Appreciating the leisure I have to make breakfast for my family before I leave. Inspired by Hotel Okura’s french toast recipe, which the breads are soaked for 24 hours (at least 12 hours; flip side every 8 hours), pan fry the bread until both sides are brown, then bake in the oven at low heat for approx 5-10 mins! 😋

【聖誕輕鬆煮: 簡易法式火雞料理 🇫🇷】
藝人黃芷晴 (Adrian) 為準備聖誕大餐,找來法國菜烹飪導師 Rene 以 city'super 英國有機火雞,炮製出充滿法式風味的簡易火雞料理。趕快收藏以下食譜,為聖誕派對作好準備!

#材料:
▫ 英國冰鮮有機火雞 1隻
.
#餡料:
▫ 免治豬肉 500克
▫ 方包 500克 (浸於牛奶內10分鐘)
▫ 牛奶 1-2杯
▫ 雞蛋 2隻
▫ 迷迭香、百里香、芫荽
▫ 蘑菇 250克 (切粒)
▫ 洋蔥 1個 (切粒)
▫ 蒜頭
▫ 紅椒粉
▫ 鹽及黑椒

#配菜:
▫ 薯仔
▫ 車厘茄
▫ 法國豆
▫ 迷迭香、百里香、芫荽
▫ 紅蔥頭
▫ 牛油

#火雞醬﹕
▫ 波特酒 1杯
▫ 鵝肝 100克
▫ 火雞肉汁 (入焗爐後備用)

#步驟﹕
1. 每2公斤的火雞須放置雪櫃24小時解凍
2. 將餡料材料放入攪拌器內打碎並釀入火雞
3. 於火雞表面塗上牛油,以鹽和黑椒調味
4. 將火雞及切片洋蔥等放進焗爐 (不需要預熱焗爐)
160°C 30分鐘 > 180°C 2小時 > 170°C 1小時
5. 烤焗後將火雞閒置30分鐘
6. 從托盤上取出肉汁,去除油分
7. 將肉汁轉至小鍋,加入波特酒,以小火加熱10分鐘
8. 加入鵝肝,以攪拌器攪勻

1. 馬鈴薯以橄欖油及牛油煎香
2. 車厘茄加入糖、橄欖油、鹽及胡椒調味
3. 法國豆煮10分鐘,置於冰水備用
4. 將配菜加入火雞擺盤

【Carefree Christmas Recipe: Easy steps for French-style Turkey 🇫🇷】

📌 Ingredients:
▫ UK Daylesford Chilled Organic Turkey 1pc
.
📌 For stuffing:
▫ Minced pork 500g
▫ Bread 500g (soak into milk for 10 mins)
▫ Milk 1-2 glasses
▫ Whole eggs 2pcs
▫ Fresh rosemary, thyme, parsley
▫ Mushrooms 250g (cut into small pieces)
▫ Onion 1 (cut into small pieces)
▫ Garlic
▫ Paprika
▫ Salt & pepper

📌 For garnish:
▫ Baby potatoes
▫ Cherry tomatoes
▫ French Beans
▫ Fresh rosemary, thyme, parsley
▫ Butter
.
📌 For the turkey sauce:
▫ Port 1 glass
▫ Foie gras 100g
▫ Juice from baked turkey
.
📌 Steps:
1. Put it in refrigerator for 24 hours for every 2kg of turkey to thaw
2. Blend all stuffing ingredients and stuff turkey.
3. Butter the turkey and season with salt and pepper.
4. Bake the turkey and slice onion, starting with cold oven:
160°C for 30 mins > 180°C for 2 hours > 170°C for 1 hour
5. Leave the turkey to rest, covered with foil for 30 mins.
6. Pour the fat off the juices from the roasting tin.
7. Add to the pan, then add port wine and boil for 10 mins in low heat.
8. Add foie gras and blend together.

📌 The Garnishes:
1. Pan-fry potatoes with olive oil and butter.
2. Tomatoes with sugar, olive oil and salt and pepper.
(bake in oven at 140°C for 10-15 mins).
3. French beans poached for 10 mins, then immersed in ice water.
4. Keep garnish for the presentation when turkey ready.

【材料】
卵液
・全卵 2個
・グラニュー糖oきび砂糖 30g
・牛乳or豆乳 120g
・生クリーム 30g
・ラム酒 10g
・バニラオイルorラム酒 適量
・お好みのパン 食パンなら2枚くらい
・バター 適量
・粉糖、メープルシロップ、バター 仕上げにお好みで
【作り方】
1. 卵液の材料をよく混ぜ(最初に卵のこしをきるようにしっかりと)、お好みでパンの耳を落としたり半分にカットする
2. レンジ可の容器にパンを入れ卵液を注ぐ(パンがバットにぴったりめのサイズなら1/2~2/3くらいの高さ)
3. 500~600wのレンジで裏表を返しつつ20~30秒ずつ、卵液を吸うまで加熱する(冷蔵庫で1日浸してもOK)
4. フライパンにバターを溶かし、中火くらいで焼き目がつくまで両面焼き、粉糖やメープルシロップをかけて出来上がり

[Ingredients]
egg fluid
・Two whole eggs.
・Granulated sugar and cane sugar 30 g
・Milk or soy milk 120 g
・Heavy cream 30 g
・Rum 10 g
・a few drops of vanilla oil
・If using your favorite bread, use about 2 slices.
・Butter, to taste
・Powdered sugar, maple syrup, or butter.
[How to make]
1. Mix the ingredients for the egg mixture well (cut the stringy part of the egg first). Remove the crust or cut it in half if you'd like.
2. Put the bread in a microwaveable container and pour in the egg mixture (about 1/2 to 2/3 if the bread is the perfect size for a tray).
3.Turn over both sides in a 500 ~ 600 w microwave and heat it for 20 to 30 seconds at a time until the egg mixture absorbs (it is OK to soak it in the fridge for 1 day).
4. Melt the butter in the pan and cook both sides until it browns on medium-heat. Add powdered sugar and maple syrup and it will be complete.

Given our racial proportion, one would have imagined that our coffeeshops or foodcourts only have Chinese, Malay or Indian food but no matter what, there will always be one stall selling what we term affectionately as Western food. In case you're wondering how a Western food stall looks like in Singapore, just google it and there are plenty of images out there. Interestingly, the Western food we get at coffeeshops or foodcourts are usually marinated in Chinese style. :)) We grow up eating this type of Western food and we love it! My favourite order at a Western food stall is always chicken chop. Roland's favourite is mixed grill because he likes variety. What's yours?
