粉絲朋友在 #馬拉開飯啦 上貼文,告訴我有家好吃的雞飯,還有很正很正的叉燒,讓我一定要去採訪看看。
那位粉絲朋友還是人家從舊檔口,跟住去新檔口幫襯,哇,咁忠心?擇日不如撞日,隔天我就去了。
淨雞飯只要RM3.50,真的沒看錯,主要也是疫情下,讓大家都有便宜雞飯吃,優惠一直到7月31日,買便宜雞飯就要趁早。(這佛心價啊!)
便宜當然也要好吃!檔主阿良,今年39歲,是道地甲洞人,卻在加影落地生根。(例牌都要查下家宅啦)
他16歲入廚,一直在酒樓工作,疫情前是加影某大酒樓燒臘部的師傅,因為酒樓沒法做就在外開檔賣燒臘,原來大有來頭!
酒樓燒臘,就一定是燒排骨腩仔叉燒這幾樣,於是我打包燒排骨和叉燒(竟漏了燒腸燒肉好失策),半肥叉粘口,入口就化的肥肉位,果然好吃,排骨則很香,甜口,這個我附近很多燒臘檔都沒在做,火喉不好控制,一不小心就柴了。
下次如果去打包我應該讓阿良不要斬件,直接給我一支骨(or 3支...),回家慢慢啃。
本人是打包後才說要採訪,其實就是怕人不收錢,都賣得那麼便宜了啊。
不過,八卦的我還是追著人家後頭,跟進去後廚看阿良一面燒雞一邊給我訪問,這前面斬料後面還得備料(再應付我這八卦的),確實不容易。
他一直很好奇那位熟客是誰,我也說不上,所以請這位熟客下次去跟老板自首,哈哈
雞飯好吃,很推排骨和叉燒。(反正其他的我沒吃過啊!)

Soup noodles or stirred noodles? If it comes with Pork knuckles, it must be stirred noodles. 湯麵定撈麵?配豬手嘅一定揀撈麵!
Here it is the place where I find my favourite stirred noodles with Pork Knuckles 豬手撈. One common problem with the noodle in many noodle shops in HK is that the noodle/soup is too alkaline. Noodles in Good Hope 好旺角do not have this problem, instead they have a light flavour of pork lard 豬油味😋 I was so surprised to see this huge portion of pork knuckles with red fermented tofu flavour.
When you order a stirred noodle in Hong Kong, a small bowl of soup (yes, that’s the soup when you are having soup wonton noodles) is always offered to you.
How about the congee? We ordered 及第粥 Scholar Congee (HKD$43). If you want to be the first in public exams, this is the congee that you should go for. (But only if you are an adventurous foodie, as it contains different organs of a pig) If this is the first time you had congee, congee in Good Hope is not bad, but if you are looking for very good congee, I think the congee here is not creamy enough 唔夠綿. The best congee I had was in Fu Kee Congee in Mong Kok. Sadly, it was not as good as before.

【六座雲吞麵 Six's Noodles, Opened in 1966, Tsim Sha Tsui HK 🇭🇰】6's Spicy Pork 'Zha Jiang Mian' Hong Kong style 6座 炸醬撈麵. I won't explain the technicalities, but it's a Cantonese adaptation of the Beijing version during earlier 19th Century. *You can in fact, grab the even rarer, bridging-intermittent versions still in HK, another separate story... Anyway, if you missed Wing Wah Noodles 永華麵家 炸醬麵, this version here is probably the closest in composition, they even belong to similar epochs as this shop opened in 1966.

I personally think the version here is downtuned to be less spicy, but it definitely carries that oldish Hong Kong ZJM spirit.. The Fried Fish Cakes 炸魚片頭 are also delectable here, more 3D Diced than the Flatter/Round versions, slightly Crispy. Both items are better than the Wonton noodles. It could be spicier or better layered though, but currently not many shops do that in HK anymore, but most of the best ones I have covered on here before numerous times gum, whilst some are closed down already.. 🙈

