Bahan² Mi Wantan Kicap:
Mi Wantan - ( dicelur & letakkan sedikit minyak untuk x melekat )
Sos Tiram
Kicap
Minyak Bijan
Cara²nya :
Satukan kesemua bahan ( Sos Tiram, Kicap, Minyak Bijan ) di dalam bekas. Kemudian, masukkan Mi Wantan yang telah dicelur ke dalam bekas yang berisi bahan² kicap tadi. Gaul rata sehingga semua sebati & kicap meresap elok ke dalam Mi Wantan tadi.
Bahan² sampingan :
Sawi / Pak Choy - dicelur seketika
Cendawan Shitake Kering - direndam dalam air panas sehingga lembut. Toskan lebihan air
Bahan² untuk inti Dumpling :
Isi Ayam / Isi Udang
Cendawan Shitake Kering - direndam dengan air panas, toskan lebihan air.
Daun Bawang
Lobak Merah - ( dipotong dadu kecil² )
Bawang Merah/Bawang Holland - ( dipotong dadu kecil² )
Lada Sulah
Sos Tiram
Garam
Kiub Ayam / Stok Ayam
Tepung
Cara²nya :
Kisar halus isi ayam/isi udang dengan cendawan shitake kering yang telah direndam tadi. ( Kalau nak senang, kisar sekali dengan isi ayam/isi udang tapi kalau x potong dadu kecil² ) bersama sedikit garam, sos tiram, lada sulah, kiub ayam/stok ayam.
Kemudian masukkan lobak merah, daun bawang serta bawang yang telah dipotong tadi serta sedikit tepung. Gaul rata untuk pastikan semuanya sekata.
P/S : Pastikan inti dumpling xpenuh sangat sebab kulit dumpling mudah terkoyak. Gunakan 1 sudu kecil je untuk letak inti tu. Lekatkan kulit dumpling tu gunakan air & tekan sedikit untuk padatkan dan kemaskan inti di dalam kulit dumpling tersebut. Kemudian, boleh kukus dalam 20 minit.
Bahan² untuk Sup Dumpling :
Kiub Ayam/Stok Ayam
Air
Kobis Cina panjang ( jika suka )
Dumpling - ( yang telah dikukus )
Daun Bawang
Bawang Goreng
Cara²nya :
Masukkan air, kiub ayam/stok ayam, kobis panjang ( jika suka ) dan dumpling yang telah dikukus tadi. Renehkan seketika sehingga mendidih dan boleh dihidangkan dengan taburan daun bawang serta bawang goreng.
Nota :
Untuk menambahkan kesedapan Wantan Mee Kicap, boleh sediakan kicap cili potong dengan Minyak Bawang Putih. Memang terangkat.

Soy Sauce with soy sauce
Friends noodles with soy sauce:
Wonton Noodles - (Blanched & put some oil to not stick)
Oyster sauce
Soy Sauce Soy Sauce Soy Sauce Soy Sauce Soy Sauce Soy
Sesame Oil
Turf:
Unite all ingredients (Oyster Sauce, soy sauce, Sesame Oil) in the container. Then put in the wonton noodles that have been put into the container that contains friends soy sauce just now. Flat Gaul until all mixed and soy sauce absorbed into the wonton noodles just now.
Side Friends:
Mustard / pak choy - blanched for a while
Dry Shiitake Mushroom - soaked in hot water to soft. Throw the extra water
Material for Dumpling core:
Chicken filling / shrimp filling
Dry Shitake Mushitake - soaked with hot water, toskan excess water.
Onion leaves
Carrot - (cut dice)
Red Onion / Holland onion - (chopped dice)
Sulah pepper
Oyster sauce
Salt
Chicken Cubes / chicken stock
Flour
Turf:
A Fine Blend of chicken / shrimp filling with dried fermented mushrooms that were soaked just now. (if you want to be easy, grind together with chicken filling / shrimp filling but if you don't cut the dice dice) with a little salt, oyster sauce, sulah pepper, chicken cubes / chicken stock.
Then put in the carrot, onion leaves and onions that were cut just now and some flour. Flat Gaul to make sure it's all uniform.
P / S: Make sure the core of dumpling xfull because dumpling skin is easily torn apart. Use 1 small sudu for the core. Stick the dumpling skin use water & press a little to solid and pack the core inside the dumpling skin. Then, can steamed in 20 minutes.
Material for Dumpling Soup:
Chicken Cubes / chicken stock
Water
Long Chinese cabbage (if like)
Dumpling - (steamed)
Onion leaves
Fried onions
Turf:
Insert Water, chicken cubes / chicken stock, long cabbage (if like) and dumplings that were steamed just now. Heat for a while until boiling and can be served with onion leaves and fried onions.
Note:
To add the deliciousness of wonton soy sauce noodles, you can prepare chili sauce with garlic oil. Definitely lifted.

I had a bowl of “Dirty noodle #嗱喳麵” and ... I survived! Make sure you know that the Dirty Noodle is NOT dirty at all! It is more commonly known as the Cart noodle #車仔麵, which was once a popular hawker food sold in a cart - that’s why it is said to be “dirty”. We don’t have hawker selling cart noodle in HK anymore, instead you can find them in restaurant!

