哈密瓜湯清熱解燥
瓜類多有生津止渴、清熱解暑的作用,哈密瓜就是其中之一,它有清暑熱、解煩渴、利小便的功效,果肉水份充沛,夏天吃非常消暑,尤其感到身心疲倦、心神焦燥不安,食用哈密瓜有清熱解燥之效。除了直接切開食用,哈密瓜亦可以用來煲湯,尤其如果遇上甜度不夠高的哈密瓜時,配搭健脾化濕的食材,適合潮濕悶熱的夏天時品嚐,紓緩神疲乏力、睡眠不安寧的情況。
健脾化濕湯水小貼士:
適當地添加健脾化濕功效的食材如茯苓、赤小豆、茨實、陳皮等。
哈密瓜海帶螺頭湯
功效:益氣健脾化濕,紓緩神疲乏力、嗜睡、食慾差、睡眠不安寧等症狀。
材料:哈密瓜半個、海帶80克、淮山20克、蓮子20克、芡實20克、花生30克、冰鮮螺頭3件、豬𦟌300克
做法:
1. 所有材料洗淨,哈密瓜去皮去核切大塊;海帶泡水15分鐘,水保留備用,淮山去皮切塊、螺頭及豬𦟌汆水備用。
2. 鍋中加入2000毫升水,放入全部材料,武火煮至水滾,調文火煮2小時,最後下鹽調味即可。

Cantaloupe soup to clear heat
Gourds general stimulate saliva secretion, quench one’s thirst and clear body heat, and cantaloupe is of them. Cantaloupe can clear summer heat, rehydrate the body and promote diuresis. Its flesh has a high water content, which makes the fruit a good remedy to cool down the body during summer. When you are physically and mentally exhausted and suffering from anxiety, eating cantaloupe can help relieve the problems.
Besides enjoying the fruit in slices, cantaloupe, especially those with lower sugar content, can be used to make soup. The cantaloupe soup, when coupled with ingredients that can strengthen the spleen and dispel dampness, can relieve fatigue and improve sleep quality, especially during the hot and humid summer season.
Tips for soup to strengthen the spleen and dispel dampness:
Appropriately add in ingredients such as poria, rice bean, fox nut, dried citrus peel.
Cantaloupe soup with seaweed and conch
Effects: regulates qi, strengthens the spleen and dispels dampness, relieves symptoms such as fatigue, drowsiness, poor appetite and poor sleep.
Ingredient: Half a cantaloupe, 80g seaweed, 20g Chinese yam, 20g lotus seed, 20g fox nut, 30g peanut, 3 frozen conches, 300g pork shank
Preparation:
1. Rinse all ingredients thoroughly. Peel and core cantaloupe and cut into pieces. Soak seaweed in water for 15 minutes, set aside the water for later use. Peel Chinese yam and cut into pieces. Blanch pork shank and couch and set aside.
2. Combine all ingredients with 2000ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 2 hours. Add salt to taste.

小時候不懂喝湯的好,長大後自己搬出來住,卻開始掛念媽媽的湯水?湯水除了美味,亦是香港人的養生秘技,因應季節和體質,加入合適功效的食材和藥材,煲出一鍋美味又保健的湯水,藉著喝湯和微調生活飲食習慣,減少生病機會,真的有機會「藥箱都變成首飾箱」啊!
煲湯重點:
- 多選擇屬性平和的瓜菜、藥材煲湯,湯水就適合一家大小飲用
- 多選擇時令瓜菜煲湯,一般來說「夏天多吃瓜果,冬天多吃葉菜」,既能配合氣候對身體的影響,價錢亦更相宜
- 老火湯(煲3小時以上) 不宜每天喝,煲湯1.5-2小時就足夠
- 喝湯不忘把湯渣也吃掉,湯料亦保存不少營養
粟米鮮淮山螺頭湯
功效:滋陰益氣健脾,強身防病。
材料:粟米2根、鮮淮山1根、冰鮮螺頭1個、芡實20克、白扁豆40克、乾瑤柱4-5枚、蜜棗2枚
做法:
1. 把所有材料洗淨,粟米去衣切段、鮮淮山去皮切塊;冰鮮螺頭汆水備用。
2. 鍋中加入約2500毫升水,放入全部材料,武火煮至水滾,調文火煮約1.5小時,最後下鹽調味即可。
健脾袪濕湯水小貼士:
適當地添加健脾袪濕食材如眉豆、茯苓、粟米鬚、扁豆衣等,也可以一包朝米水粉直接倒進湯裡一齊煮,健脾胃外,也能增加湯水稠度,更美味。
從今天開始,多喝時令保健湯水吧!
Have more seaonal healthy soups
When we are young, we may not know how to appreciate soups. Once we move out as adults, we might miss the soups from mom! Aside from being tasty, soups are healthy option for Hong Kong people. Based on seasonality and body types, adding in appropriate ingredients and herbs, you can make a delicious and healthy soup. By drinking soup and adjusting lifestyle, you can decrease the chance of getting sick.
Notes for making soup:
- Choose mild nature gourds, vegetables and herbs to make your soup so it will be suitable for the whole family.
- Choose seasonal ingredients, usually gourds in the summer and leafy vegetables in the winter. It is more affordable and suitable for the season.
- Do not have double-stewed soups (cooked for 3 hours or more) daily, generally 1.5-2 hours is enough for soups.
- You can eat the ingredients in soup too as they are nutritious.
Conch soup with corn and fresh Chinese yam
Effects: Nourishes yin and qi, strengthens the body and immunity
Ingredients: 2 ears of corn, 1 fresh Chinese yam, 1 frozen fresh conch, 20g fox nuts, 40g white hyacinth bean, 4-5 dried scallops, 2 candied dates
Preparation:
1. Rinse all ingredients thoroughly. Remove membrane from corn and cut into pieces. Peel Chinese yam and cut into pieces. Blanch conch.
2. Combine all ingredients with 2500ml of water and cook on high heat until boiling Turn to low heat and simmer for 1.5 hour. Add salt to taste.
Tips to strengthen spleen and dispel dampness:
Add in appropriate ingredients such as black-eyed peas, poria, corn silk, hyacinth bean coat. You can add in a pack of dawn rice water powder into soup to cook to increase thickness of soup and strengthen the spleen and stomach.
