認識健康油脂食物
有些女生為了減肥,視油脂為大敵,自煮時不添加油份,外出進食亦「走油」,以為這種飲食方法很健康,但久久未能成孕,最後發現原來因為飲食中缺少了油脂!膽固醇是合成多種荷爾蒙的重要原料,如果油脂攝取不足容易影響荷爾蒙分泌,造成不孕,所以不應盲目「走油」,宜認識哪些為健康油脂適量攝取,哪些壞油應該避免食用,市面上見到的油脂各有優缺點,最好是在家中常備2至3種油脂,每星期輪流使用或按烹調方式選擇。
飽和脂肪酸:室溫時呈白色固體狀態,常見於豬油、牛油、動物性脂肪、芝士、忌廉、椰子油、棕櫚油等。
優點:化學性質穩定,不易氧化變質。
缺點:過量進食較容易患上血管硬化、中風、心臟病等疾病風險。
適合用法:高溫且長時間烹煮的菜式
單元不飽和脂肪:室溫時呈液體狀態,常見於橄欖油、苦茶油、花生油、堅果、牛油果。
優點:含有Omega-9,有助提高好膽固醇及降低壞膽固醇。
缺點:化學性質不穩定,容易受高溫影響產生氧化。
適合用法:涼拌、低溫快炒
多元不飽和脂肪:室溫時呈液體狀態,常見於粟米油、芝麻油、葵花油、亞麻籽油、菜籽油、大豆油、核桃油、三文魚、沙甸魚等。
優點:含有人體無法自製的Omega-3及Omega-6,同時提高好膽固醇及降低壞膽固醇。
缺點:化學性質不穩定,容易受高溫影響產生氧化。
適合用法:一般煎炒菜式
反式脂肪:植物油經過氫化程序會轉化成反式脂肪,常見於人造牛油、起酥油(Shortening)。
優點:沒有
缺點:令血液中的壞膽固醇上升,同時降低好膽固醇,過量進食有增加患上血管硬化、中風、心臟病等疾病風險。
常見含反式脂肪食物:蛋撻、曲奇餅、酥皮食物、蛋糕、餅乾、椰絲奶油包、炸薯條、炸雞、菠蘿油、油炸鬼、奶精

Get to know healthy high-fat foods
Some women view fats as their archnemesis when they wish to shed some pounds. They would either avoid using oil in their cooking or request restaurants to remove additional fats when ordering take-outs. They thought this is a healthy dietary practice, but the lack of fats in the body is one of the main reasons they cannot get pregnant!
In fact, cholesterol is the precursor of many hormones. The lack of fats in the body would affect the secretion of hormones, leading to infertility. We should learn more about healthy fats, consume them in an appropriate quantity, and avoid fats that are bad for us. There are many types of fats and oils in the market, and each of them has their own pros and cons. It is best to prepare 2 to 3 different types of oils and use them interchangeably in cooking from time to time.
Saturated fatty acids: in white solid state at room temperature; can be found in lard, butter, animal fats, cheese, cream, coconut oil, and palm oil
Pros: chemically stable, not easily oxidized
Cons: excessive consumption can cause the hardening of the arteries (vascular sclerosis), stroke, and heart diseases
Proper way of use: dishes to be cooked at high temperature and for a long period
Monounsaturated fatty acids: liquid at room temperature; often seen in olive oil, camellia seed oil, peanut oil, nuts, and avocado
Pros: contains Omega-9; can help increase the good cholesterols and reduce the bad cholesterol
Cons: chemically unstable, oxidized easily when exposed to high temperature
Proper way of use: cold dishes, and can be used for frying at low temperature
Polyunsaturated fatty acids: liquid at room temperature, commonly found in corn oil, sesame oil, sunflower oil, linseed oil, rapeseed oil, soybean oil, walnut oil, salmon, and sardine
Pros: contains Omega-3 and Omega-6, which humans could not produce; can help increase the good cholesterols and reduce the bad cholesterol
Cons: chemically unstable, oxidized easily when exposed to high temperature
Proper way of use: normal pan-fried dishes
Trans-fatty acids: vegetable oils that have gone through hydrogenation; often seen in margarine and shortening
Pros: none
Cons: increase the bad cholesterol and reduce the good cholesterol in the blood; excessive consumption can cause the hardening of the arteries (vascular sclerosis), stroke, and heart diseases
Common foods that contain trans-fatty acids: Egg tart, cookies, puff pastries, cakes, biscuits, coconut cream bun, fried chicken, pineapple bun, Chinese fried dough and creamer