When you make an order, you will first choose a type of noodle (include rice noodles 河粉、thick egg noodles 粗麵, thin egg noodles 幼麵, udon 烏冬, yellow noodles 油麵 and rice vermicelli 米粉.) You will then choose different ingredients out of more than 20 choices! Popular ingredients include pig intestine 豬大腸, pig skin 豬皮, fishball 魚蛋, turnip蘿蔔, wonton 雲吞 and chicken wings. This is not a difficult task for me, a person who always has difficulty in making choices, at all! As you can choose as many ingredients as you want (because you pay for every type of ingredients you add, usually HKD$8-10 for each). At last, choose the soup for your soup noodle! This will be prepared right in front of you and take you less than a minute 😋
So, that is what I ordered - Yellow noodle (HKD$10) with turnip, pig blood 豬紅, pig skin and pig intestine (HKD$8 each). I had the beef soup (腩汁) for my noodle and a can of coke for sure (HKD$ 7)! (I paid HK$ 49 in total.)

Singaporean cuisine is multi-faceted because of cultural influences. While a majority of Singaporeans are Chinese, we also have Malay, Indian and Eurasian ethnic groups. We've been taught since young to embrace racial diversity and maintain social harmony. This is not only evident in our language - Singlish, which is a variety of English spoken in Singapore, incorporating elements of Chinese and Malay, but also the food that we eat. Spicy food is rather common in Singapore so when Sichuan cuisine is brought over to our shore, they immediately became a hit. Almost all the coffeeshops or foodcourts in Singapore these days have at least one stall selling Sichuan food. Sichuan (Szechuan or sometimes spelt as Schezwan) food has a unique bold and lip-numbing spiciness in most of their dishes because of the liberal use of garlic, Sichuan peppercorns and other spices. One of their most popular dishes is this Spicy Fish Hot Pot or Chong Qing Grilled Fish. The soup base of this dish is good to go with rice and noodles. You can also add any side ingredients, such as beancurd skin, tofu, mushrooms, prawns, instant ramen noodles, etc to this dish. If you have a party coming up, you can consider serving this over a portable stove and have the side ingredients placed on the side so that your guests can cook while they eat. It's a really nice experience. Just prepare extra stock because we can guarantee you that a top-up is required. If you've never tried this yummy dish before, do give it a go.

Sichuan Spicy Fish Hot Pot (Szechuan Chong Qing Grilled Fish) 重庆烤鱼
Ingredients:

Grilled fish - bake at 200C or 400F for 20 mins

400g fresh fish (you can use sea bass, snapper, etc)
1 teaspoon salt
0.5 teaspoon light soy sauce
1 tablespoon cooking oil
0.5 tablespoon chilli powder

2 tablespoons Sichuan peppercorns
15 dried chilli (rehydrated & cut into small pieces)
2 tablespoons Chinese spicy paste (Xiang La Jiang 香辣酱) can use spicy broad bean paste 豆瓣酱
1.2L water
1 chicken stock cube
1 teaspoon sugar

一口雲吞湯:
材料:
免治豬肉168克
蔥1條
芫荽1棵
處理:
1. 蔥、芫荽洗淨。
2. 蔥切粒。
3. 芫荽頭,滾湯用。
芫荽莖切粒,其餘切段,放碗中。
4. 豬肉調味:
a. 大地魚粉1/2茶匙
b. 雞粉1/2茶匙
c. 生抽1茶匙
d. 胡椒粉少量
e. 糖1/2茶匙
f. 油1茶匙
5. 雲吞皮,斜角切,1開2。
6. 包小雲吞步驟:
a. 雲吞皮直角向自己。
b. 中間加水埋口撳實。
c. 兩邊雲吞皮反上中間撳實
d. 中間加水埋口。
e. 雲吞中間再撳實。
烹調:
1. 預備湯底,加入:
a. 芫荽頭
b. 雞粉1量匙
2. 湯底滾起,熄火。
3. 在鑊中煲滾水,放雲吞。
4. 餘下的雲吞,保鮮紙包好,放冰格。
5. 滾起,加入少量清水,再滾起。
6. 湯底倒入碗中。
7. 雲吞再次滾起,放碗中,完成。
Bite~sized wonton in soup:
Ingredients:
Minced pork 168g
Green onion 1 No.
Coriander 1 No.
Preparation:
1. Green onion, coriander, rinse thoroughly.
2. Green onion, dice in cubes.
3. Coriander root, for preparing soup base.
Dice stem of coriander, the rest cut in lengths. Put everything in a bowl.
4. Season the pork:
a. Dried flounder powder 1/2 tsp
b. Chicken powder 1/2 tsp
c. Light soya sauce 1tsp
d. Pepper little
e. Sugar 1/2 tsp
f. Oil 1 tsp
5. Wonton sheets, divide into 2 shares by cutting diagonally.
6. Steps of making mini wontons:
a. The right angle of wonton sheet face to yourself.
b. Lift this angle to the opposite side. Press tightly.
c. The 2 base angles to be put towards to this right angle.
d. The center of wonton to be pressed tightly by water.
e. Press tightly again at the centre of wontons .
Steps:
1. Prepare soup base, add:
a. Root of coriander
b. Chicken powder 1 measure spoon
2. Soup base has been boiled up. Turn off fire.
3. Boil up a wok of water. Put wontons after boils up.
4. Use wrap cling to wrap up the rest of wontons to be put into freezer.
5. Soup base boils up, add little water. Wait for boiling up again.
6. Pour the soup base into bowl.
7. Wonton has been boiled up again, put into bowls. Serve.

