上次和大家提到節食會對身體帶來的傷害,今天要來跟大家一起聊聊,除了節食之外,疫情期間的居家飲食應該要如何調整,減少攝取過多的卡路里呢?
✅餐盤和碗公是你的好幫手
居家防疫,是不是每天都有家人們親手做好的飯菜呢?在享用美味的食物時,往往會在不知不覺中不知道自己吃了多少,透過餐盤夾取一餐的分量,更能夠評估營養有沒有均衡!
✅學習可替換食物
以低熱量的食品取代高熱量,例如芭樂取代芒果或荔枝、魚肉代替豬肉、橄欖油代替沙拉油、無糖無膠優格代替全脂鮮乳。簡單的替換方式,讓居家飲食不再有負擔。這邊有小叮嚀要提醒大家,地瓜、馬鈴薯、玉米都不是蔬菜,而是五穀根莖類,因此地瓜可以代替白米飯,但卻不能代替蔬菜喔!也要記得避免一餐食用到兩份澱粉,而經常誤以為是蔬菜的毛豆、四季豆其實是豆蛋魚肉類喔。
✅沒事多喝水
水分在身體佔有非常重要的元素,這裡要跟大家提醒,沒事真的要多喝水。身體缺水除了會引發冠心症、代謝變差之外,水分攝取過少也會容易感到飢餓。這是因為許多營養素無法被吸收,甚至像肝臟需要水分才能分解肝醣,進而儲存能量,身體缺水就會導致我們想要吃更多東西來補充能量。

300g unsweetened yogurt (1.05 cup)
3 egg yolks
54g flour (6 Tbsp)
3 egg whites
84g sugar (7 Tbsp)
-Optional
1 tbsp lemon juice
vanilla
Bake at 150°C(302F) for 60 min + 180°C(356F)for a few minutes to brown
*Egg size is L. 20g yolk and 40g egg white per egg.

中種麵糰
無糖優格 70g
水 205g
速發酵母 3g
高筋麵粉 400g
主麵糰
高筋麵粉 200g
水 130g
砂糖 20g
速發酵母 2g
鹽巴 8g
奶油 15g
所有中種麵團
投料
無花果 120g
核桃 60g
入爐前
高筋麵粉 適量
製作中種麵糰:
麵包機:所有中種麵糰材料放入麵包機,啟動『揉麵模式』中速,攪拌20分鐘就可以。
(如果沒有攪拌器的朋友,建議材料減半製作)
攪拌器:所有中種麵糰材料放入鋼盆,慢速3分鐘,中速4-5分鐘。
將麵糰放入保鮮盒裡面,冷藏7-12小時,直到麵團2倍大為止。
製作麵糰
1.
麵包機:(材料減半)
所有主麵糰材料放入麵包機,使用『快速麵團』或是『麵包麵糰』,設定投料。因為料太多,請在提示音響之後,自己投入核桃。 揉麵完成後,約20分鐘取出來翻面,再放回麵包機,另外計時20分鐘,取出麵團。
攪拌器:
除了奶油以外,其他所有主麵糰材料放入鋼盆,慢速3分鐘,轉中速4-5分鐘。放入奶油,再轉慢速1-2分鐘,中速5-7分鐘,直到有漂亮薄膜。 放入投料,用慢速攪拌均勻。
約20分鐘取出來翻面,再放回鋼盆,另外計時20分鐘,取出麵團。
(翻面用意:讓水量稍微多一點的麵團,組織更好,麵包更好吃)
(使用中種法做麵包,發酵速度會比較快)
2.取出麵團,分割成4等份,排氣滾圓,休息15分鐘
3.輕拍麵團,再度滾圓,放到烘焙紙上。
4.於溫度35度左右室溫,發酵40-50分鐘。
5.大波預熱200度+三顆蒸汽+兩層烘烤,趁這個時候,麵團表面噴水,撒粉,割線。(沒有蒸汽也可以烤,只是口感會差一點)
6.大波烘烤約20分鐘。(烘烤五分鐘後關閉蒸汽。)烘烤約14分鐘左右,上下烤盤對調,前後掉頭。其他烤箱溫度請自行斟酌喔!

Let me share my personal favorite smoothie with you guys! Full of protein and energy! 🍌

✅Banana - 1
✅Light Greek yogurt - 3 tbs (approx 2-3 g protein)
✅Chia seeds - 1 tbs ( each tbs contains 3.1g protein, 6g fiber, 3g Omega 3)
✅Chocolate protein powder - 1 scoop (23.1g of protein)
✅Peanut butter - 1 tbs ( 2.5g protein)
✅Milk - 250 ml (8.8 g protein)
(according to the nutrition info in each ingredient)
🍌This smoothie contains approximately 38 gram of protein!
Plus lots of good nutrients in there 🙌 I know the cal might be high but I do my workout, I burn my calories so why stress about it? 😄
I will try out more healthy smoothie and share with you guys!