最近比較忙,到現在才補發月初在我愛店,米其林推介,吃一年一度特製的秋刀魚釜飯。
今年秋刀魚的質量真的偏弱,雖然我提前一個月訂位時已提出要秋刀釜飯,但直到吃飯前一週渡邊料理長才跟我確認能做。最終飯出來的效果跟去年還是有差。去年吃過兩次,10月的剛好油份適中肉肥美,11月的已過油了。今年到11月初季末吃時魚還是偏瘦,油份不太夠滲透到飯裡面,還好香気魚味還是足夠。
其他菜沒話說,包括招牌目光魚依然好吃。海膽飽魚飯加飽魚肝汁飯好吃到要再加飯。
I have been too busy lately and only now I can finally find time to share this post commenting on the Pacific Saury (Sanma) clay pot rice at I eat at one of my favourite Japanese restaurants, Michelin Plate, in Taipei.
Sanma quality this year is one of the weakest in recent years. Even though I already tried to pre-order this dish a month before the meal, Head Chef Watanabe San have been denying my request until only a week before confirming to me that quality of the fish improved to a level he accepts to take my request. Compare to 2018 which I had this course twice, in October the fish was just right and the fish oil was already sufficient to penetrate into the rice already, while November was too oily making the rice too fat. This year even during season end in November the fish is still quite lean and oil is not enough to cover the rice ending up a tad too dry. Luckily the nose and palate of the fish was good enough.
Including their grilled green eyed fish, other dishes are consistently satisfying. The uni with abalone rice mixed with sauce made by abalone liver was sublimed.

※衣は片栗粉でもOK
※本しめじじゃなくてもお好みのきのこでも美味しいよ♪

今回は最近ハマりにハマってる本しめじのやみつき唐揚げを作りました。
漬ける時間も油や衣の準備をしているくらいの時間で大丈夫だし
揚げ時間も凄く短いので5分くらいで出来てめちゃくちゃ良いんです♪
(今回は揚げ物用の鍋で作ってますが
フライパンで揚げ焼きで作ればもっとお手軽だと思います)
いつも片栗粉で作ってる方やお弁当のおかずに作ろうと思っている方は
小麦粉プラスコーンスターチの衣をぜひ試してみてね!
ビールのおつまみやご飯のおかずには勿論ですが
クセがないキノコなのでお子さんもきっと喜んでくれると思うし
糖質制限をされている方にも薄衣なのでオススメですよ♪
サクッとジューシーな本しめじのやみつき唐揚げ
とっても簡単なので是非一度作ってみて下さい。
めちゃくちゃハマりますよ♪
ただ思っていた以上にペロリと食べれちゃうので
少し多めに作ることをオススメします!!
今回はさすがに少なすぎました(^◇^;)w
[Ingredients]
● Hon Shimeji mushrooms: 5
● Soy sauce: 1 tablespoon
● Mirin: 1 tablespoon
● Grated ginger
● Grated garlic
● Wheat flour: 2 tablespoons
● Cornstarch: 2 tablespoons
● Rice oil (regular oil will work too, but it will help reduce oil absorption ♪)
※ You can also use potato starch for the batter.
※ You can use any mushrooms you like, not just Hon Shimeji mushrooms ♪

This time I made the addictive Hon Shimeji mushrooms Karaage that I
have been addicted to lately.
You only need to soak them for as long as it takes to prepare the oil
and batter, and the frying time is very short, so you can do it in
about 5 minutes, which is really good ♪
(I used a deep-fat frying pan this time, but I think it would be even
easier if you use a frying pan for deep-frying.)
If you've always used potato starch, or if you're thinking of making
it for a side dish for lunch, you should definitely try the flour plus
cornstarch batter!
It's a great snack for beer or a side dish for rice, but I'm sure your
kids will love it too, since it's a mushroom with no peculiarities,
and it's also a good choice for people on a carbohydrate restriction
diet since it's a thin batter ♪
Deep-fried crispy and juicy shimeji mushrooms are addictive.
It is very easy to make, so please try making it at least once.
You'll be hooked ♪

