茶餐廳常餐 — 熱食的常餐比生冷食物暖胃,但火腿、午餐肉等醃製食物不宜多吃。奶茶、咖啡如果有奶,都會比較滋膩,會加重濕熱症狀,改喝檸茶/檸水比較好。

People with a hectic lifestyle prefer resting to spending time on lunch. Hence, they would opt for a quick lunch. What would be your choice? Constantly eating raw and cold food such as salad can hurt the spleen and stomach, which can lead to appetite loss, abdominal bloating, and fatigue. These problems are associated with weakness in the spleen and stomach.
From the perspective of Chinese Medicine, how healthy are these quick lunch options? The explanations below can help you choose healthier meals.
Set meals in cha chaan teng - Warm food generally can warm the stomach more than raw and cold food can, but it is best to avoid cured meat such as ham and luncheon meat. Milk tea or coffee that comes with milk are often thick and greasy, and they can worsen damp heat symptoms in the body. Consider drinking lemon tea / water instead.
Salad – Uncooked vegetables in salads are raw and cold food. Eating it regularly can hurt the spleen and stomach. Warm salad would be a better choice.
Sandwich/hamburger – Sandwiches stored in the refrigerator are a type of raw and cold foods. Do consume them at room temperature; hamburgers are rich in meat and sauce, hence they are heavily flavored food. Excessive consumption of hamburgers can increase burden to the spleen and stomach.

In this episode, we headed down to Carnivore to rampage through a Brazilian AYCE Steakhouse Buffet! Carnivore, located at Chijmes, is a Churrascaria, which is a buffet restaurant that specialises in Churrasco (Spanish/Portuguese-style Grilled Meat). Only offering dinner service, prices range from $59++ to $69++ depending on the day for an all-you-can-eat Brazilian buffet.
Due to the Covid-19, their usual salad bar, where you could pick 15 different hot and cold sides, is now an ala minute service. Sides range from the iconic Brazilian dish, Feijoada, which is a black bean stew cooked with chunks of beef and pork, to salads.
Their meats are still served similar to the standard rodizio style, where meat waiters roam around with skewers of delectable meat, offering portions to tables. However, the carving is done at an isolated table and a designated staff member brings it to your table upon request. Choices range from beef, chicken, lamb, fish and pork, including beef hump, beef short ribs, beef brisket, chicken hearts, butterfish and lamb leg.
Realising that having them serve me their usual way would be too slow, I brought my giant plate along and had them plate a sumptuous meat feast. I got every single one of their grilled meats, rounding it off with their feijoada set. The feijoada set actually stood on its own very well versus the grilled food. The combination of the stew, garlic rice, sautéed kale and toasted cassava flour (farofa) brought many contrasting flavours and textures together in wonderfully pleasant fashion.
The standout meats would be the beef brisket, beef short rib and beef rump. Each were spectacularly tender and rich with a deep meaty flavour. Carnivore also offers a selection of sauces to go along with your meat, with the ideal one being chimichurri, a vinegar-heavy sauce that helps to cut through the fattiness of the meats.

Beef Tartare by Jimmy's Table
If you know me, you know I love my beef tartare. It's something about raw beef that gets me excited, and whenever I see this on a menu, I always order it. This is one of my favorite dishes to eat when dining out. Making this dish is much easier than it looks. My version is a bit elevated with more ingredients to give it more layers. I hope you like it!
Ingredients 食材:
10-16 ounces of raw beef tenderloin or sirloin (沙朗)
2 tablespoons of finely minced shallots (生紅蔥頭)
3 tablespoons of fried shallots (炸紅蔥頭)
1 tablespoon of capers (酸豆)
2 tablespoons of Whole grain mustard (顆粒芥末醬)
2 tablespoons of Dijon mustard (傳統芥末醬)
1 tablespoon of Horseradish (optional) (西洋山葵)
2 tablespoons of Sriracha chili sauce (是拉差香甜辣椒醬)
2 tablespoons of Balsamic vinegar (巴薩米克醋)
2 tablespoons of Extra virgin olive oil (橄欖油)
Black pepper - for taste (黑胡椒)
Salt - for taste (鹽)
Finishing Ingredients 撒料調味:
Arugula (芝麻葉)
Balsamic vinegar (巴薩米克醋)
Extra virgin olive oil (橄欖油)
Parmesan cheese (帕瑪森起司)
Crackers (saltines or wheat crisps) or toasted french bread slices (薄脆餅乾or法國吐司)
Raw egg (yoke only) (生蛋黃)
STEP 1
Prepare the beef for cutting. If the beef is already frozen, then let it defrost a little. If the beef is already defrosted, put the beef in the freezer for 15-20 minutes so that the meat freezes a little and is hard to easily slice. If the beef is too soft (aka defrosted all the way), then it will be really hard to cut the beef into fine slices, strips and cubes. By the time you finish making the dish, the beef will be perfectly cold to eat.

