Henri Jayer Echezeaux Grand Cru 1988 is a perfect Echezeaux regardless of how one judges it.

The moment the wine hit my tongue, I picked up flavours of fresh berries cocooned within spices and earthy flavours – very subtle. As my mouth warmed the wine, the earthy berry flavours morphed into leathery aromas, unveiling Henri Jayer’s remarkable signature: a full and sophisticated aged plum flavour. The delicate flavours lingered in the mouth with alluring layers, what a beauty!

Henri Jayer Echezeaux Grand Cru 1988:不管從那一個角度審視，這是一枝稱得上完美的Echezeaux 。一開始，新鮮莓果的氣味包裏在香料及泥土味中，有點隱晦有點朦朧，經口腔溫度轉化才「破繭而出」，混合了泥土氣息的莓果味再進階成皮革氣息，接著很快就展現出Jayer顯著風格的陳年梅子味，餘韻飽滿，複雜而精巧，細節透出難以言喻的美妙。

Can you find a grand cru out of 6 premier cru + 1 village? Yes I can! Luck or not I did it confidently anyways.🥸🥳😎

Today is one of those my favorite day that we all gather together to do blind tasting, and the most favorite one & good value one will be chosen to imported by our company.

So in general before the tasting, I don’t like to search what are the producers and what style of the wine we should be expecting as I don want to have any pre-assumption by the marketing or by how big is the producer. I don’t even focus on the color of the wine, cuz all I want to focus on is the notes on the nose and the palate.

And WOW. Here comes my grand cru wine...PURE pure yet CONCENTRATE juice on your palate…linger for so long that I was pretty confident this must be it and it will show more after few more years...

Hey, I’m not saying you can not drink right now as the layer between red & black fruit and vanilla is all gently showing… but I would wait.

While you are waiting, get yourself glass of his 1er cru “Les Sorbets”. I do think 30min breath from the bottle will show the best out of the black, ripe, dark fruit layer with subtle spice.

And I want to make a point that I LOVE THE JUICE ON MY PALATE! His style is concentrate yet pure, you feel the little touch of sth make your palate feel so light and gentle.

AH, this is the moment I wish I’m a native English speaker so I could share more. Hence I decided to share with in mandarin.

你可以在8杯黑皮諾裡面找到特級園嗎？我可以！！！今天是我們公司的盲飲日，也是我最喜歡的日子。這個日子我們公司內部會聚集起來，找出大家喜歡的酒，然後如果價格合理我們就會選擇跟酒莊進酒。

通常公司內部的盲飲，我是不喜歡先前做功課的，因為不想要要預設立場，我甚至不會專注在葡萄酒的顏色，只會認真的“吸取”葡萄的味道，和”咀嚼“葡萄汁～

今天想跟大家介紹的這位釀酒師，Domaine Olivier Guyot, 坦白講我也對他不熟悉，但是OMG，超級喜歡他的style，你可以感受到葡萄汁的集中（中文變得好爛不知道怎麼說），以及那種空靈的啜飲感～

他的特級園 18 “Clos de la Roche”絕對是可以再放個5年以上，也可能才會達到最好的品飲時間，現在喝不是說不可以，只是會有點浪費～所以在等待的同時，推薦大家可以喝他的一級葡萄園 18 “Les Sorbets” 這款酒是比較陽剛款的，果香味很濃厚，但是口感很清爽～建議打開瓶子讓酒呼吸個15-30分鐘再喝～～

Taking me some time to pen up【Bibi & Baba, Wanchai, HK 🇸🇬🇭🇰】, but my own legit reason is highlighted below as it's not easy to explain. In fact, I felt this was one of the Best New 2020 Openings in early October in HK! When dining here I actually felt so moved by the 'precision', 'complexity' of flavors to be unlocked within every bite of each dish here. I thought instantly that on a relative scale, this was equivalent to a Michelin 1 🌟 in this genre of food level good..

•Nyonya Laksa Lemak 娘惹叻沙 $108. I won't bore anyone with how it's all Peranakan/Nyonya with Malaysian, Singaporean or Indonesian plus Chinese influence sorts of things. One can read up on that history separately.

What I wanted to say is, TRUST my suggestion: Eat this Laksa 1st when you arrive, before u touch the Appetizers, or the Main Courses. 第一件事, 先叫同食咗呢一碗喇沙, 先再食其他嘢. Except for probably an Otah/Otak to pair.

The reason is because the 'Layerings' beneath this Laksa, Broth, Spices, Herbs etc are so balanced. It's totally soul moving material, kind of like a Grand Cru version of a Burgundy in Laksa form! It's not designed to be smack in your face, but created almost for its only solemn existence, kind of enjoyed like how Japan Ichiran ramen 一蘭拉麵 forces u to eat behind closed curtains. You start directly from this bowl, & finish every sip of it in its holistic entirety, b4 you venture onto other dishes. I wouldn't say it's subtle either (I.e. Rxxpxh is subtle), but all the perfect balance of Nyonya hearty spirit extracted flavors are swimming inside the bowl here waiting for you to discover!

This is serious high end, stone & mortar artisanal stuff!! The other best comparable Laksa I have eaten recently is probably Barry Quek's version at Return of Lemak, but they do have different base stylistic approaches. If you eat this together with other heavier dishes at the same time, the palate instantly gets murked & swamped. Every time that happened, it took me many sips of the Laksa Broth to reset the palate & olfactory sensitivity, to thoroughly enjoy this amazing bowl again! 🥣 Best in Town, and that fragrance!

要知道布根地有三大區，包括北面最為人熟悉的黃金山丘Côte-d’Or、小區Chalon，以及南面的大區Macon，而Pouilly-Fuissé就是Macon內知名的產地。

「北面的Côte-d’Or和Chalon都有First Growth(一級莊)，甚至Grand Cru(特級葡萄園)的分級。但南方Macon因為地理和政治的問題，過往一直沒有設定分級制。」Wilson解釋。

一般人買葡萄酒，看見酒樽上的標籤有特級莊園（Grand Cru）的認證，都會雙眼發光，但認證不等於品質保證，盲目追隨隨時中伏。位於法國東北部的阿爾薩斯（Alsace）有二千多個酒莊，出產的白酒廣受好評，在港亦有售，每支約售百多二百元，多見於餐廳和酒店。由於名氣不足，當地人於是仿效布根地（Burgundy）引入Grand Cru認證，現有51個特級莊園（布根地僅32個），評核準則卻令人生疑。有王牌大莊最初拒絕認證，又有酒莊認為制度模糊，自設一級莊園（Premier Cru）等級制，整色整水都是希望阿爾薩斯的葡萄酒越做越好，冠上特級莊園之名亦當之無愧。
