I never tot I was gonna get a fair bit emotional on a recipe. Both my parents have some sort of Indian influence or mixture. Mom’s granddad is from Pondi Cherry. Mom has been sharing how her granddad was the one who trained her in her curry making. My Papa loved my moms curry. As a little boy we would have this dish at least 2 or 3 times in a week. And the remaining gravy would be kept in the fridge as for breakfast the spicy, sour fragrant gravy goes extremely well with toast and butter. There’s this special fragrant and comforting taste to moms curry. Mom says the secret is to “Tumis” or to gentle fry the spices before adding in the liquids .
A very vivid memory of sambal belacan, white rice and curry would easily jog me to a little 2 room flat in Taman Tun Aminah, Johor. Where mom would make me intricate lunchbox meals and life was so much simpler then. It was just papa, mom and me. This dish is also so very popular during family gatherings. This dish reminds me of happiness, this dish reminds me of family. I can’t understand why it took me this long to learn this dish. As I was cooking this dish there was an internal conflict. I wanted to learn this taste, this heritage and keep it going. At the same time I didn’t want to perfect this taste as I scare the day would come where I’ll loose that comforting taste. So today I’m sharing a part of my family with you. Today I cooking “Meen Curry” or fish curry.

These days where got chance to scale the fish wor. Either the fishmonger in the wet market did it for me or the foreign worker in supermarket cleaned it for me before hand. But back in Alor Setar, mom preferred to do it herself. Hence the extra steps (shown in picture). Carefully scaled with the right strength so the fish is clean and the scale stays within the sink. 🤓 So that’s Fresh Red Snapper for dinner. Cuttlefish was also cleaned and sliced in right thickness for Bae to stir-fry it. No chewy only tender, and fragrant. Last but not least, stir fry Mala with green brinjal. Easy dish, no introduction needed. 🤣

Nyonya or Peranakan cuisine is a mix of influence from the Chinese and Malay cuisines. Essentially, Peranakans are descendants of early Chinese migrants who settled in parts of Malaysia, particularly Penang, Malacca and Singapore, inter-marrying with local Malays and combines Chinese, Malay and other influences. Some of them also settled in Indonesia. Compared to a typical Singaporean curry fish, Nyonya curry fish is prepared with a twist of tanginess which is very refreshing. Feel free to increase the intensity of tanginess if you like so. You can also omit the addition of coconut milk per your preference.
Ingredients:
Serve 6
1 whole Fish (1.1kg) or Fish Head
1/2 cup of tamarind or assam juice (obtained by soaking 2 tablespoons dried tamarind in 6 tablespoons of water)
2 teaspoons of salt
500ml of coconut milk
2 thumb size ginger
7 cloves of garlic
20 pieces of shallots
3 stalks of lemongrass
12 pieces of green chilli
6 tablespoons of curry powder
1 tablespoon of turmeric powder
1 litre of water
10 - 12 lady's fingers
3 tomatoes - cut
1 whole brinjal - cut
3 onions - cut
