機内食を通じてJALグループができること✈
皆さま、こんにちは。開発部 客室・サービスグループの貝阿彌です。
皆さまは「世界食料デー」という言葉を聞いたことがありますか？国際連合が10月16日に制定した日で、今月10月は「世界食料デー」月間として世界の飢餓問題や食料課題について考え、行動する1カ月です。そこで今回は、JALグループの「食」への取り組みについてご紹介します！
JALグループでは、健康的でサステナブルな食生活を送っていただきたいとの想いから、世界的料理プロデューサーの狐野扶実子シェフ(写真3枚目)監修のもと、安全性や栄養価、生産段階で温室効果ガス排出が少ないなどの観点から提唱する持続可能な「未来の食材50」を参考に、「未来の食材」をテーマとした機内食を9月1日よりファーストクラス、ビジネスクラスにてご提供しています。
今回の機内食を開発するにあたって、すべての食材を「未来の食材50」の中から選びました。なかにはさつまいもや舞茸、えのきなど、身近な食材もたくさんあります。私たちがこれらの食材をもっと食べることで、グローバルな食料供給システムを持続可能なものにしていくことができます。今回のメニューは11月30日(月)までお楽しみいただけますが、今後も未来の食材を使用したメニューを狐野扶実子シェフと開発予定です。「SDGs」と聞くと難しいイメージを持ってしまいがちですが、皆さまもこの機会に持続可能な食材を選んでみる、という簡単にできることから取り組んでみませんか？
また、JALグループでは機内食のメニュー開発から食材の調達・調理・盛り付け・ご提供までのすべての工程で厳しい衛生管理基準を用いて管理を行っているため、安心してお召し上がりいただけます。私は、一つのメニューをご提供するまでに作成される温度記録表の数を見て、とても驚きました。
新型コロナウイルス感染症の影響で、なかには機内食を召し上がる際に不安を感じる方もいらっしゃるかと思いますが、この記事を通じて皆さまが少しでも安心して機内食をお楽しみいただけましたら幸いです。そして、世界の飢餓問題や食料課題について考えるきっかけとなれば嬉しく思います😊

By eating more of these ingredients, we can continue to make a global food supply system sustainable. This menu will be available until November 30th (Mon), but in the future, we will be developing a menu with the future ingredients with the chef of tasumi tasumi. It's a difficult image when you hear ′′ Sdgs ′′ I tend to be able to do it, but do you want to work on what you can do to choose sustainable ingredients for this opportunity?
In addition, the jal group is able to take care of the strict health management standards in all processes from the menu development of inflight food to the procurement cooking platter of ingredients, so you can enjoy it with ease.
