Ingredients:
Serves 6 - 8 pax
3 slices of young ginger
4 cloves of chopped garlic
10 pcs of small - medium size Chinese mushrooms (rehydrated)
1/2 tablespoon of sesame oil
1/2 teaspoon of sugar
2 tablespoons of abalone sauce or oyster sauce
15g of dried scallops (soaked in 1 cup of hot water & shredded)
1/2 cup of water used to soak the Chinese mushrooms
2 bay leaves
A few dashes of white pepper
3 cloves of chopped garlic
250g of Chinese spinach
1/2 teaspoon of salt
Some cornstarch solution
1 tablespoon of Chinese cooking wine (Shaoxing Huatiao wine)

This Braised Abalone with Spinach is a simple & yet yummy dish, definitely excellent for reunion dinner or for special occasions. In fact, this is one of the most commonly served dishes at wedding dinners.
If you find the braising step unnecessary, feel free to skip it. The reason why Roland braised the abalone was because the abalone was rather tough. If yours isn’t, just go straight to blanching the spinach & making the gravy (use only 300 ml of water & half can of abalone brine). Please use half of the ingredients for the gravy too.

We love this recipe because it tastes just like Sharks fin soup and yet no sharks were harmed. Cook this yummy soup instead of Shark Fin Soup and the earth will thank you. This fish maw & seafood soup is an excellent dish to be added on your reunion dinner menu. Both fish maw and sea cucumber absorb the flavours of aromatics and sauces very well, making them perfect to be added in soups or gravy based dishes.
Fish maw is dried fish air bladder. Rated as one of the precious Chinese ingredients along with abalone & sea cucumber, fish maw is very nutritious and is also full of collagen. Best of all, it’s free of cholesterol. Many Chinese believe that consuming fish maw will help improve their complexion.

Ingredients:
Serves 8
1.5 litre of chicken stock
25 g of fish maw (before soaking)
1.5 pieces of sea cucumber
200 g of crab meat
1.5 tablespoons of oyster sauce
175 g of prawns - de-shelled & de-veined
Thicken the soup up with potato starch solution (you can mix 2 teaspoons of potato starch with just enough water to dissolve them)
2 beaten egg
