食譜
#台式尼斯沙拉與柑橘油醋醬｜食材 2 人份
沙拉底
季節蔬菜 2 人份
馬鈴薯 1 顆
蛋 1 顆
四季豆 5 根，切段
番茄 ½ 顆，切片
魚乾 1 小把，先泡水
酸豇豆 1 小把，切丁
破布子 少許，去籽
鮪魚罐頭 1 罐
柑橘油醋醬
柳橙 取皮和汁 ½ 顆
檸檬汁 1 大匙
特級橄欖油 3 大匙
鹽、胡椒 少許
蜂蜜 少許
#可加法式芥末醬
作法
1. 處理食材，馬鈴薯去皮切塊，放入冷水鍋內，加一把鹽巴，燒滾後轉小，煮 20-30分 鐘直到馬鈴薯熟透
2. 蛋退到常溫，燒滾一鍋水，蛋放進去煮 7 分鐘，煮熟後取出沖冷水冷卻
3. 四季豆切成段，過鹽水燙熟
4. 魚乾瀝乾，下油熱鍋，跟酸豇豆一起大火炒過
5. 處理葉菜類，可生吃的只要洗淨脫水，不可生吃的過鹽水燙過
6. 製作醬汁，混合所有的食材，拌勻後試吃調整味道
7. 混合所有食材和醬汁，盛盤可用模型（cutter）做出堆高的效果，最後刨上柑橘皮裝飾提味

#法式嫩煎鱸魚與檸檬奶油｜食材 1 人份
培根 1 片，切條
高麗菜 1 塊，切角
季節野菜 1小把
奶油 適量
鹽、胡椒、特級橄欖油 適量
鱸魚 1 片
紅蔥頭 2-3 顆，切碎
檸檬 約 1 顆
#1664白啤酒 少許
麵包 1 塊
作法
1. 處理蔬菜，切成大塊狀，燒熱鍋子，加入適量的橄欖油，用中大火把培根和蔬菜煎炒上色，加入適量的鹽巴、胡椒調味。先放在烤箱或微波爐內保溫（不用開機）。
2. 鱸魚加入鹽巴、胡椒按摩均勻
3. 中大火加熱鍋子，融入一小塊奶油和特級橄欖油，帶皮面朝下。魚入鍋後轉成中小火，輕壓表面，並將多的油淋上去，油脂不夠就在補奶油
4. 魚單面上色、另外一面也熟透後取出
5. 鍋內加入紅蔥頭碎，炒香後加入白啤酒燒滾，並把鍋底焦香刮起，稍微收濃稠後熄火，加入檸檬汁和少許奶油拌勻
6. 蔬菜裝盤，上頭放上魚肉，淋上醬汁並刨檸檬皮裝飾

#檸檬可麗餅｜食材 約 5 片
低筋麵粉 80 克，過篩
糖 1 小撮
鹽 1 小撮
蛋 1 顆
牛奶 180ml
水 180ml
奶油 1 大匙，先融化
檸檬 1 顆
藍莓 少許
紅火龍果 少許，切塊
鮮奶油 1 杯，額外加重量 1/10 的糖打發
作法
1. 麵粉過篩後混合鹽、糖，加入蛋
2. 慢慢加入牛奶和水，並持續攪拌，麵糊呈現濃稠狀時先攪拌到沒有顆粒，再把剩下的牛奶和水加進去
3. 加入奶油拌勻，時間夠的話可休息 30 分鐘或隔夜
4. 燒熱鍋子，用廚房紙巾抹上一層奶油，中大火加熱，倒入一大勺麵糊，均勻的攤在鍋面，兩面定型、煎上色
5. 撒上砂糖，並擠少許檸檬汁，熄火後折成扇形
6. 與水果、鮮奶油一起盛盤
