🦐風沙瀨尿蝦
說到瀨尿蝦,就會想到椒鹽、避風塘、風沙,問了星級大廚, 原來都是名稱而已啦,主要材料都是炸蒜蓉和辣椒,分別不大🤣但正宗的避風塘一般會加豆豉,所以我當我的是風沙瀨尿蝦吧🤣
貝類魚類海鮮,大的啖啖肉,小的夠嫩滑,但瀨尿蝦必定是越大越好!這瀨尿蝦跟我的手臂一樣長,多肉鮮甜非常滿足!

瀨尿蝦1斤
指天椒2隻
青尖椒、紅尖椒 適量切碎
蒜茸2湯匙
姜茸1湯匙
炸蒜2湯匙
做法
【1】瀨尿蝦用水洗乾淨,放入滾水灼20~30秒,期間要翻動瀨尿蝦,撈出後瀝乾水份。
📝小瀨尿蝦可省略此步。
📝 儘量瀝乾水,否則會濺油。

【2】用中大火燒熱油鑊,開始出煙後放入瀨尿蝦,炸至金黃香脆,撈起。

【3】用少量油炒香蒜蓉、薑茸、指天椒,再加入瀨尿蝦、青紅椒粒、炸蒜快炒。
📝怕太辣的話可以後加指天椒。
📝先將賴尿蝦上碟,再用蒜蓉將蝦蓋住,形成避風塘的樣子😍
