早前很高興得到Green Monday 的邀請,能品嘗到Macau Fisherman’s Wharf 澳門漁人碼頭 勵宮legend Palace 勵皇軒The Grand Palace Chef Johnny新推出的「廚師發板」素食餐單。
I had the pleasure of trying Chef Johnny's new vegan omakase menu at The Grand Palace, invited by Green Monday.
茹素前就已經被餐廳的無敵大海景吸引著!今次的素食餐單有別於大眾對「食齋」的刻板印象,用了富含蛋白質和鐵質等營養成份,長期食用也不會對身體帶來負擔的新一代植物肉 ,例如 Beyond Meat等去創作菜式。賣相擺盤也相當吸引,真的是「一啲都唔齋」!
Before the meal, I was first struck by the breathtaking view of the ocean. The chef uses products such as Beyond Meat, which are rich in proteins and minerals. Special attention is also paid to presentation of the food, which includes elements of cuisines from all over China. As such, the menu is able to circumvent the nutritional concerns and image of monotony often associated with Buddhist vegan cooking.
第一道|麻婆豆腐(Beyond Meat)
肉餅帶嚼勁和與豆腐的嫩滑質感有對比,口感不無聊,挺相配,汁醬味道不會太辣嗆喉。
The textural contrast between the tofu and Beyond Meat is complementary. The sauce is not overly spicy.
第二道|香煎蓮藕餅(Omnipork)
用新豬肉做的肉餅,質感跟真肉餅極像!配上爽脆的香煎蓮藕和蘑菇汁,味道什為出彩。
The patty made with Omnipork captures the exact texture of real pork patty. It goes perfectly with the seared lotus root and the flavourful mushroom sauce.
第三道|川味水煮牛 (Gardein beefless strip)
這道「素食version」的水煮牛肉,創意和味道十足。走過油的素牛肉,口感不錯,真的有一秒錯以為是真牛肉!配以寬粉與豆皮和麻辣湯底拌着吃,川味濃厚!但建議紅油用量可調低幾分,始終構思這道菜的初心是以健康飲食為主。
This vegan version of Sichuan poached beef is another delicious creation. The oil blanched vegan beef again mimics the texture of real beef perfectly. Served with mung bean noodles in a piquant mala cuisson, this dish is truly Sichuan. If anything, the chili oil could be dialed down in the spirit of healthy eating, one main reason for a vegan diet.
第四道|普寧豆豉雞(Heura chicken)
普寧豆豉醬十分惹味,爆炒起來鑊氣十足,但小編認為Heura chicken 的口感不及前幾道的素肉選項出彩。
The puning bean paste is the star of the dish, which shines with great wokhei. But unlike products used in previous dishes, the texture of Huera chicken doesn't quite approximate real chicken.
第五道|海南雞風味中東米, 香煎豬肉餅, 伴蕃茄豆乳汁 (Omnipork)
中東米略帶薑黃味,配上豆乳蕃茄汁,味道開胃怡人,充滿東南亞色彩,香煎豬肉餅口感軟嫩,類似豬柳。
The pilaf has a hint of turmeric. Served with a sauce made with tomato and fermented tofu, the dish beckons Southeast Asia. The seared patty is tender and tastes like pork tenderloin.
第六道|竹炭漢堡 (Beyond Meat)
竹炭饅頭香淋軟熟,帶淡甜和麵粉香,以Beyond Meat 炮製的漢堡扒有著不少真漢堡扒的神韻,再配上日式燒汁,令人食指大動
The soft charcoal bun has a subtle sweetness and aroma of wheat. The Beyond Meat patty captures the essence of a beef patty. And with the addition of teriyaki sauce, this burger is finger-licking good.
整個菜單$600/位起,需提前預訂,廚師可依照客人喜好為你打造獨一無二的菜單。
The omakase menu is $600up. Reservation is needed and chef Johnny can tailor made the menu with your preference.

上星期收工同啲朋友去咗九龍城食泰菜,食完真係好想飛一轉Bangkok,做個spa,食吓好嘢。依家唔飛得,唯有煮吓泰菜又止吓癮。
今次用咗泰國藍象嘅青咖喱醬同埋西班牙Heura植物雞塊,加咗勁多我好鍾意嘅泰國圓茄同埋秋葵,煮個純素嘅青咖喱雞。呢款Heura植物雞唔洗解凍,響冰箱拎出嚟就煮得,洗洗切切連埋煮,快則20分鐘搞掂,慢嘅半個鐘都煮得到。
藍象嘅咖喱醬煮出嚟嘅青咖喱真係好有泰國風味,煮完仲可以pack埋第二日嘅lunch box👍🏻

We will be sharing a special recipe to help you BOOST your IMMUNE SYSTEM.

Turmeric, the “saffron” that has been used by Indian for 4,000 year, is well known for its anti-inflammatory function. This golden spice contains an active component, curcumin, which is also believed to have immune-boosting property. You may wonder how you can incorporate turmeric in your diet and here is one of ways, curry!! You can also sprinkle turmeric when making scrambled egg, rice, soup or even to milk.
Tumeric Curry Plant Chicken
Recipe for 2 portions
Ingredients:
Heura plant chicken half pack
Onion (sliced) half pc
Asparagus (chopped) half cup
Baby corn (chopped) half cup
Egg plant (chopped) half pc
Blue Elephant yellow curry sauce half pack
Califia Farms Barista Blend Oat Milk 1 cup
Turmeric 1/4 tsp
Fresh chilli (diced) to taste
1. Heat oil in a pan, pan-fry plant-based chicken until both sides turn golden brown. Set aside.
2. Stir-fry asparagus, baby corn and eggplant until soften. Set aside.
3. Stir-fry onion until soften, add yellow curry sauce, oat milk and turmeric powder. Mix well.
4. Add veggies and plant chicken back to the sauce and cook until the sauce boils. Serve and sprinkle fresh chilli.

