雖然不到Chef等級，但身為專業飯店餐飲公關，吃過的美食也不少，廚藝還是略略有到小當家的程度。特別是身為 #無糖有毒社長，對於甜點的著墨可說是非同小可，除了精緻的法式西點之外，烘焙或是甜品也是難不倒我。
.
做甜點真的必須要有這個秘密武器，就是「法國鮮奶油」，欸不是塊狀奶油那種，也不是蛋糕上面砸派那種鮮奶油(是說也是同祖同宗啦⋯)，是在烘焙材料行會看到的那種一大罐鋁箔包裝的鮮奶油。

這種鮮奶油打發之後再加工，就會變成蛋糕上的鮮奶油。一般做蛋糕西點會加鮮奶油增加新香氣提升濃郁口感，用在料理上像是煮白醬、濃湯也會加，香氣跟濃郁度會更明顯。鮮奶油的選擇一般我會買法國的，很多精緻的烘焙西點，都會特別選用法國鮮奶油，吃起來的口感真的不一樣。

來點小知識：鮮奶油是用乳脂分離，就是牛乳與乳脂肪分離的一種技術取得的，全脂鮮奶油的話是從100g的牛乳取得30g的乳脂肪，低脂鮮奶油則是至少要取得12g的乳脂肪，如果沒有符合這樣的比例，就不能叫做鮮奶油喔。

這次的懶人甜點食譜是「烤布蕾」，分享超簡單食譜給大家（圖片上也有說明）：

材料：法國鮮奶油160ml、鮮奶300ml、砂糖60g、雞蛋3顆、香草精1-2滴、烤布蕾模具8-12個。
小Tips：看模具大小準備數量，身為小資個性我是把之前吃完的布蕾玻璃瓶洗乾淨重複利用♻️

料理步驟：
1️⃣ 鮮奶開小火加熱，倒入砂糖攪拌到完全融化就可以關火，目的只是融化砂糖，不能煮滾喔。
2️⃣ 雞蛋跟法國鮮奶油加在一起，用打蛋器攪拌均勻。
3️⃣ 把步驟1跟2倒在一起攪拌均勻，然後用濾網過篩2次，口感才會綿密。
4️⃣ 把布蕾液倒入模具中，模具放在烤盤上，外面加水高度1公分，要用水浴法烘烤。
5️⃣ 烤箱上下火170度預熱5分鐘，之後將布蕾放進去烤25-30分鐘。
6️⃣ 烤好之後可以看還會不會晃動，如果會可以再延長一下時間。
🆗 出爐後放涼，就可以品嚐啦！放入冰箱後會更好吃喔😋
