The dish that mesmerised the entire table at @cote.bangkok came looking, deceptively like the most meticulously prepared slice of onion you've ever seen, caramelised and embellished to the nines, was in - fact precisely shaped ribbons of squid, wound into perfect symmetry.
The combination of earth, sea is most striking at first, among the incredible tender and tenuous thread of the squid, which could only account for a sheer lightness of highly skilled hands and a helluva lot of technique.
The gentle disposition of the splashing of olive oil, lemon juice and sprinkling of thyme with a lingering yet bold lasting statement of artichoke chips, brings forth, all what Mediterranean cuisine may resemble but in a deeply considered light.

終於可以去Sainsbury入手邪惡美食社團推介的食物喇~
順便帶Y BB去散步,所以無揸車~
前後行左成3個鐘先返到屋企 😅
(其實超市只係行左1個鐘,中間去左corner shop退amazon商品+KFC)
返到屋企試食大會開始~
先來個Blue cheese + Garlic & Herb配KFC薯條一齊用焗爐翻熱。
Y先生好鐘意個blue cheese, 但我就麻麻了。(會買都係因為知他鍾意Blue Cheese)
Brown Crab Meat有蟹膏,就咁凍食。
Y先生話以後批准我去多d Sainsbury 😆 每次買一盒返來。
我就都係鐘意食熱的蒸蟹/炒蟹多d, 而且蟹肉間似乎無可避免有些殼碎。
然後到豬肉腸時間~
邪惡美食社友推介說甜甜Q彈多汁就要選Jolly Hog pork sausage with caramelised red onion口味。
而想外酥內多汁,就要吃Guinness sausage。
英國豬vs愛爾蘭豬的比拼。
Guinness sausage 的腸衣還特別用上了beef collagen casing而不是pork casings. 可能因為這樣,在用180度焗了近30分鐘後,Guinness sausage明顯較酥皮顏色。
吃起來的確如社友形容般。
我們都比較喜歡Guinness sausage的味道和口感,真的有淡淡的啤酒香。

Sainsbury有2款truffle oil賣呢~
原來我之前在Waitrose買到的是Truffle flavoured Olive Oil, 相較之下我對旁邊那枝Truffle Oil更有興趣! 有機會要試一下!
Yorkshire Biscuit Tea社友說調出來會很像珍珠奶茶的口味,但Y先生沒興趣,所以就沒買了。

This dish is super popular in Vietnam. It can be served as a dip with steamed/ boiled vegetables, or with steamed rice. Its taste is a combination of saltiness of fish sauce and sweetness of sugar, enhanced by a little spiciness from chilly and pepper, and the wonderful aroma of fried shallots and garlics. One crucial factor that makes the taste of this dish distinctive and authentic is to cook the ingredients in pork fat instead of oil.
Ingredients
200 gram pork belly - choose the piece that has lots of fat
40 gram dried shrimps
15 gr shallots (2 - 3 shallots)
15 gr garlics (3 - 4 big cloves)
1 tbsp caster sugar
1 tbsp brown sugar
3 - 4 tbsp fish sauce
a bunch of spring onion, cut crosswise
2 - 3 fresh chilli
chilli powder, pepper (optional)