抗疫黃薑咖哩雞飯
印度人使用黃薑這種香料已有4000年歷史,它當中所含的活性成份薑黃素不但具有抗炎功效,還有提升免疫系統系統的作用。如何可以在日常的飲食當中加入黃薑粉?這可說是非常易容!咖哩便是其中一種經常用到黃薑粉的食物,另外你還可以在炒蛋、煮飯、煲湯,甚至乎在奶中加入黃薑粉。
黃薑咖哩植物雞
二人份量
Heura植物雞 半盒
洋蔥(切絲)半個
露筍(切段)半碗
茄子(切段)半條
粟米筍 (切段)半碗
藍象黃咖喱醬 半包
Califia Farms 專業沖調用燕麥奶 1杯
黃薑粉 1/4茶匙
新鮮辣椒(切粒)適量
1. 熱鑊下油,先將植物雞兩面煎至金黃色,盛起備用
2. 把露筍、粟米筍和茄子下鑊略炒至軟身,盛起備用
3. 將洋蔥炒至軟身,加入黃咖哩醬、燕麥奶和黃薑粉後拌勻
4. 加入先前炒好的蔬菜和植物雞,待咖哩汁煮滾後便可上碟,最後可灑上辣椒

I came across a fried rice called “Not A Fried Rice” when dining at a Shanghainese restaurant one time. I was so intrigued by its name and wondered where the rice had gone in this “fried rice”. The magic revealed when it was served on table. The rice was replaced with cauliflower that was chopped very finely. The texture was like the real fried rice, but without the heaviness that ordinary fried rice would have and the drowsiness that came after when you had eaten too much carbs. I love the fact that by eating this “fried rice”, you can actually increase fibre intake a lot. Cauliflower is a very healthy food, which is under the category of cruciferous vegetables. Other vegetables in this category include broccoli, kale, arugula, cabbage etc. They all have anti-inflammatory and anti-cancer function.
We love to add fresh fruit to fried rice to bring more stimulations to our taste buds. I chose to add red pitaya this time. Not only because it can make the fried rice turn into a dazzling purple colour, but it also contains a very strong antioxidant called betalains that can slow down skin ageing!!
Red Pitaya “Fried Rice”
Recipe for 2 portions
Heura plant-based chicken (diced) half box
Cauliflower (finely chopped) half pc
Rice 1 bowl
Fresh corn kernels half pc
String beans (diced) half bowl
Red pitaya (diced) half pc
Minced ginger 2 tsp
Minced garlic 2 tsp
Salt to taste
Soy sauce to tase
1. Heat oil in a pan, pan-fry plant-based chicken until both sides turn golden brown. Set aside.
2. Slightly stir-fry corn and string beans until soften. Set aside.
3. Add cauliflower to pan, season with a little bit of salt. Stir-fry cauliflower until it becomes dry and crumbly.
4. Add a little oil, stir-fry garlic and ginger until aromatic.
5. Add rice and stir-fry it to loosen up. Once the rice turns a bit golden brown on the outside, add cauliflower, plant-based chicken, corn and string beans. Season with soy sauce.
6. Add red pitaya and turn off the heat. Mix all the ingredients well and serve.

曾經一次出街食飯的時候吃過一個名為「不是炒飯」的炒飯,最初真的很好奇究竟是用甚麼來炒這毎飯。上枱後發現原來是用椰菜花切碎扮成飯!吃的時候感覺很神奇,口感真的很像炒飯!但吃這個椰菜花炒飯卻沒有一般炒飯飽飽滯滯的感覺,亦不用怕因為吃得太多澱粉質而引致的「飯氣攻心」睡魔急call,同時纖維攝取量亦大大提升。當然椰菜花亦是非常健康的食物,它屬於十字花科蔬菜,同類的蔬菜包括西蘭花、羽衣甘藍、火箭菜、椰菜等,它們都具有抗炎和抗癌的功效。
炒飯很多是都會加入水果,令炒飯酸酸甜甜更開胃。今次選了紅肉的火龍果,煮好後整個炒飯會變成迷人的紫紅色,真是很靚!除了外貌吸引之外,最重要是紅肉火龍果含有的超強抗氧化物甜菜紅素,它可以減慢肌膚老化,愛美的你一定不能錯過。
火龍果美顏炒飯
二人份量
Heura 植物雞(切粒)半盒
椰菜花(切微粒)半個
飯 1碗
新鮮粟米粒(半條)
四季豆(切粒)半碗
紅肉火龍果 (切粒)半個
薑蓉 2茶匙
蒜蓉 2茶匙
鹽 適量
豉油 適量
1. 熱鑊下油,將植物雞煎至兩面金黃色,盛起備用。
2. 把粟米和四季豆下鑊略炒至軟身後盛起。
3. 椰菜花碎下鑊炒,加少許鹽調味,炒致乾身後盛起。
4. 下少許油,爆香薑蓉和蒜蓉。
5. 加入白飯炒散後,待飯面轉微微金黃色後,把椰菜花、植物雞、粟米和四季豆回鑊炒勻,加入豉油調味。
6. 最後下紅肉火龍果,熄火後炒勻,讓飯粒和椰菜粒沾上火龍果汁後便可上碟。
