COUSCOUS SALAD IN A MUG
Ingredients:
- 1/3 cup Couscous
- 1/3 cup Vegetable Stock or Water
- ¼ cup Cucumber, diced
- ¼ cup Red Bell Pepper, diced
- ¼ cup Cherry Tomatoes, halved
- 1 tbsp. Olives, halved
- 1 tbsp. Spring Onions, chopped

Sauce:
- 1 tbsp. Lemon Juice
- 1 tsp. Olive Oil
- 1 tsp. Maple Syrup
Per mug – 161Cals
.
Steps:
- Heat vegetable stock in microwave for 1.5 mins.
- In a mug, add couscous and vegetable stock. Leave couscous to soak for 5 mins.
- While waiting for couscous, mix lemon juice, olive oil and maple syrup into a small bowl.
- Add all the vegetables and sauce. Mix well and enjoy! 😋

RICE NOODLE SALAD IN A MUG
Ingredients:
- 3oz (85g) Rice Noodles
- ¼ cup Carrots, shredded
- ¼ cup Red Cabbage, shredded
- ¼ cup Red Bell Pepper, shredded
- ¼ cup Japanese Cucumber, shredded

Sauce:
- ½ tbsp. Rice vinegar
- ½ tbsp. Soy Sauce
- 1 tsp. Sesame Oil
- ½ tsp. Sesame Seeds
Per mug – 183.5Cals
.
Steps:
- In a mug, add rice noodles and water. Microwave for 1.5 mins.
- In a small bowl, mix rice vinegar, soy sauce, sesame oil and sesame seeds.
- Strain noodles, add all the vegetables and the sauce into the mug. Mix well and enjoy! 😋

Steamed Rice Cake (Gluten Free / Vegan)
Difficulty: Very Easy
Time: 20min
Number of servings: about 5 thick foil cupcake liners (about 3-inch-wide)
Ingredients:
100g (about 2/3 UScup) rice flour
2 tbsp. granulated sugar
1 tsp. baking powder
100ml (about 1/2 UScup) soy milk
2 tbsp. cooking oil
a few drops of vanilla extract
Directions:
1. Put rice flour, granulated sugar and baking powder in a bowl, and mix with a whisk.
2. Add soy milk, cooking oil and vanilla extract, and mix well.
3. Spoon the mixture into the thick foil cupcake liners up to 80% full. Drop them lightly on the counter to raise the air bubbles out of the batter.
4. Place them in a frying pan. Add hot water up to 1/3 of the height. Put on high heat until water boils. Turn the heat down to medium, cover with a lid wrapped in a wet cloth to absorb water and prevent the water from dripping onto the cakes, and cook for 10 minutes.
5. Remove the lid carefully. Place the cakes on a wire rack to cool.
*Keep the water boiling while steaming to make fluffy cakes.
*Depending on the shape of the cups you use, your cake may crack, but it is OK!

Crisp outside and slightly chewy inside, just like Takoyaki. Very easy to make with ingredients on hand without a special pan.
Fillings are optional. You can mix in green onions, Beni Shōga (red pickled ginger), etc...

Potato Takoyaki without a special pan (Easy Quick Recipe)
Difficulty: VERY Easy
Time: 30min
Number of servings: 12 pieces
Ingredients:
400g (14oz.) potato
4 tbsp. Katakuriko (potato starch) or corn starch
1/2 tsp. salt
cooking oil
((toppings))
* Takoyaki sauce or Okonomiyaki sauce
* mayonnaise
* Katsuobushi (bonito flakes)
* Aonori (green laver)
Okonomiyaki Sauce from scratch:
2 tbsp. Worcestershire sauce + 2 tbsp. ketchup + 1 tsp. honey (or sugar)
Directions:
1. Peel and cut potatoes into chunks, wash, and boil them on medium until soft (insert a skewer to check if they are done). Drain and mash them while hot. You can also microwave potatoes for 8 minutes to cook.
2. Mix in salt and Katakuriko (potato starch) or corn starch.
3. Roll into about 12 balls. You can put the fillings if you like but not necessary.
4. Heat about 0.1 inch oil in a frying pan, then roll around to cook. More sides you cook, rounder the balls become.
5. Serve on a dish, and top with sauce, mayonnaise, Katsuobushi, and Aonori.