美味しい半熟卵の作り方
●『絶品とろ~り半熟煮玉子』

【材料】(保存期間:冷凍で2週間)
●豚バラブロック:1.3kg
●長ねぎの青い部分:2本
●生しょうが:1片
●お酒:200ml(下処理用)
●黒コショウホール(下処理用)あればでOK
●お酒:200ml
●醤油:100ml
●みりん:50ml
●ざらめ:大さじ3~4(普通の砂糖でも十分美味しいよ)
●あごだし(4倍濃縮):大さじ1(入れると味の深みとコクが全然違うよ)
お好みで
●和がらし、山椒、柚子七味
※冷ました後は豚の油が白くなって取りやすくなるので
更にあっさりさせたい方は取って下さいね。

今までいろんな角煮を食べてきましたが
この世界一大好きなとろける豚の角煮を食べてからは
お店で食べる角煮でも満足できなくなるくらい…。本当に美味しいです。
豚、魚の出汁、玉ねぎの旨みで作られた絶品タレが染み込んだ豚肉は
極上のコクと旨みで一口食べた瞬間、とっても幸せな気持ちになります。
丁寧に下処理しているので豚の臭みも余分な脂も取り除かれているので
ご飯三合もペロリでしたw
出来上がりを食べるのも本当に本当に美味しいですが
次の日の更に味が染み込んだ豚肉と半熟煮卵も言葉にならない美味しさです。
是非一度作ってみて下さい。
Ingredients (Up to 2 weeks when frozen)
●1.3kg Pork belly
●2 stems of Japanese leek (the green part only)
●1 Ginger
●200ml Sake (for boiling)
●Some black pepper grains (for boiling) if you have any
●200ml Sake
●100ml Soy Sauce
●50ml Sweet Cooking Wine
●3-4 Tablespoon Granulated Sugar (Can be enjoyed with normal sugar as well)
●1 Tablespoon Flying Fish Broth (Gives a richer taste)
To your liking
●Japanese Mustard, Japanese chilli, Yuzu chilli
* After you let it chill, the pork fat will be white and solid, so please remove that if you prefer a non-rich version

but after trying this world’s best pork belly, that melts in your mouth
you won’t be satisfied with the ones at restaurants...It’s that good.
The pork belly braised in the rich sauce of pork, fish broth, umami from onions
has a richness and umami that makes you extremely happy after one bite.
Because of the preparation process, you won’t feel the smell or the excess fat
and we finished 3 cups of rice, easily.

