Tasty yet delicious! Salty sweet flavor of the filling is very addictive. You eat with special sesame sauce. I asked my mom to make this very often when I was small. This gyoza is pretty unique and might be new to you but truly delicious 😉

Chive Dumplings
Difficulty: Easy
Time: 30min
Number of servings: 25 pieces using 3inch Gyoza wrappers
Ingredients:
25 (3inch) Gyoza wrappers
2 bundles (200g/7oz.) Chinese chive
200g (7oz.) onion
150g (5.3oz.) ground beef and pork mixture
1 tbsp. sesame oil
1 tbsp. sugar
salt and pepper
cooking oil
Special sesame sauce:
* 2 tbsp. soy sauce
* 3 tbsp. rice vinegar
* 2 tbsp. ground white sesame seeds
* 1 tbsp. sesame oil
* Karashi (Japanese mustard) if you like
Directions:
1. Chop Chinese chive and onion.
2. Heat cooking oil in a frying pan and saute the onion until soft. Add the ground meat then cook until no longer pink.
3. Mix in sugar to make it tasty. Add the chopped Chinese chive and cook until soft, then season with salt and pepper. Mix in sesame oil and leave to cool.
4. Meanwhile make the sesame sauce.
5. Place the filling in the center of Gyoza wrapper. Put water along the edge of the wrapper by fingers, fold into semi circle, gather the front side of the wrapper and seal.
6. Heat cooking oil if you are NOT using a non-stick pan. Place Gyoza and cook on high heat until the bottoms become brown. Turn the heat down to medium, add 50ml water (or about 1/3 of their hight), cover and steam the gyoza on med-high heat until the water is almost gone. Uncover and cook on high heat until the water is gone and crisp.
7. Dip in the special sesame sauce to eat.

5 Ingredients! Ume Shiso Chicken Gyoza Dumplings (梅しそ鶏餃子 Healthy Jiaozi Recipe)
Difficulty: Easy
Time: 30min
Number of servings: 25 pieces using 3inch Gyoza wrappers
Ingredients:
200g (7oz.) ground chicken *thigh/breast any portion is ok
100g (3.5oz.) minced onion
4 1-inch Umeboshi (pickled plums)
13 Shiso leaves (perilla leaves)
25 (3inch) Gyoza wrappers
Directions:
1. Wash Shiso leaves and drain well. Cut in half.
2. Remove seeds from Umeboshi and chop.
3. Mix ground chicken, minced onion, and chopped Umeboshi. Divide it into 25 portions.
4. Place Shiso leaf on a Gyoza wrapper. Place the filling on the Shiso leaf then roll. Put water along the edge of the wrapper by fingers, fold into semi circle, gather the front side of the wrapper and seal.
5. Heat cooking oil if you are NOT using a non-stick pan. Cook on high heat until the bottoms become brown.
6. Turn the heat down to medium, add 50ml water (or about 1/3 of their hight), cover and steam the gyoza on med-high heat until cooked. Uncover and cook on high heat until the water is gone and crisp.
7. Serve with ponzu sauce or dressing if you like.
I used my favorite Matsuno Ponzu Sauce to eat. Any dipping sauce is optional.

How to Make Omusubi Cake (Onigiri Cake)

Necessary Equipment:

Onigiri Wrappers

Ingredients:
50g (about 5 tbsp.) all purpose flour
5g (about 2 tsp.) black cocoa powder
1 tsp. granulated sugar
a pinch of salt
1 egg *room temperature
1 tbsp. melted butter
125ml (1/2 cup) warm milk
a few drops vanilla extract *if you like
fillings for instance: timtam, gâteau au chocolat, and cookie & cream
Directions:
1. Sift in flour and black cocoa powder in a bowl. Add sugar and salt, then mix well with a wire whisk.
2. Add beaten egg little by little and mix well.
3. Add melted butter and mix well.
4. Add warm milk little by little and mix well. Mix in a few drops vanilla extract if you like. Then cover with plastic wrap and leave the batter to stand at room temperature for 30 minutes.
5. Use a nonstick pan, or wipe the surface of the frying pan with a thin layer of cooking oil using a paper towel. Heat the pan on medium, pour the batter into the pan, slowly move the pan in a circular motion to spread the batter evenly.
6. Cook until the edges begin to dry, then flip it over and cook the other side for about 10 seconds.
7. Leave them to cool completely.
8. Place the fillings on a sheet of crepe then wrap into a triangle shape (see the video).
9. Use Onigiri wrappers to wrap Onigiri (see the video).
YES! You can make them a day (night) before. Keep them in the fridge. The cream will set nicely and easy to eat in this way. Of course eating them as soon as you can is better.
