Christmas is next week, so let's have some Mince Pies, shall we? Vegan version, of course.
Mince Pies are traditionally served at Christmas. They are filled with a mixture of dried fruits and spices. I've kept it really simple, spiced with only cinnamon and ground ginger. In terms of fruit, I also add some apples because I love them so much!
The pies are also made with an oaty crust that is gluten-free. So if you got friends who are sensitive to gluten, these pies will not leave your friends behind.

聖誕百果派是英國的傳統聖誕節小甜派,內餡是由不同果乾與香料組合而成。我有簡化了它,香料部份僅使用肉桂粉和薑粉;水果的部份除了果乾,還多加了蘋果,因為我深愛它們!
這個派的派皮主要由燕麥粉和杏仁粉組成,沒有使用小麥麵粉,所以如果你有朋友對小麥過敏的話,也能一同享用這個美味的聖誕小甜派。

氣炸鍋鹹魚肉餅:
材料:
免治豬肉半斤
鹹魚1件
薑汁
薑絲
處理:
1. 鹹魚剁碎。
2. 放免治豬肉落碗與鹹魚攪勻。
3. 剁碎薑,揸薑汁落豬肉
(隨意)。
4. 切薑絲,放一邊。
5. 豬肉調味:
a. 生粉2茶匙
b. 糖1茶匙
c. 豉油2茶匙
d. 油1茶匙
攪勻。
烹調:
1. 預熱氣炸鍋3分鐘。
2. 在氣炸鍋底盤上掃一層油,先放鹹魚,再放豬肉,攤薄鋪平在底盤上,再灑上生粉。
3. 用180度氣炸20分鐘。
4. 完成,將肉餅及鹹魚夾上碟。
Airfrying Salted fish meat pie:
Ingredients:
Minced pork meat 1/2 catty
Salted fish 1 slice
Ginger juice
Shredded ginger
Preparation:
1. Minced the pork.
2. Put minced pork and salted fish in a bowl. Mix well.
3. Mince the ginger, sqeeze the ginger juice into pork (optional).
4. Shred ginger, put aside.
5. Season the pork meat:
a. Tapioca starch 2 tsp
b. Sugar 1 tsp
c. Light soya sauce 2 tsp
d. Oil 1 tsp
Mix well.
Steps:
1. Preheat the airfryer for 3 minutes.
2. Brush some oil on the rack of airfryer. Put the meat pie in airfryer first, then salted fish on meat pie. Make the pie as thin as possible. Then put tapioca starch on pie.
3. Airfry at 180 C for 20 minutes.
4. Finish. Put meat pie and salted fish on plate. Serve.

1. 炸薯條 (粗切)
材料:
馬鈴薯 500公克 potato 500g
鹽 1/2茶匙 salt 1/2 tsp
香蒜粉 1/2茶匙 garlic powder 1/2 tsp
紅椒粉 1/4茶匙 paprika 1/4 tsp
黑胡椒粉 1/4茶匙 black pepper 1/4 tsp
巴西里 1/2茶匙 parsley powder 1/2 tsp
玉米粉 1大匙 corn starch 1tbsp
橄欖油 1大匙 olive oil 1tbsp
作法:
1.馬鈴薯洗淨帶皮切成粗條狀,泡水洗去澱粉雜質(避免變黑)。
2.將馬鈴薯與其餘材料混和均勻,最後再加一匙橄欖油,放入氣炸鍋中,設定溫度180°C、15分鐘,待時間完畢即可食用。
2. 脆皮臭豆腐
材料:
臭豆腐 4塊 stinky tofu 4
作法:
1.將臭豆腐1大塊切成四小塊,表面噴少許油,放入氣炸鍋中,設定溫度200°C、20分鐘,待時間完畢即可搭配泡菜一起食用。
泡菜
標:脆口不澀,清新爽口
材料:
高麗菜 400公克 cabbage 400g
紅蘿蔔片 100公克 carrot 100g
鹽 2茶匙 salt 2tsp
辣椒 2根 chili pepper 2
白醋 50cc rice vinegar
糖 50公克 sugar 50g
作法:
1. 高麗菜切粗段,抓鹽殺青醃漬約30分鐘。
2. 用涼開水洗去鹽,並將水分擠乾,再與辣椒段、白醋、糖混合,醃漬約30分鐘即可食用。(醃漬一夜更入味)
臭豆腐沾醬
標:鹹甜香,絕配沾醬
材料:
黑醋 30公克 black rice vinegar 30g
醬油膏 30公克 thick soy sauce 30g
涼開水 30cc water 30cc
蒜泥 2大匙 garlic puree 2tbsp
糖 1大匙 sugar 1tbsp
作法:
1.將所有材料混合均勻即為沾醬。
3. 炸酥皮熱狗捲
材料:
酥皮 4片 frozen puff pastry 4
熱狗 8條 hotdog 8
蛋 1顆 egg 1
作法:
1. 蛋打成蛋液備用。
2 .酥皮對切成一半,取一半酥皮將熱狗捲起,表面刷上蛋液,放入氣炸鍋中,設定溫度180°C、8分鐘,待時間完畢即可食用。
4. 炸餛飩
材料:
冷凍餛飩 16顆 frozen wonton 16
作法:
1.將冷凍餛飩放入氣炸鍋中,表面噴少許油,設定溫度170°C、10分鐘,待時間完畢即可食用。
5. 炸餡餅
材料:
牛肉餡餅 4個 taiwanese beef mince pie 4
作法:
1.將牛肉餡餅放入氣炸鍋中,表面噴少許油,設定溫度180°C、10分鐘,待時間完畢即可食用。
6. 炸三色豆包捲
材料:
豆包 4片 bean curd sheet 4
金針菇 適量 enoki mushroom
紅蘿蔔 適量 carrot
四季豆 適量 green beans
作法:
1. 將金針菇、紅蘿蔔、四季豆汆燙備用。
豆包中間剪開攤成長形,取適量金針菇、紅蘿蔔、四季豆一同捲起,表面噴少許油,設定溫度180°C、10分鐘,待時間完畢即可食用。
7. 炸飯糰
標: 剩飯大變身!外皮酥脆內餡香軟
訴求:氣旋科技不吃油,比煎炸更酥脆
材料:
白飯 150公克 steamed rice 150g
燒肉 20公克 pork slices with BBQ sauce 20g
蛋 2顆 egg 2
麵包粉 適量 bread crumbs
海苔 1片roasted seaweed 1
作法:
1. 蛋打成蛋液備用。
2. 手沾水防止沾黏,取適量米飯放在掌心舖平,於中心放入1匙燒肉,再取適量米飯蓋上,用掌心搓成圓形後用虎口塑型成三角狀,均勻沾上蛋液,再沾滿麵包粉,放入氣炸鍋中,表面噴上少許油,設定溫度180°C、10分鐘,待時間完畢即可搭配海苔一同食用。
