My Theory is that in many recipes where u can't even taste the 'meat' much anyway, we might as well save some Animal lives & Carbon quotas for the future if it's not necessary.. It's a very small compromise in taste only. Still exploring how to diet change 🤔🐷

You can use any vegetables you like. Wash, parboil, prepare if needed.

Quick Miso Pickled Vegetables (Immune-Boosting Everyday Recipe)
Difficulty: Easy
Time: 30min
Number of servings: 4 servings
Ingredients:
200g (7oz.) Miso (Awasemiso)
3 tbsp. sugar
3 tbsp. milk/soy milk
((Vegetables I used))
cucumber (partially peeled)
Daikon radish
carrot
sugar snap peas (2min parboiled)
avocado slices
grape tomatoes
boiled eggs
((Other Ingredients Recommended))
celery
radish
asparagus
renkon (lotus root)
Tofu (drained)
cooked meat
cooked fish
etc...
Directions:
1. In a bowl, mix Miso, sugar, and milk/soy milk very well.
2. Place half of the Miso mixture in a flat container with a lid or without a lid is okay. Place the prepared vegetables.
3. Place another half of the Miso mixture then cover with a lid or plastic wrap is okay. Leave for 30 minutes.
Scrape off Miso then serve in a dish. You don't want to leave more than 30 minutes or too much water comes out from the ingredients. Use the leftover Miso for other Miso dishes.

I made up this idea. Kabocha Sashimi does not exist, but it is very addictive and super delicious!!! Some people asked me how it tastes like. It is just like eating avocado with soy sauce ;) hehe
I used Kanten (agar agar powder) to firm up the Kabocha (Japanese Squash). Kanten contains a lot of fiber. It cleanses your digestive tract and cures constipation. Good for your health!
Kanten (agar agar powder) is a coagulant extracted from a seaweed called Tengusa. It is different from gelatin that you have to boil it until the boiling point, or it won't firm up!

Kabocha (Japanese Squash) Sashimi
Difficulty: Easy
Time: 20min + 60min cooling time
Number of servings: 4
Necessary Equipment:
mesh strainer
Ingredients:
400g (14oz.) Kabocha (Japanese Squash)
200ml soy milk (you can use milk)
4g (2 tsp.) Kanten powder (agar-agar powder)
soy sauce
Wasabi
Directions:
1. Scoop out the seeds of Kabocha and microwave on medium (500W) for 3 minutes to make it easy to cut.
2. Cut Kabocha into large chunks and remove the skin. Place them in a microwavable dish, cover with plastic wrap, and microwave on medium (500w) for 5 minutes until tender (cooked through).
3. Mash Kabocha using a fork while they are hot. Then push through the mesh strainer to strain.
4. Put soy milk and Kanten in a pot, then mix well. Bring to a boil and simmer for 2~3 minutes, mixing constantly. *Please watch carefully and turn down the heat a little bit if it starts to dry out.
5. Immediately, add the Kanten mixture into the mashed Kabocha and mix well.
6. Pour the mixture into a square container and cool in the fridge for about and hour to set.
7. Slice and serve with soy sauce and Wasabi if you like.

BREAKFAST:
Banana Strawberry Ice Cream
~ 2 frozen banana
~ 4 strawberries
~ liquid of your choice [I used almond milk]
blend everything together and serve with fresh fruits
LUNCH:
6-inch subway’s veggie delite with
~ honey oat bread toasted
~ NO cheese
~ ALL veggies + 1 scoop of avocado
~ sauces: sweet onion, honey mustard and red wine vinaigrette
DINNER:
Lettuce Potato Wrap
~ Lettuce
~ Cherry tomato
~ Carrot
~ Cucumber
~ Red onion
~ Lime
~ Kettle corn
cut everything to wrap size
Baked potato
~ 1 potato
~ salt
~ sarawak pepper
~ sarawak pepper powder
~ ground chillies
~ rosemary leaves
coat the potato with all the spices and lay it on a baking tray line with aluminium foil
bake at 200 degree celsius for about 30 minutes depending on you oven
Spicy miso sauce
~ miso paste
~ sriracha
mix 1 part of miso paste to 2 parts of hot water, mix well.
add sriracha to the amount of spiciness you desire
