One of my favorite dishes from childhood which my mom often made♥
Korokke (Croquette) is a parcel of food such as minced meat or vegetables, shaped into a cylinder or circle, encased in breadcrumbs and deep fried. My mom always mixes minced meat and boiled eggs, they make the croquette really addictive! My darling loves it, so I always make tons of them! Try out my recipe and you will know why ;)

Korokke (Croquette)
Difficulty: Medium
Time: 30min
Number of servings: 16 croquettes
Ingredients:
4 eggs
800g (1.8lb) potatoes
200g (7oz) ground beef and pork mixture
200g (7oz) onion
2 tbsp. butter
(Seasonings)
* 1 tsp. salt
* ground black pepper
* nutmeg
(Batter)
* flour
* beaten egg
* Panko (bread crumbs)
vegetable oil for deep frying
Tonkatsu sauce
tomato ketchup and/or mayonnaise if desired
vegetables of your choice
Directions:
1. Peel potatoes and cut into medium chunks. Boil until soft. Drain and mash while still hot.
2. Hard boil the eggs and chop roughly.
3. Mince the onion and saute with butter until soft. Add ground beef and pork mixture and cook until done. Mix the seasonings.
4. Add (2.) and (3.) to the mashed potatoes and mix well.
5. Flatten the mixture in the pot and divide it into 16 equal portions. Flatten each portion into an oval-shaped patty. Coat each patty with flour, dip in beaten egg, and coat with Panko.
6. Deep fry in oil at 170C (340F) until golden brown. Serve with tomato ketchup and/or mayonnaise if desired, and garnish with vegetables of your choice.
I make a lot at once and keep them in the fridge. 2-3 days in the fridge is OK~ but most of the time they are gone on the next day. LOL

We tried making a waffle using mac 'n' cheese. Make sure to eat it while it's hot and throw some extra cheese on top before you eat it! It's simply divine.
*Recipe*
1. Boil 200g of macaroni according to package instructions.
2. Heat 30g of salted butter in a pan. Sprinkle in 15g of flour and fry the mixture without letting it burn.
3. Add 400g of milk while mixing continuously to make a simmering white sauce.
4. Add 85g of Cheddar cheese (5 cuts of sliced cheese) and mix.
5. Add a little salt and pepper and mix.
6. Add the macaroni from step 1 and mix.
7. Cool the mixture. (Cool to the extent that the eggs you add at step 8 will not congeal.)
8. Add one beaten egg and mix.
9. Fry in a waffle maker. You may sprinkle bread crumbs on top to taste. With our home appliance, frying takes three to three and a half minutes.
10. Add extra cheese to taste. So delicious! But not so healthy...
マックチーズをワッフルにしたくてやってみました。温かいうちにどうぞ。食べる時にさらに追いチーズをするとタマリマセン。
*レシピ*
1.マカロニ 200gは表示通りに茹でておきます。
2.鍋に有塩バター 30gを熱し、小麦粉 15gを振り入れ、焦がさないように炒める。
3.牛乳 400gを混ぜながら加え、グツグツ、ホワイトソースを作る。
4.チェダーチーズ 85g(スライスチーズ 5枚)を加え、混ぜる。
5.塩コショウを少しキツメにし、混ぜる。
6.1のマカロニを加え、混ぜる。
7.冷ます。(8で加える卵が固まらない程度)
8.溶き卵 1個を加え、混ぜる。
9.ワッフル型で焼く。お好みでパン粉を振りかけてもいい。我が家の機械の場合、3分〜3分半。
10.お好みで追いチーズをしていただく。うめーなー。これは太るなー。
