Model utama:
Nasi putih tanak letak daun pandan simpul. Khasiat banyak tauuu.
Gulai Ayam:
~bawang bombay - 4 labu
~bawang putih - 5 ulas
~halia - 1 inci setengah
~rempah kari daging - 3 sudu
~rempah kerutub - 1 sudu
~Kacang panjang - potong
~Terung potong kecik2
~Leher ayam, kaki ayam, sayap dan paha dipotong2 kecil.
~Santan (jgn pekat sgt)
~ Garam dan kiub ayam
~ 1 kerek nisan
Cara-Caranya
1. Blend bawang merah putih halia & lengkuas hingga lumat dan tumis sampai wangi.
2. Rempah kari & rempah kerutub bancuh dgn air dan gaul pada ayam. Perap sekejap.
3. Kemudian masukkan kedalam bahan2 yg ditumis tadi. Masukkan ayam dan masak ayam empuk. Masukkan santan. Masak sehingga mendidih dan kuahnya sedikit pekat. Masukkan terung dan kacang panjang.
4. Masuk garam, gula nisan dan serbuk kiub ayam. Masak sekejap.
Ayam Goreng Harum:
~1 ekor Ayam - potong kecik2
~Garam- 2 sudu kecik
~kunyit hidup - 2 inci tumbuk lumat
~serbuk kunyit - 1 sudu kecik
~serbuk cili - 1 sudu kecik
~*Daun kari 3 tangkai

Cara2nya
1) Ayam basuh bersih dan toskan.
2) Potong kecik. Lumurkan ayam dgn bahan2 diatas dan perapkan sekejap.
3) Goreng ayam dlm minyak terendam sampai sederhana garing.
Sambal Belacan Ala Kak Wok:-
4 biji cili kering - direbus
Cili padi ikut pedas
2 inci belacan
1 labu bawang besar dibakar

The ways
1. Blend of garlic garlic & Galangal until it's squish and stir-fry until it smells good.
2. Spice Curry & Spice Spice Mix with water and gaul on the chicken. Marinated for a while.
3. Then put in the ingredients that were sauteed just now. Put in chicken and cook soft chicken. Put in coconut milk. Cooking until boiling and the soup is a little thick. Insert Eggplant and long beans.
4. In Salt, Nisan and chicken cubes powder. Cooking for a while.

Recipe - 1kg Chicken wings or boneless thighs pieces. 6 tbs honey mustard sauce, 1/2 tbs ground cumin, 1 tsp salt and 2 tbs olive oil. Marinate for 30 mins and bake for 30 mins at 180C, turn them over half way through, then turn the oven to grill and grill for 10mins until the skin looking crispy. Something quick and easy to cook in the oven as at home I normally prefer to prepare something simple. The taste is really good with that cumin flavour.

Ingredients:
Chicken thighs ------------- 500 g
Minced garlic --------------- 3 Cloves

Tapioca starch ------------- 2.5 Tbsp

Preparation:
1. Marinate the chicken thighs with minced garlic, minced ginger, Japanese soy sauce, sake, sugar and black pepper for 20 minutes.
2. Mix the marinated chicken with egg and tapioca starch.
3. Deep fry the chicken up to 80% well done and remove from heat.
4. Turn up the oil temperature and do the second deep fry for better results.

Tips: As the video shown, there are 2 types of coating for the chicken karaage. One of them is as described above. Another one to coat the marinated chicken with tapioca starch one more time just before the 1st deep fry. The skin will be more crispy.

材料:-
雞腿肉(切塊)........500g
蒜蓉......................3瓣
雞蛋......................1隻
木薯粉..................2.5湯匙
日式醬油...............2湯匙
清酒......................1.5湯匙
薑蓉......................1.5茶匙
糖..........................1/2茶匙
黑胡椒碎...............1/2茶匙
做法:-
1. 雞腿肉切塊,加入蒜蓉、薑蓉、醬油、清酒、糖、黑胡椒碎拌勻,醃味20分鐘。
2. 將已醃入味之雞塊加入雞蛋和木薯粉拌勻,放入熱油鍋內炸至八成熟拿出;然後調高油溫,放入雞塊複炸至金黃便可。
小貼士:-
如果想有較脆口的麵衣,可以將雞塊在放入熱油鍋之前,再沾上一些木薯粉,然後用同樣方法去炸便可。

