วันนี้เรามาอัพเกรดจากพาสต้าเป็นรีซอตโต้ละจ้าาา เมนูโปรดประจำบ้าน ทรัฟเฟิลหอยเชลล์ กินมันทุกอาทิตย์ 😆 เคยเห็นร้านอาหารทำคือมันใช้เวลาเคี่ยวข้าวนานมาก 15-20 นาทีจนกล้ามขึ้น! และน่าจะทำครั้งเดียวเลิก 🤣 ยืนทำตอนหิวๆนี่ไม่ได้นะ นานจัดดด แต่รสชาติออกมาใช้ได้เลย หอมทรัฟเฟิลสุดๆๆๆๆ

可能回台灣半年,目前對於中式料理很厭倦,一直研發燉飯、義大利麵或披薩,女兒也較喜歡這類食物,看著大家把桌上掃光,再辛苦也值得💪🏼
義式燉飯risotto是最近的偏愛,今天午餐煮了牛肝菌燉飯,risotto只需些簡單的食材, 即能傳達出深厚的味道!煮它時,需要一點時間耐心地站在鍋子前,用中小火和雞高湯去熬煮,不定時的開鍋和攪拌,熄火後記得再悶2-4分鐘再呈盤
Risotto準備的食材不算多,通常一樣,最多二樣蔬菜或海鮮就好,搭配的香草要一款(parsley幾乎每款燉飯都很搭),以 新鮮的香草最佳,乾燥的方便也行,有時冰箱沒有新鮮的,我會加入stone house 的香料,依舊是美味佳餚。
雞(或蔬菜)高湯是美味關鍵,而調味+提味用的帕馬森起司(Parmesan cheese) 萬萬不可少!最好有標準 risotto 米,像是arborio 或是carnaroli,呈盤後再淋幾滴橄欖油,上桌後在家人面前現刨Parmesan cheese或松露起司片,包準像餐廳一樣的美味可口😋

(3-step Lobster Risotto recipe)
TOW KAY NEO SG by Miss Tam Chiak and @chefcaoyong has launched 3 premium, rich and flavourful broths that are painstakingly boiled over long hours. Available on their own in 1L packs, or in bundle kits and hotpot essentials, the signature broths are void of preservatives and msg. I tried the Sichuan Poached Fish Bundle Kit($42.90) first. I was really impressed by the deep natural flavours of the broth, and the pristine freshness of the giant grouper slices. I used 500ml of the broth and half a packet of the preserved mustard and half of the grouper slices to whip up a fuss-free and absolutely delicious fish soup that went perfectly with just a bowl of steaming white rice. I’ve been recommending this to all my friends!! I really love it! The next day, I used the remaining broth and grouper slices to cook up an easy meal by throwing udon into the mix. Simple as ABC, but incredibly delish!!
I have the Lobster Pao Fan Bundle Kit ($45.90) too but I thought I would get creative and churn out a Lobster Risotto instead! The tasty broth was a godsend and this was the easiest risotto I’ve ever made (a good stock is really tedious to make so I’m glad that the lobster broth made my endeavour super easy!)
Serving for 1 pax :
1) Heat up some olive oil. Add 80g of Arborio rice to hot oil. Heat up about 400ml of lobster broth and 100ml water in another pot
2) Once rice is slightly brown, turn down the heat, add a ladle of lobster broth to the rice and let it simmer, stirring occasionally. Add another ladle of broth once the rice has absorbed most of it, till broth is used up.
3) Once rice is cooked to your desired texture, place 1/2 or whole Boston lobster on rice, and cover pan to heat up the already cooked lobster

2人份量 Serve2
意大利米 120g Arborio Rice
鮑魚 5 Abalone
雞湯 80ml Chicken Broth
鮑魚汁 70ml Abalone Sauce
水 350ml Water
洋蔥 ½ pcs Onion
黑椒 適量 Black Pepper
白酒 70ml White Wine
巴馬臣芝士 25g Parmesan Cheese
無鹽牛油 10g Unsalted Butter
番茜 適量 Parsley
1.洋蔥剝皮切粒
2.3隻鮑魚切粒
3.鮑魚汁,雞湯及水拌勻後煮滾備用
4.以小火炒香洋蔥至軟身,加入黑椒,意大利米及白酒炒勻
7.不停攪拌,待水份收乾後分數次加入雞湯炒勻
8.倒入鮑魚粒拌勻
9.加入芝士及牛油拌勻後上碟
10.加入黑椒煎香鮑魚
11.加入鮑魚及蕃茜,完成

Risotto là một trong những món ăn nổi tiếng của người Ý, có thể nói là một tinh hoa của ẩm thực. Món này nấu đơn giản mà khó, khó mà đơn giản. Quan trọng là canh được độ chín thích hợp.
Các loại gạo hạt tròn, ngắn hoặc vừa, có hàm lượng amylose nhưng lại giàu chất bột amylopectin được dùng để làm risotto. Các loại gạo này có thể hấp thụ nước và tách tinh bột ra, nên chúng dẻo hơn cả gạo tẻ.
Loại gạo dùng ở Ý là gạo Arborio, Baldo, Carnaroli, Padano, Roma, và Vialone Nano. Carnaroli và Vialone Nano là loại gạo tốt và đắt nhất. Chúng có chút ít khác biệt. Gạo Carnaroli khó bị nhão hơn, nhưng gạo Vialone Nano hạt lại nhỏ hơn, nấu nhanh hơn và ngấm gia vị tốt hơn. Các loại gạo khác như Roma, Baldo, Ribe và Originario cũng có thể dùng, nhưng không tạo ra được sự dẻo mịn như kem theo kiểu truyền thống; chúng tốt hơn nên được dùng cho các món súp và các loại xôi chè. Các từ "superfino", "semifino" và "fino" là muốn nói đến kích cỡ và hình dạng của hạt gạo (chiều dài, chiều rộng) chứ không phải chất lượng gạo.
