First attempt at Japanese Dan Dan noodles. The taste was just fine but silly me, bought the wrong sesame paste, so the soup doesnt look thick and a little separated. But other than that, this noodle is surprisingly easy to make. I googled for the recipe. You can easily find them online. Its worth a try. Took only 20mins!
Broth
1 1/2 tbsp White Sesame Paste
1 tbsp Soy Sauce
1 tsp Vinegar
1 tbsp Sichuan Chili Oil
150 ml Chicken Stock
100 ml Soy Milk
Meat Mixture (serves 2)
Vegetable Oil
100 g Ground Pork
1 tsp Garlic Cloves chopped
1 tsp Ginger Root chopped
1/2 tbsp Tian Mian Jiang sweet bean sauce
1/2 tbsp Soy Sauce
Toppings
1/4 head Bok Choy
Sesame Oil
Sichuan Chili Oil

Five Stars Restaurant 五星冷气餐厅 is probably around for more than 20 years... it has been there since I was still studying primary school. It was one of the cool Chu-Char places due to its comfortable dining environment (fully air-conditioned) which was not common a couple decades ago. Fast-forward today, the place is still welcoming a steady crowd of regular patrons returning for their homey Chinese stir fry dishes. The wide variety of choices and inexpensive price points are some of the reasons why this place is still doing good today. But don't expect the place to have flashy interior decor or bewitching setting... just a casual-local family restaurant that offers dishes that are familiar to us.

Preparation:
1. Heat up a frying pan, add some oil. Stir fry with pork slices and leek to enhance flavors.
2. Add Korean soy sauce, minced garlic and minced ginger and Korean fine chili powder.
3. Stir fry with cabbage and onion. Then add 600 ml of water and bring to boil.
4. Add carrot, prawns, abalone and mussels until almost fully cooked.
5. Seasoning with oyster sauce, salt and sugar.
6. Add shiitake mushrooms, green pak choy, squids and ground black pepper.
7. Put the cooked noodles into a noodle bowl. Add seafood and soup to finish.
Enjoy.
韓式炒碼麵 Korean Spicy Seafood Noodles 짬뽕
材料A:
水...............................600ml
豬梅肉片(切絲).........120g
藍青口........................8隻
蝦...............................4隻
鮑魚(鎅花).................2隻
魷魚(切細).................1隻
鮮冬菇........................2隻
小棠菜........................2棵
韭菜(切段) ................2棵
椰菜/高麗菜(切塊).....3片
大蔥(切細).................1棵
洋蔥(切絲).................1/2個
甘荀(切片) ................1/4個
材料B:
蒜蓉...........................5瓣
韓國幼辣椒粉...........1.5湯匙
韓國醬油...................1/2湯匙
薑蓉..........................1/2茶匙
調味料:
蠔油.......................... 1/2湯匙
鹽.............................. 1茶匙
糖.............................. 1/2茶匙
黑胡椒粉................... 1/4茶匙
做法:-
1. 熱油鍋下豬梅肉絲、大蔥爆香成蔥油,然後從鍋邊下材料B之韓國醬油,蒜蓉和薑蓉下鍋炒香,再下韓國幼辣椒粉炒勻。
2. 洋蔥、椰菜/高麗菜下鍋炒勻注入600ml水燒開,把調味料之蠔油、鹽、糖下鍋拌勻。
3. 甘荀、蝦、鮑魚、藍青口下鍋煮至八成熟,然後下鮮冬菇、小棠菜煮開,最後下魷魚燙熟,加入調味料之黑胡椒粉入鍋。
4. 把麵條煮熟放在碗裡,然後加入海鮮湯、韭菜便可。