Thai Basil Pork by Jimmy’s Table
This is my 3rd cooking video with my version of the Thai basil pork (aka Pad Kra Pai aka 打拋豬). It's a must have dish when making Thai food at home. It’s so simple, yet flavorful, and goes so well over rice. I love it spicy, but remove the chilis and kids love this over rice!
Ingredients 食材:
Main Ingredients 主食:
1 kg ground pork, around 70% lean and 30% fatty is a good ratio (The meat can be substituted with ground chicken or ground beef) 70%瘦肉 30%肥肉,亦可改成使用雞肉或牛肉來料理
0.5 kg cherry tomatoes (小番茄)- cut in half
1.5 cups basil (九層塔)- leaves only
3 cups white Thai rice (泰國米)
Sauce Ingredients 醬料:
2 tbsp - oil (油)
1/2 cup - garlic (大蒜)- minced
2 tbsp - cooking wine (米酒、黃酒)
3 tbsp - fish sauce (魚露)
2 tbsp - sugar (糖)
1 tsp - black pepper (黑胡椒)
1 tsp - garlic powder (大蒜粉)
3 tbsp - soy sauce (醬油)
3 lime (檸檬)- halved and squeezed for juice, seeds removed
2 spicy red chilis (小辣椒)- minced
Finishing Ingredients 撒料調味:
1 fried, sunny-side up egg (太陽蛋)
1/4 cup deep fried shallots (炸紅蔥頭)
1/4 cup deep fried garlic (炸大蒜)
Slice of lime for taste (檸檬汁 )
Black pepper (黑胡椒)
Steps:
Before starting, make white rice at the start, because this dish cooks fairly fast. If you want to enhance the rice, you can mix in a 1/2 cup of coconut milk and a 1/2 teaspoon of salt before cooking the rice for extra fragrance.
開始之前. 在一開始可以先煮米飯, 因為這一道菜打拋豬肉很快就可以完成了。如果希望能夠增加米飯的香味,建議可以額外使用1/2杯椰奶跟1/2茶匙鹽巴。
1. Wash the cherry tomatoes and cut in half. Then halved the lemons and squeezed for juice, seeds removed. I prefer a 40/60 ration of cherry tomatoes to pork.
步驟1. 將小番茄洗淨對切,備用。將檸檬的汁擠出,備用。我比較喜歡 番茄40:豬絞肉60的比例來做這道料理。
2. Start by preparing and mincing the pork. Typically minced pork at grocery stores are between 50% lean and 50% fat. I like my ground pork at a leaner 70/30 or 80/20 ratio, but when I am trying to eat healthy, I go for an almost all lean pork for a much healthier version. If the ground pork is too fatty, then add in lean pork and mince together. Sometimes the butcher or grocery store can prepare to your ratio.
步驟2. 首先,先準備豬絞肉。一般市面上可買到的豬肉, 大部分都是50%瘦肉50%肥肉,但是我較喜歡以瘦肉70:肥肉30或者瘦肉80:肥肉20的比例。但當我想吃得比較健康的時候,我會選擇瘦肉的絞肉。若是你買到的豬絞肉太多油質,可以加入一些瘦的豬肉,剁碎混合在一起。有些肉販會提供你選擇豬肉瘦肥比例喔!
3. Add in minced garlic to the oil and sauté until slightly brown to flavor the oil, but be careful not to burn them.
步驟3. 將大蒜末先用油稍微的爆香一下,直到呈現棕黃色,但是要小心,不要煎焦了。
4. Add in minced pork and stir until nearly cooked with some pieces still slightly raw and pink, which should be about 5-8 minutes. Add in a bit of cooking wine for fragrance. Use your spatula to stir and break up the larger chunks of ground meat into smaller pieces.
步驟4. 加入切碎的豬肉翻炒,大約需要5-8分鐘才能夠把粉色的生豬肉炒的稍微熟一些。加些酒來幫豬肉調一下味道,且持續用鍋鏟將大塊的碎肉攪拌成小碎肉。
5. Add in fish sauce, soy sauce and sugar. If its too light, add in a bit more fish sauce and soy sauce. If its a bit too salty, add in some water to dilute.
步驟5. 加入魚露、醬油及砂糖。若是味道不夠,可以再加一些魚露跟醬油。若是味道太鹹,可以加入一些水來稀釋。
6. Add in halved, cherry tomatoes cut length-wise, stir in and cook for 3-5 minutes until the tomatoes get soft.
步驟6. 加切成两半的小番茄,煮3-5分钟,直到小番茄变软。
7. Add in lime juice to give it a sour flavor, which also reduces the saltiness. Then add in minced chilies. You can also hold the stem and cut the chilies directly into the wok. To make it more sour or spicier, add in more lime juice or chilies.Add in black pepper and garlic powder for taste.
步驟7. 加入檸檬汁來增加酸味的又感,也可以綜合一下鹹味。接著加入切碎的辣椒。若是想要又味更重一些,可以依照自己的喜好再加入額外的檸檬汁或辣椒。再加入一些黑胡椒調味並且試試味道。
8. Add in basil last towards the end of cooking so that the basil leaves don’t get too cooked, because you want all of the fragrance from the basil.
步驟8. 在關火之後,把九層塔加入到鍋中就可以用於熱來綜合香氣。九層塔不需要烹煮,因為過多的烹煮九層塔會變黑。
9. For plating, pack in white rice and Thai Basil Pork. Toppings include ground black pepper, deep fried garlic, deep fried shallots and a basil leaf and serve.
步驟9. 將白飯跟打拋豬肉裝盤後,可以依個人喜好煎一顆太陽蛋放在最上面。最後撒上一些黑胡椒粉、炸大蒜、炸紅蔥頭、淋上一點檸檬汁,再放上幾片九層塔葉做裝飾,這道菜就完成囉!