STEP 4
Add in 2 tablespoons of Extra virgin olive oil, 2 tablespoons of Balsamic vinegar, 2 tablespoons of Sriracha chili sauce and 1 tablespoon of capers. Add 1/2 teaspoon of sea salt and black pepper. Finally mix everything together evenly.

STEP 5
For plating, start with a bowl of arugula leaves. Add in balsamic vinegar and olive oil. Grind a bit of black pepper for taste.

Drain and lay arugula salad onto plate. Use a metal ring (optional) and lay on top of the salad. Fill in the ring with beef tartare until it is full. Press down on the top to flatten the top. Remove metal ring.

Carefully crack an egg and separate the egg white and egg yoke. Carefully place the egg yoke on top of the beef tartare.

Shred some parmesan cheese on top. Grind a bit of black pepper for taste and plating. Place a spoonful of whole grain mustard on the plate and add a few crackers to the side.

Tom Yum Fried Chicken by Jimmy’s Table
I love making fried chicken. I love eating fried chicken. I was craving fried chicken while making Thai food and thought, "why not make a Thai style fried chicken?" Rachel and I loved eating fried chicken off the streets of Bangkok, so I decided to give it a shot. This was my first attempt and it was a success, as I stuck to the basics of marinating and deep frying. For this recipe, I marinated the chicken in Tom Yum paste to give it that sweet, sour and spicy flavor. It worked perfectly as the meat absorbed all the flavors and the crispy skin and batter on the outside gave it the tasty deep fried crunch. I hope you enjoy this recipe!
Ingredients 食材:
Marinade ingredients:
Tom Yum Paste (sold in a jar at City Super) (冬蔭功醬)
1 cup of hot water (熱水)
Main ingredient:
Chicken drumsticks and thighs(雞腿肉)
Deep frying ingredients:
3 cups of white flour (麵粉)
3 tablespoons of garlic powder (蒜粉)
1 tablespoon of ground black pepper (黑胡椒)
1 tablespoon of Cayenne powder or chili powder (辣椒粉)
2 tablespoons of onion powder (洋蔥粉)
1 tablespoon of white pepper (白胡椒)
3 teaspoons of salt (鹽巴)
1 cup of milk (牛奶)
1 tablespoon of white vinegar (白醋)
Peanut oil for deep frying (花生油)
Finishing Ingredients:
Thai Sauce Ingredients (食材):

1/4 cup Fish Sauce (魚露)
1/4 cup Vinegar (白醋)
1/4 cup Sugar (糖)
1/4 cup Garlic (大蒜) - minced
2 Spicy Red Chilis (小辣椒) - minced
3 Limes (檸檬) - halved and squeezed for juice, seeds removed
Toppings:
1/4 cup deep fried shallots (炸紅蔥頭)
1/4 cup deep fried garlic (炸大蒜)
STEP 1
Make marinade. Add in 4-5 tablespoons of Tom Yum Paste into a bowl. Because the paste is thick, slowly add in boiling hot water to dissolve the paste into a thicker fluid. If you add too much, it will get too watery and reduce the flavor of the paste. Stir until even.

Add and coat the marinaded chicken into the milk vinegar mix. Then remove and place the chicken into the deep fry flour mix. Coat generously and evenly so the entire chicken is covered in the flour mix.

Carefully add the chicken into the hot oil. Be careful as the oil can pop and burn you. Lower the heat so that you can slowly fry the chicken without burning the outside. If your pot is big enough, you can deep fry more than one drumstick at a time.

Deep fry for about 10 minutes and then measure the meat temperature. If the chicken is over 80 degrees Celcius, then remove and rest on some paper towels to absorb the oils. If you don’t have a thermometer, use a chopstick and stick it in the thickest part of the meat. If the chopstick goes in and out easily, then it is ready.