蕃茄雞蛋刀削麪:
材料:
刀削麪2個
大紅茄2個
雞蛋2隻
芫荽1條
處理:
1. 蕃茄,切去椗,十字。
2. 煲滾1煲水,放蕃茄滾1分鐘。
3. 芫荽,切細粒,保留尾部。
4. 蕃茄已滾了1分鐘,倒去滾水,浸凍水,去皮,放碗內。
5. 煲滾1煲水,放麪2個,大約煮3分鐘。
6. 水滾起,冚蓋,轉慢火,煮3~5分鐘。
7. 雞蛋,打入碗內。
8. 預備生粉芡,半茶匙生粉,加入少量水分,攪勻。
烹調:
1. 白鑊,中慢火燒熱鑊,放蕃茄,加入水400毫升。
2. 麪,要煮多2分鐘。
3. 蕃茄煮了2分鐘,加入:
a. 茄汁3湯匙
b. 雞粉半湯匙
c. 糖1茶匙
4. 麪已煮了5分鐘,熄火。
5. 加入生粉芡在蕃茄內。
6. 打勻雞蛋。
7. 熄火,倒蛋漿入蕃茄內。
8. 麪,擎乾水,放碗內。
9. 煮好的蕃茄蛋,倒在碗內的麪上,完成。
10. 放芫荽,可享用。
Eggs sliced noodles with tomatoes:
Ingredients:
Sliced noodles 2 Nos.
Tomatoes (large) 2 Nos.
Eggs 2 Nos.
Coriander 1 No.
Preparation:
1. Tomatoes, remove anchors, cut a cross on skin of tomatoes.
2. Boil up a pot of water, boil tomatoes for 1 minute.
3. Coriander, cut in small cubes. Retain the bottom of it.
4. Tomatoes have been boiled for 1 minute, pour away the water. Soak in cold tap water. Remove the skin and put into a bowl.
5. Boil up a pot of water, put noodles, cook for about 3 minutes.
6. Water boils up. Cover up the pot. Turn to low flame and cook for 3~5 minutes.
7. Eggs, beat into a bowl.
8. Prepare tapioca sauce, get 0.5 tsp tapioca starch with little water. Mix well.
Steps:
1. Heat up the wok with no oil at medium~low flame. Put tomatoes with water 400ml.
2. Noodles, cook for 2 more minutes.
3. Tomatoes have been cooked for 2 minutes, add:
a. Tomato ketchup 3 tbsp
b. Chicken powder 0.5 tbsp
c. Sugar 1 tsp
4. Noodles have been cooked for 5 minutes, turn off fire.
5. Put tapioca sauce into tomatoes.
6. Beat eggs well.
7. Turn off fire. Pour egg syrup into tomatoes.
8. Noodles, have been hung dry, put into a bowl.
9. Pour the tomatoes and eggs on noodles in bowl. Complete.
10. Put coriander on top. Serve.

鯇魚粥:
材料:
鯇魚嘴3個
白米1膠嘜
薑絲少量
處理:
1. 魚嘴,清水沖洗乾淨,擎乾水。
2. 魚嘴,用鹽半茶匙,醃一醃。
烹調:
1. 大火在煲中煲滾1升水。
2. 水滾起後,放白米。
3. 最初要不停攪拌,避免黐底。
4. 滾起後,轉最慢火。
5. 冚蓋,留一條縫隙,煲15分鐘。
6. 久不久要攪拌,避免黐底。
7. 拿起筷子,冚蓋,熄火,焗15分鐘以上。
8. 焗了15分鐘,開大火,加入滾水,不斷攪拌至大滾起。
9. 濃稠度調校好之後,轉慢火。
10. 另一邊,中火在鑊中燒熱1湯匙油。
11. 爆香魚嘴。
12. 放薑絲,加少量油。
13. 爆好魚嘴,放入粥內,大火滾起。
14. 完成,可享用。
Grass carp head porridge:
Ingredients:
Grass carp head 3 Nos.
Plain rice 1 measure cup
Shredded ginger little
Preparation:
1. Fish head, rinse with tap water. Hang dry.
2. Fish head, season with salt 0.5 tsp.
Steps:
1. Heat up 1L water at high flame in pot.
2. Put plain rice after boils upp.
3. Stir continuously initially to avoid sticking to the bottom of the pot.
4. Turn to low flame after boils up.
5. Cover up the pot but leave a gap between the cover and the pot. Cook for 15 minutes.
6. Stir the porridge for a while if you have time during the cooking process to avoid sticking to the bottom of pot.
7. Take the chopstick up. Cover up the pot. Turn off fire and leave it for 15 minutes or more.
8. Turn to high flame after 15 minutes. Pour boiled~up water into porridge. Continue stirring until boils up.
9. Adjust the thickness of the porridge depends on personal favorites. Turn to low flame.
10. Heat up 1 tbsp oil at medium flame in wok on the other side.
11. Fry the fish head well.
12. Put shredded ginger, add little oil to it.
13. Fish heads have been fried well. Put direct into the porridge. Boil it up at high flame.
14. Complete. Serve.