I love making fried chicken. I love eating fried chicken. I was craving fried chicken while making Thai food and thought, "why not make a Thai style fried chicken?" Rachel and I loved eating fried chicken off the streets of Bangkok, so I decided to give it a shot. This was my first attempt and it was a success, as I stuck to the basics of marinating and deep frying. For this recipe, I marinated the chicken in Tom Yum paste to give it that sweet, sour and spicy flavor. It worked perfectly as the meat absorbed all the flavors and the crispy skin and batter on the outside gave it the tasty deep fried crunch. I hope you enjoy this recipe!
Ingredients 食材:
Marinade ingredients:
Tom Yum Paste (sold in a jar at City Super) (冬蔭功醬)
1 cup of hot water (熱水)
Main ingredient:
Chicken drumsticks and thighs(雞腿肉)
Deep frying ingredients:
3 cups of white flour (麵粉)
3 tablespoons of garlic powder (蒜粉)
1 tablespoon of ground black pepper (黑胡椒)
1 tablespoon of Cayenne powder or chili powder (辣椒粉)
2 tablespoons of onion powder (洋蔥粉)
1 tablespoon of white pepper (白胡椒)
3 teaspoons of salt (鹽巴)
1 cup of milk (牛奶)
1 tablespoon of white vinegar (白醋)
Peanut oil for deep frying (花生油)
Finishing Ingredients:
Thai Sauce Ingredients (食材):

1/4 cup Fish Sauce (魚露)
1/4 cup Vinegar (白醋)
1/4 cup Sugar (糖)
1/4 cup Garlic (大蒜) - minced
2 Spicy Red Chilis (小辣椒) - minced
3 Limes (檸檬) - halved and squeezed for juice, seeds removed
Toppings:
1/4 cup deep fried shallots (炸紅蔥頭)
1/4 cup deep fried garlic (炸大蒜)
STEP 1
Make marinade. Add in 4-5 tablespoons of Tom Yum Paste into a bowl. Because the paste is thick, slowly add in boiling hot water to dissolve the paste into a thicker fluid. If you add too much, it will get too watery and reduce the flavor of the paste. Stir until even.

Add and coat the marinaded chicken into the milk vinegar mix. Then remove and place the chicken into the deep fry flour mix. Coat generously and evenly so the entire chicken is covered in the flour mix.

Deep fry for about 10 minutes and then measure the meat temperature. If the chicken is over 80 degrees Celcius, then remove and rest on some paper towels to absorb the oils. If you don’t have a thermometer, use a chopstick and stick it in the thickest part of the meat. If the chopstick goes in and out easily, then it is ready.

氣炸鍋雞脾:
材料:
急凍雞脾2隻
處理:
1. 雞脾用清水解凍,10分鐘後倒去水分。
2. 用鹽乸15分鐘,除去雪味、腥味,及加入鹹味。
3. 5分鐘後,沖洗乾淨。
4. 用廚紙索乾。
5. 用叉在雞脾上拮窿,令其更易入味。
6. 加入:
a. 五香粉1/2茶匙
b. 生抽1茶匙
c. 胡椒粉少許
醃15~20分鐘
烹調:
1. 氣炸鍋用200度預熱3分鐘。
2. 加入黑椒碎提香。
3. 加入1/2湯匙生粉撈勻。
4. 放氣炸鍋紙入氣炸鍋。
5. 第1轉,放雞脾肉向上,用200度氣炸8分鐘。
6. 反轉雞脾,氣炸另一面,用200度氣炸10分鐘。
7. 完成,上碟。
Airfrying chicken thighs:
Ingredients:
Frozen chicken 2 Nos.

Preparation:
1. Defrost chicken thighs legs with tap water for 10 minutes. Then pour away water.
2. Season chicken thighs with cooking salt for 15 minutes to remove unpleasant smells, tastes and add some salty taste to thighs.
3. Rinse thoroughly after 5 minutes.
4. Dry thighs with kitchen towel.
5. Pinch chicken thighs with a fork in order to make them more tasty.
6. Season thighs with:
a. five spice 1/2 tsp
powder
b. light soya 1 tsp
sauce
c. pepper little
for 15~20 minutes.
Steps:
1. Preheat airfryer at 200 C for 3 minutes.
2. Add black pepper to enrich flavour.
3. Mix 1/2 tbsp tapioca starch with thighs well.
4. Put airfrying paper in airfryer.
5. Airfry at 200 C for 8 minutes in first round. Face the skin side down.
6. Flip over thighs, airfry at 200 C for 10 minutes.
7. Complete. Serve.
