Sup Ayam Ginseng
* 1 ayam silkie
* 2 akar ginseng
* campuran herba sup cina
* 10 biji kurma merah kering
* 2 sudu besar goji berries
* garam secukup rasa
* Akar teratai, dihiris kasar
* air
1. Dalam periuk, panaskan air sehingga mendidih.
2. Masukkan kesemua bahan kecuali ayam dan biarkan mereneh seketika.
3. Masukkan ayam dan biarkan reneh batas api rendah sehingga ayam cukup lembut lebih kurang 1.5 jam. Ubah rasa dengan garam secukupnya.
4. Boleh diminum begitu sahaja atau dihidangkan bersama mi atau nasi.

SUP TIMUN TUA chinese style halal
500g ayam (dipotong kecil dengan tulang)
2 lobak merah, dihiris kasar
1 timun tua, dibuang biji dan dihiris kasar
2 sudu besar goji beri
8 kurma merah kering, dibelah dua
1 sudu besar biji lada putih, dihancur kasar
1. letakkan ayam dengan air dalam periuk dan panaskan sehingga renehan pertama. Buangkan air renehan pertama.
2. Kembalikan ayam dalam periuk dengan semua bahan lain dan renehkan 1 jam 30min hingga 2 jam atas api sederhana.
3. Perasakan dengan garam secukupnya.

NASI KACANG PANJANG HAKKA HALAL
* 3 cawan beras
* 2 sudu besar minyak masak
* 150g ayam cincang
* 50 g udang kering, direndam air panas
* 350g kacang panjang, dipotong 2 inci
* 100 g bawang merah kecil, dihiris nipis
* 5 ulas bawang putih, dicincang
* 3 cawan air
Perasa
* 1 sudu besar kicap cair
* 2 sudu besar kicap pekat
* 1 sudu besar sos tiram
* 1 sudu kecil minyak bijan
* lada putih
* ½ sudu kecil gula
* 1 ½ sudu kecil garam
1. Dalam periuk nasi/ pressure cooker, tumiskan bawang merah, bawang putih dan udang kering sehingga bau naik.
2. Masukkan ayam cincang dan tumis kering.
3. Masukkan kesemua bahan lain (kecuali air) dan bahan perasa. Salutkamn beras dengan semua bahan.
4. Masukkan air dan tanak nasi seperti biasa.

-kalo nak masak gunakan periuk seperti dalam video, pastikan periuk yang digunakan selamat dimasukkan dalam ketuhar (tiada pemegang plastik)
- tutup dengan aluminium setelah lakukan langkah 1-4 dan masak dalam ketuhar yang telah dipanaskan pada suhu 200C untuk 20 minit atau sehingga nasi cukup masak.

Ingredients:
Makes 26 pieces of tofu (only 12 were used in 1 serving)
2 silken tofu (600g in total)
(highly recommended to use egg tofu instead)
150g of prawns - deshelled & deveined
1 teaspoon of salt
1 teaspoon of chicken stock powder
1 egg
3 teaspoons of cornflour
A few dashes of white pepper
Also prepare a few porcelain spoons & some cooking oil
Steam tofu mix for 8 mins. After steaming, you can use the tofu as is or deep-fry per your personal preference. If you would like to deep-fry the tofu, coat them with cornflour before frying. Remember to let the coated tofu rest for about 15 mins before frying.

180g of long beans
Sauce Ingredients

This is only for 1 serving as seen in the picture
Some cooking oil
4 cloves of chopped garlic
30g of scallops soaked in 1 cup of hot water
1 tablespoon of oyster sauce
1/4 teaspoon of sugar
A few dashes of white pepper
1/2 tablespoon of dark soy sauce
Some cornstarch solution
1 tablespoon of Chinese cooking wine (Shaoxing Huatiao wine)
1 teaspoon of sesame oil
Note: if the sauce becomes a little too dry, add some water. Roland added some water as seen in the video.

[Enoki Mushrooms in Garlic Sauce 蒜蓉金针菇]
I love love love enoki mushrooms in garlic sauce. I only realised recently that enoki mushrooms are great as a replacement to carbohydrates. Enoki mushrooms, also known as enokitake in Japan, can be added to soups as well as in salads and stir-fries. Its mild flavor leads to absorbing the flavour of the other ingredients used to cook with it. If you wanna cut down your carbo intake but still want to enjoy your typical soup dishes like prawn noodle soup or fish ball noodle soup etc, just replace the noodles with enokitake. I super love this combination. How I wish that more hawker stalls in Singapore can start to provide this option instead of just offering noodles.
