嗨!大家好,我是 Cassandre, 今天的『食不相瞞』我們要來做一道名字聽起來就很有氣勢的法式料理:藍帶雞排。 ( Chicken Cordon Bleu Recipe/ Poulet cordon bleu/法式藍帶雞肉捲)
藍帶雞排是一道很受人喜歡的歐式排餐,它跟藍帶豬排曾經在台灣小紅過一段時間,之所會令人喜歡,主要就是味道清爽、油脂少的雞胸肉,搭配帶有薰香的火腿跟香濃起士捲起來,外層再裏上麵粉、蛋液跟麵包屑,透過油煎或油炸的方式,使得外面酥脆、內裡多汁並滿溢融化起士的美妙口味,讓吃過的人都感到滿足。
在起士的選用上,可以使用瑞士起士鍋常用的幾款起士,或者高達跟馬茲瑞拉都挺適合。而煎好的雞肉卷,除了搭配蔬菜享用,還可以另外製作奶油醬汁來吃哦!
藍帶雞排這個名字聽起來好像很厲害,因為掛上了「藍帶(cordon bleu)」這個法文,但實際做起來很簡單,很容易上手,最重要是新手也會很有成就感 ❤

👉特別提醒:
這次影片中我們使用的鍋具,是非常厚實的鐵板(大人の鉄板),用這種厚實的鐵板來做排餐的好處,就是導熱的溫度很均勻,續熱度也很高,但鐵板不是不沾的鍋具,所以要以熱鍋冷油的方式來煎排餐,也就是要先以中大火熱鍋,等鐵板到達一定的熱度後,再倒油,這樣不僅不沾,上色也很漂亮。
那如果家裡使用的是屬於不沾的鍋具,那要記得改為冷鍋冷油的方式來煎喔

Chicken Cordon Bleu 藍帶雞排怎麼作呢?
下面是法式藍帶雞排的作法與食譜:
✎ 材料 / INGREDIENTS
雞胸肉 1個
火腿片 2片
起士 3-4片, 可用瑞士起士,或高達與馬茲瑞拉
第戎芥末醬 1茶匙
鹽 1小撮
黑胡椒 1小撮
中筋麵粉 適量
蛋 1顆
麵包屑 適量
百里香 1小束(若無可省略)
✎ 做法 / Instructions
1. 案板上舖保鮮膜,把雞胸肉放上去,然後從側邊中央下刀,片成蝴蝶狀的大面積
2. 把雞胸肉兩面都抹一點點水,只要一點點,接著將雞胸肉的皮面朝上,並蓋上保鮮膜
3. 用肉捶「平」的那面敲打至厚度 4mm 厚左右,也可以用平底的小鍋子來打,平面肉捶打出來的厚度較一致
4. 把皮面朝下放,撕開另一面的保鮮膜,先塗一層薄薄的芥末醬,然後依序舖上起士跟火腿片
5. 把兩側的肉折進來,然後捲成雞肉卷狀,用保鮮膜包緊實,放到冰箱冰半小時
6. 料理機裡加入麵包屑,打成較細一點的顆粒狀,倒在寬口的料理盤備用
7. 碗裡打入一顆蛋,加入鹽跟黑胡椒以及一小匙的水,打勻後倒在盤子裡
8. 將雞肉卷每一面都均勻地沾上麵粉,然後是蛋液,最後是麵包屑
9. 用中火熱鍋,我們使用的是厚的鐵板鍋,所以要熱鍋冷油來煎,加入蔬菜油跟奶油,放上雞肉卷後改以中小火或小火來煎,每面煎大概五分鐘,或直到金黃上色,煎到最後面時可以再加一點奶油跟百里香增添香氣
10. 將煎好的雞肉卷放在紙巾上吸除多餘油脂,然後切成喜歡的厚度享用。

Hi, everyone :) Today we're going to show you how to make a class Chicken Cordon Bleu at home.
We love Chicken Cordon Bleu, because you can taste soft and juicy meat and melted cheese in one bite. Chicken Cordon Bleu is a kind of chicken roll with ham and cheese. Simple but delicious. You can enjoy it with some vegetables. Or served with a creamy sauce.
Here’s a recipe for a flavour, crispy, a golden crumb Chicken Cordon Bleu, now you can make a fancy french meal at home. Hope you enjoy it. :)

Chicken Cordon Bleu Recipe:
✎ Ingredients
chicken breasts, 1
ham slice 2
cheese 3-4 slices
Dijon mustard 1 teaspoon
a pinch of salt
a pinch of black pepper
all-purpose flour, QS
large egg, 1
dry bread crumbs, QS
thyme, QS (optional)
✎ Instructions
1. Place a chicken breast on a plastic wrap. Then butterfly the chicken breast with a sharp knife, frist, slice horizontally into the chicken, stop about a half-inch from the opposite side.
2. Open up the butterfly chicken breast, and add a little bit of cold water in both side. Skin side up and cover with another wrap.
3. Pound chicken to 4mm thick with a flat mallet.
4. Chicken skin side down, remove the wrap and spread a little mustard, just a little bit. Top with hams and cheeses as you want.
5. Fold over the right and left side breast. Roll the chicken and wrap tightly with a plastic wrap. Refrigerate for 30 mins.
6. Add some breadcrumbs in a food processor, add a little salt, then pulse it several times until turn into finely crumbs. Pour the flour in a sheet.
7. Break a egg in a bowl, add a pinch of salt and black of pepper, and a teaspoon of cold water, then beat until smooth.
8. Dip the chicken roll in the flour, then egg, and then breadcrumbs.
9. Heat a heavy skillet with oil and butter over medium heat. Put the breaded chicken roll in and reduce the heat to medium low heat or low heat. Cook for 5 minutes per side or until even golden brown. At the end, add a little butter and thyme to add more flavour.
10. Place the cordon bleu on a paper towel to absorb the excess oil. Slice the chicken roll and Enjoy.

Tonkatsu is a deep-fried pork cutlet. It is a very simple and popular home-cooked meal in Japan.
"Ton" means "pork" in Japanese. If you use chicken, it is called "Chicken-Katsu". If you use beef, it is called "Beef-Katsu".

Ingredients:
2 boneless pork chops
salt and ground black pepper
* flour
* beaten egg
* Panko (bread crumbs)
vegetable oil for deep frying
toasted white sesame seeds
Tonkatsu sauce
Karashi mustard if you like
shredded cabbage
Directions:
1. Slash the fat rimming of pork chops in several places to keep the meat from curling or shrinking when deep-fried. Pound the pork chops with a meat mallet or a rolling pin to make them tender. Season both sides with salt and pepper.
2. Flour the pork chops lightly, dip in beaten egg, then coat with Panko. Use one hand for coating flour and Panko, and use the other to dip in egg to keep one of your hands dry.
3. Deep fry them in oil at 170C (340F) until thoroughly cooked golden brown. (Turn the pork over to cook evenly.) Remove the Tonkatsu from the oil and drain.
4. Slice each Tonkatsu into small pieces and serve with shredded cabbage. Grind the white sesame seeds and mix into the Tonkatsu sauce. Dip the Tonkatsu into the sauce and eat. You can add some Karashi mustard if you like.
