒粒,擎乾水。
3. 裁剪豬皮,但不要太細塊。
烹調:
1. 煲滾500毫升水。
2. 放入2粒冰糖及2茶匙豉油,直至煮溶。
3. 放入豬皮,轉大火,不停攪動,煮3分鐘,令豬皮入味。
4. 煮滾後,冚蓋熄火,焗2分鐘以上。
5. 揭起蓋,又再轉回大火,再次煮滾。
6. 冚蓋,熄火,再焗5分鐘。
7. 再開大火,煮熱一點,上碟。
Hogskin
Ingredients:
Hogskin 100g
(about 2 taels)
Seasonings:
Light soya 2 tbsps
sauce
Rock sugar 2 cubes
Salt 1 tbsp
Shaoxing wine 1 tbsp
Preparation:
1. Put the hogskin a big pot of boil up water, add 1 tbsp shaoxing wine and 1 tbsp salt, boil for 2 minutes and keep the lid shut in order to help releasing out the smelly tastes.
2. Having kept the lid shut for 5 minutes, rinse the hogskin especially the black impurities, hang dry.
3. Cut the hogskin, but not too small.
Steps:
1. Boil up 500ml water in wok.
2. Put 2 cubes of rock sugar and 2 tsp of light soya sauce into wok, until they get melted.
3. Put hogskin into wok, turn to high flame, stir slowly and continuously until hogskin has obsorbed the seasonings.
4. The sauce in wok has been boiled up, turn off the flame and keep the lid shut for 2 minutes more.
5. Lift up the lid again, turn to high flame, boiling up the hogskin again.
6. Turn off the fire and keep the lid shut for 5 minutes.
7. Turn on high flame, heat up for more time, serve.

不少人對張慧敏「Son姐」也不陌生,作為獵頭公司創辦人兼CEO,她縱橫職場多年,見盡職場光怪陸離之事,是一位女強人。想不到原來Son姐除了出得廳堂,還入得廚房,廚藝極之了得!作為一個媽媽,Son姐施展渾身解數,務求令兩個仔女都食得開心。我們當然抓緊機會,請Son姐煮幾味,過幾招給各位觀眾。
炆冬菇
材料:
冬菇半斤(留起浸泡的冬菇水)
紅葱頭 幾粒切碎片
薑 數片厚切
金華火腿 2両(可選擇加或不加)
糖 2茶匙
紹興酒 2湯匙
生粉 2湯匙
味醂 2湯匙
蠔油 2湯匙
麻油 少許。
做法:
1.冬菇先用溫水浸軟
2.擠乾水之後,用糖、薑、紹興酒、生粉撈勻,保留冬菇水
3.燒紅鑊加油爆香薑及紅葱頭片
4.加入冬菇爆炒,加冬菇水直接蓋過冬菇
5.視乎冬菇大小,慢火炆半小時至1小時
6.期間要不斷翻動檢查,以免黐底,水不夠再加水
7.加入蠔油、味醂調味
貼士:可以一次過做多一點份量,放涼後放入冰格貯存,不用解凍直接加熱吃
Braised Shiitake Mushroom
Ingredients:
Shiitake mushroom ½ catty (Keep water after soaking)
Shallots Several pcs, sliced
Ginger Several thick slices
Jinhua ham 2 taels (Optional)
Sugar 2 tsp
Shaoxing wine 2 tbsp
Corn starch 2 tbsp
Mirin 2 tbsp
Oyster sauce 2 tbsp
Sesame oil Some
Steps:
1. Soak shiitake mushroom in room temperature water until tender.
2. Drain and keep water. Add sugar, ginger, Shaoxing wine, and corn starch to shiitake mushroom. Mix well.
3. Heat pan with oil. Sauté ginger and shallot slices to release aroma.
4. Add shiitake mushroom to pan and stir-fry. Add mushroom soaked water to cover shiitake mushroom.
5. Depending on the size of mushrooms, simmer for 30 minutes to 1 hour to braise the mushrooms.
6. While simmering, keep flipping the mushrooms to prevent them from sticking to the pan. If the water dries out, add more water.
7. Season with oyster sauce and mirin to taste.
Note: Can make a bigger batch at a time. To store, let cool to room temperature then freeze in an air-tight container. To prepare, reheat the frozen mushroom directly and enjoy.