Bahan-bahan Dumpling
250 gm ayam cincang (boleh diganti dengan daging jika suka)
30 gm bawang holland (dicincang)
30 gm lobak merah (dicincang)
30 gm daun bawang (dihiris)
30 gm cendawan shitake (dicincang)
1 sudu teh garam
1 sudu besar tepung jagung
1 sudu teh minyak bijan
Kulit dumpling
Bahan-Bahan Sup
1500 ml air
1 inci halia (dihiris)
2 ulas bawang putih, (dihiris)
5 gm daun bawang (dihiris)
3 biji cendawan shitake (dihiris)
1 sudu teh garam
1 sudu teh stok ayam
1 sudu teh minyak bijan
50 gm Pak Choi
250 gm mi wantan
Bahan-bahan Sos Pedas
1 sudu besar emping cili
1/3 cawan minyak masak
1 batang kulit kayu manis
3 biji buah pelaga
1 batang bunga lawang
1 sudu teh garam
Cara memasak
1. Untuk dumpling ayam, campurkan kesemua bahan dalam sebuah mangkuk, tambahkan garam, tepung jagung dan minyak bijan. Gaulkan sehingga sebati.
2. Letakkan sesudu campuran ayam ke dalam kulit wantan dan letak sedikit air dikelilingnya supaya mudah lekat. Lipat dan kelim setiap bucu wantan dengan kemas. Resepi ini akan dapat 30 biji dumpling ayam.
3. Seterusnya adalah proses memasak sup stok ayam. Dalam satu periuk masukkan air, hirisan halia, bawang putih dan cendawan shitake. Masak sehingga mendidih dan perasakan dengan garam, stok ayam, minyak bijan diikuti dengan daun sup.
4. Bila sup mula mendidih, masukkan dumpling dan masak lebih kurang 10 minit.
5. Untuk sos: sangai kulit kayu manis, buah pelaga dan bunga lawang sehingga naik bau dan ketepikan. Kemudian, panaskan minyak dan tutup api, masukkan emping cili dan garam. Kacau dan campurkan kesemua sekali bahan yang telah disangai tadi ke dalam campuran minyak dan siap.
6. Celurkan mi wantan di dalam air panas menggelegak seketika. Toskan. Hidangkan mi wantan bersama sup dumpling ayam. Dumpling juga enak dihidangkan begitu sahaja tanpa sup dan mi dan dimakan bersama sup.

Wonton Noodle in Dumpling Soup
Chicken Dumpling Ingredients
250 gm minced chicken (can be replaced with minced beef )
30 gm holland onion (minced)
30 gm carrot (minced)
30 gm spring onion (sliced)
30 gm shitake mushroom (minced)
1 tsp salt
1 tbsp corn starch
1 tsp sesame oil
Dumpling skin
Wonton Soup Ingredients
1500 ml water
1 inch ginger (sliced)
2 cloves garlic, (sliced)
5 gm green onions (sliced)
3 nos shitake mushroom (sliced)
1 tsp chicken salt
1 tsp chicken stock
1 tsp sesame oil
250 gm wonton noodles
50 gm Pak Choi
Spicy Sauce Ingredients
1 tbsp chili flakes
1/3 cup cooking oil
1 pcs star anise
3 pcs cardamoms
1 pcs cinnamon
1 tsp salt
Cooking methods
1. For the chicken dumpling, mix all the ingredients into a bowl, add salt, corn starch and sesame oil.
2. Spoon a tablespoon of mixture onto each wrapper and brush the edges of each wrapper with a little water. Fold wrapper over the mixture and then starting from one end, pleat and press the edges together. For this recipe will get 30 pieces chicken dumpling.
3. Next is the step for making chicken-stock soup. Add water, ginger, garlic slices and shitake mushroom in a pot, and cook until boil. Then, add the salt, chicken stock and followed by the spring onion.
4. Add the dumpling when the soup is boiling. Cook about 10 minutes.
5. For the sauce: in a small saucepan, pan fry without oil star anise, cardamon and cinnamon until aromatic, then put aside. Next, heat the cooking oil in a small pot, and turn off the heat, and then add the chili flakes and salt. Mix to combine and add the spices into the oil mixture.
6. Immerse noodle in hot water for a while and then simmer it. Serve wonton noodle with dumplings soup and serve with the spicy sauce. Dumpling also delicious when serve without soup and eaten with the sauce only. Bonne appetite.
