People often compare this to Roast Duck/Goose. This is actually Marinated then made 'butterflied' flat as a bird, the mouthfeel is also different with a more crackly skin. The method for making this properly is probably in danger of being lost if u ask me, as a quick check of the recipes online only shows half of the procedures involved. It seems like some Old Master Chefs are protecting the full recipe method close to their own hearts, as a proprietary secret though 🤔❤️❤️

In Guangdong/Canton Province 廣東省 including Hong Kong & Macau 🇨🇳🇭🇰🇲🇴, a roast shop is traditionally called a '燒臘店' . Unlike modern eaters spoiled by choice & also easier availability to daily butchers & refrigeration, in the less glorious past? The same shops used to switch to serving Cured 'Waxed' meats 臘味 in Autumn to Winter, hence some shops still carry this 秋風起食臘味 tradition or for Take Aways hanging outside

The one in Lin Heung House 蓮香樓, Hong Kong is decidedly the Cantonese style type, since instead of being plain steamed, braised or even fried as some are eaten, our version is a Roast x Cured meat recipe fittingly falling into the 燒 + 臘 definition. Surprisingly it's still super tasty here, the Taro filling was just right powdery, slightly alcoholic & that sauce is Classic old school, reminding me of the flavors at 得龍大飯店 too which many newer shops can't emulate for some reason 🤔👍🏻👍🏻👍🏻

麻油兩克 2g sesame oil
肉桂一條 1 cinnamon
草果一個 1 tsaoko
