Singaporean cuisine is multi-faceted because of cultural influences. While a majority of Singaporeans are Chinese, we also have Malay, Indian and Eurasian ethnic groups. We've been taught since young to embrace racial diversity and maintain social harmony. This is not only evident in our language - Singlish, which is a variety of English spoken in Singapore, incorporating elements of Chinese and Malay, but also the food that we eat. Spicy food is rather common in Singapore so when Sichuan cuisine is brought over to our shore, they immediately became a hit. Almost all the coffeeshops or foodcourts in Singapore these days have at least one stall selling Sichuan food. Sichuan (Szechuan or sometimes spelt as Schezwan) food has a unique bold and lip-numbing spiciness in most of their dishes because of the liberal use of garlic, Sichuan peppercorns and other spices. One of their most popular dishes is this Spicy Fish Hot Pot or Chong Qing Grilled Fish. The soup base of this dish is good to go with rice and noodles. You can also add any side ingredients, such as beancurd skin, tofu, mushrooms, prawns, instant ramen noodles, etc to this dish. If you have a party coming up, you can consider serving this over a portable stove and have the side ingredients placed on the side so that your guests can cook while they eat. It's a really nice experience. Just prepare extra stock because we can guarantee you that a top-up is required. If you've never tried this yummy dish before, do give it a go.

Sichuan Spicy Fish Hot Pot (Szechuan Chong Qing Grilled Fish) 重庆烤鱼
Ingredients:

Grilled fish - bake at 200C or 400F for 20 mins

400g fresh fish (you can use sea bass, snapper, etc)
1 teaspoon salt
0.5 teaspoon light soy sauce
1 tablespoon cooking oil
0.5 tablespoon chilli powder

20g young ginger - chopped
5 cloves garlic - chopped
2 tablespoons Sichuan peppercorns
15 dried chilli (rehydrated & cut into small pieces)
2 tablespoons Chinese spicy paste (Xiang La Jiang 香辣酱) can use spicy broad bean paste 豆瓣酱
1.2L water
1 chicken stock cube
1 teaspoon sugar

Chicken Sukiyaki (Torisuki)
Difficulty: Very Easy
Time: 30min
Number of servings: 4
Ingredients
350g (12.5oz.) chicken thigh
200g (7oz.) Yaki-Dofu (grilled tofu)
300g (10.5oz.) Shirataki (translucent Konnyaku noodles)
4 shiitake mushrooms *you can also add Enoki, Shimeji, Maitake, etc...
4 long green onions
1 carrot
200g (7oz.) Shungiku (garland chrysanthemum) *Watercress can be a substitute
cooking oil
Warishita (Sukiyaki sauce seasonings)
* 100ml Kombu broth (or water)
* 100ml Sake
* 100ml Mirin (sweet Sake)
* 100ml soy sauce
* 4 tbsp. sugar
udon noodles if desired
fresh raw eggs if desired
Directions:
1. Lightly sprinkle the chicken with Sake, salt and pepper and leave for 5 minutes to remove the bad smell. Cut yaki-dofu into bite sized pieces. Boil shirataki 2-3 minutes in order to remove dirt. Remove stems and cut shiitake mushrooms in half. Chop long green onions into 7cm (2.5inches) pieces. Slice carrot with peeler as much as you want. Separate shungiku leaves and stalks, cut leaves into bite-sized pieces and cut stalks diagonally.
2. Heat cooking oil in the pot and cook the long onions and skin-side of chicken until crisp golden (long onion gives nice flavor). Chicken doesn’t have to be cooked thoroughly because it is going to be simmered later. Slice the chicken into bite-size pieces.
3. In the same pot, put vegetables, chicken, and Warishita (Sukiyaki sauce) and simmer on medium for about 10 min until everything is done.
4. If desired, dip sukiyaki into beaten fresh raw eggs to eat!
You can either cook Sukiyaki at the table or in the kitchen and eat at the table on a portable stove.
You can add udon if desired. It goes great with Sukiyaki!
The next day, you can simmer the leftover broth with beaten eggs and make rice bowls. yummy!!!

In this video, I will show you how to enjoy Yakiniku indoors :D
Last week, I won a package of beef at the recipe contest. And along with the beef, I received a letter with some tips to enjoy Yakiniku indoors and I never knew them! So, I will share those tips with you!!!
Yakiniku is mostly beef but you can make it with chicken or pork or meat of your choice ;)
BTW, in Japan at home, we usually use electrical barbecue called "hot plate " to cook Yakiniku at table. I really envy those who have barbecue set at home! We don't have that big yard in Japan, you know... And sadly, from this April, our closest BBQ spot is going to close because of the littering problem.

Yakiniku Indoors (Japanese Grilled Meat / BBQ)
Difficulty: Very Easy
Time: 10min
Number of servings: n/a
Ingredients:
beef or meat of your choice
soy sauce + wasabi (in tube or freshly grated)
ponzu sauce (citrus-flavored soy sauce: you can mix 1 tbsp. soy sauce and 1 tbsp. lemon juice to make it)
Tips:
1. Color of the Meat:
Pink, red, brown, or etc... what color of the meat is the best?
To answer this question, it is difficult to tell which is better until you eat them. So just ask the butcher and trust them. hehe
2. The best way to cook Yakiniku:
Make sure you let the meat get back into room temperature before you cook. You will see the surface of the meat shining with its own juice and grease when it's ready. Then you don't have to turn the heat down to low to cook and you won't lose any good flavor! That is why outdoor barbecue is always good (because your meat is at room temperature). Of course it is the best if you have BBQ grill set at home, but if you don't, you can use a grill pan, cast-iron skillet, or fryingg pan on the stove, because the key is the meat temperature! It is the same for Sukiyaki, Shabu-Shabu, steaks, etc...
3. The best way to eat Yakiniku:
Don't forget to season the meat with salt and pepper before you cook. That definitely brings out the flavor of the meat. For the sauce, wasabi soy sauce or ponzu sauce is the best! Simple yet delicious! You have to try it out.
*Grill the meat until it's done to your taste!