เส้นใหญ่นำมาผัดกับซอสกุ้งผงกะหรี่ ซึ่งมีความข้นจากส่วนผสมไข่ ปรุงด้วยผงกะหรี่และเครื่องปรุงรสพื้นฐาน เพิ่มสีสัน รสชาติ และความหอมด้วยน้ำพริกเผา
-ซอสผงกะหรี่-
นมข้นจืด 6 ช้อนโต๊ะ / ผงกะหรี่ 3 ช้อนโต๊ะ / ไข่ไก่ 2 ฟอง /
น้ำพริกเผา 1 ช้อนโต๊ะ / น้ำมันพริกเผา 1 ช้อนโต๊ะ / ซีอิ๊วขาว 2 ช้อนชา /
ซอสหอยนางรม 1 ½ ช้อนโต๊ะ / พริกไทยขาวป่น ½ ช้อนชา /
น้ำตาลทราย 1 ½ ช้อนชา
-ก๋วยเตี๋ยวผัด-
น้ำมันรำข้าว 3 ช้อนโต๊ะ / หอมใหญ่ (ซอยหนา) 60 กรัม / กระเทียม (สับ) 2 กลีบ /
เส้นใหญ่ 350 กรัม / กุ้ง 6 ตัว / พริกชี้ฟ้า (ซอย) 1 เม็ด / ต้นหอม (หั่นท่อน) 1 ต้น /
ขึ้นฉ่าย (หั่นท่อน) ½ ต้น
1. เตรียมซอส โดยละลายผงกะหรี่ นมข้นจืด ไข่ไก่ น้ำพริกเผา น้ำมันพริกเผา ซีอิ๊วขาว ซอสหอยนางรม พริกไทยขาว และน้ำตาลทราย เข้าด้วยกัน
2. ตั้งกระทะ ใส่น้ำมันรำข้าว ผัดกุ้งให้สุกดี ตักออกมาพัก ใส่หอมใหญ่ ผัดให้ขึ้นสีเล็กน้อย ใส่กระเทียม ตามด้วยส่วนผสมซอสไข่ ลดไฟอ่อน กรอกไข่ไปมาให้ทั่วกระทะ พอส่วนผสมไข่สุกประมาณ 80% ใส่เส้นใหญ่ลงไป ผัดต่อจนเส้นมีสีสวย ใส่กุ้ง ผัดต่อจนแห้งลง
3. ใส่พริกชี้ฟ้า ต้นหอม และขึ้นฉ่าย เร่งไฟ เคล้าให้เข้ากันดี ตักใส่จานเสิร์ฟ

Flat rice noodles are marvellous in this menu because its chewiness and the wide surface area became a platform for this flavoursome and colourful prawn curry omelet to shine.
-Curry Sauce-
Evaporated Milk 6 tbsp / Curry Powder 3 tbsp / Eggs 2 /
Thai Chilli Jam 1 tbsp / Thai Chilli Oil 1 tbsp / Light Soy Sauce 2 tsp /
Oyster Sauce 1 ½ tbsp / Ground White Pepper ½ tsp / Sugar 1 ½ tsp
-Noodles-
Rice Bran Oil 3 tbsp / Onion (thick sliced) 60 g / Garlic (minced) 2 cloves /
Flat Rice Noodles 350 g / Prawn 6 / Red Chilli (sliced) 1 /
Spring Onion (cut into 3 cm length) 1
Chinese Celery (cut into 3 cm length) ½
1. For the Sauce: mix curry powder, evaporated milk until everything incorporated well. Add remaining ingredients for the sauce and combine.
2. In the pan, cook prawn with oil until just cooked and set aside. Add onion and garlic, cook until onion is translucent before adding the sauce. Tilt the pan around until egg is about to set, add noodles and toss through. When the noodles are lightly brown, add prawn and cook until mixture dried up.
3. Add chilli, spring onion and Chinese celery. Turn the heat up and toss everything together before transfer to a serving plate.

Previously, we made Tantanmen also known as Dandan noodles, and today we are making Tantan Nabe, a hot pot version of tantanmen, in which you can enjoy plenty of vegetables. You can also finish off the delicious Tantan Nabe along with the soup. This is an excellent dish especially in the cold season.
How to Make Tantan Nabe

(serves 2) Cook Time: 30 minutes
- Meat Mixture -
1 tsp Sesame Oil or Vegetable Oil
100g Ground Pork (3.5 oz)
10g Garlic Clove, chopped (0.35 oz)
10g Ginger Root, chopped (0.35 oz)
1 tsp Doubanjiang, chili bean paste
- Soup -
400ml Chicken Stock, follow the instructions of Chinese-style granulated chicken stock powder (1.69 cups)
2 tbsp Miso
1 tbsp White Sesame Paste
1/2 tbsp Soy Sauce
1 tbsp Sake
1/2 tsp Sugar
- Ingredients for Nabe -
1 Long Green Onion (Naganegi), white part
1-2 heads Bok Choy
100g Shiitake Mushrooms (3.5 oz)
100g Shimeji Mushrooms (3.5 oz)
100g Maitake Mushrooms (3.5 oz)
1 bundle Garlic Chives
100g Atsuage, thick deep-fried tofu (3.5 oz)
4 Pork Belly Slices
1 tbsp Ground White Sesame Seeds
1 bag Fresh Ramen Noodles, keep them on the firm side and avoid overcooking, substitute: instant noodles
- For Tantanmen noodles (optional) -
Soy Milk
Sichuan Chili Oil, rayu
* 1 tablespoon (tbsp) = 15 ml, 1 teaspoon (tsp) = 5 ml
