🎄It is never to early for Christmas🎁 The delicious buffet spread of traditional Christmas favorites at @Royale Chulan Penang was wonderful. I was delighted to see the traditional roasted Turkey, golden brown and roasted to perfection, the meat was so juicy. My favorite would be the Beef Stroganoff Pasta and Pumpkin Pie. I could not resist a second helping of each because they were so good. I was already so full that when it was time for desserts, I thought that I wont be able to take any more but the extensive dessert spread had been waiting for me since I walked in so I had to. I have a very sweet tooth. There was so much Christmas desserts like Ginger Christmas Stolen, Yule Log, Pies, Puddings, Sweets and Cakes that the kid in me screaming in delight. It was indeed an early Christmas for us. Try the spread yourself and be delighted! When you’re a mama, sometimes when you’re knee deep in crazy, you wonder why you do what you do and then you see this face! ❤️
With school starting and early mornings again, I was trying to figure out how to help daddy do the morning runs, feed her a nutritious breakfast but still get out the door quickly.
What could I make that I could easily freeze, wouldn’t be full of junk, but also not finicky?
Breakfast sausages!
Actually I came out w a breakfast sandwich, same concept but in patties instead of links and sandwiched between an egg white omelette, cheese, English muffin, the possibilities are endless...but Ella Grace just recently discovered her love of sausages so sausage it is.
What do your kids like for breakfast?
Some of Ella Grace’s other favorites are peanut butter sandwich and banana, oatmeal and fruits, frozen chia seed waffles/pancakes, or hard boiled eggs!
To make your own sausages, just mix up some mince meat (we used turkey today) and spices (onion, herbs, paprika, fennel, garlic, etc), a binder (ground up oatmeal/quinoa flakes/breadcrumbs/crackers etc), an extra egg if you’d like. You can also add in chopped up veggies or fruits for extra yum!
Roll it up in parchment paper or cling wrap and tie off the ends using twine before tying the middle “links” off. Freeze until hard, remove casing, steam and/or pan fry.

イタリア風なすの肉詰め
4人分
材料:
なす 2個
オリーブオイル 大さじ2
塩 少々
コショウ 少々
鶏ひき肉 225g
玉ねぎ(みじん切り) 1個
トマトソース 520g
にんにく(みじん切り)2片
ガーリックパウダー 少々
ピザ用モッツァレラチーズ 100g
パルメザンチーズ 55g
バジル(盛り付け用) 少々
作り方:
1. オーブンを200°Cに予熱する。
2. なすを縦半分に切り、中身をスプーンでくりぬく。
3. くりぬいた部分はみじん切りにする。
4. (1)にオリーブオイルを刷毛で塗り、塩とコショウをかける。
5. オーブンで10-15分焼き、一度取り出す。
6. フライパンにオリーブオイルをひき、中火で熱す。玉ねぎとにんにくを入れて炒める。
7. 玉ねぎが半透明になったらとりひき肉を加え、ガーリックパウダー、塩、コショウで味付けをする。焼き色がつくまで炒める。
8. (3)を加え、なすが柔らかくなるまで 5-8分炒める。
9. トマトソースを入れて3-5分炒める。
10. (9)を(5)に入れ、ピザ用モッツァレラチーズとパルメザンチーズをかける。
11. オーブンで10-15分焼く。チーズが溶けたら取り出す。
12. バジルでトッピングしたら、完成!

Eggplant Parmesan Boats
for 4 servings
Ingredients:
2 medium eggplants
2 tablespoons olive oil
salt, to taste
pepper, to taste
1/2 lb ground turkey(225 g)
1 onion, diced
2 cups marinara sauce(520 g)
2 cloves garlic, minced
1 cup shredded low-fat mozzarella(100 g)
1/2 cup grated parmesan cheese(55 g)
fresh basil, for garnish
Preparation:
1. Preheat oven to 400°F (200°C).
2. Scoop out inside of eggplant leaving about ½-inch (1 cm) border inside.
3. Chop the remaining eggplant and reserve.
4. Brush the scooped out eggplants with olive oil, sprinkle with salt and pepper.
5. Bake for 10-15 minutes.
6. Heat olive oil in medium skillet over medium heat.
7. Add onions and garlic to the pan. Cook until translucent. Add ground turkey and season with garlic powder, salt and pepper. Cook until the meat is browned.
8. Add leftover eggplant pieces to ground turkey and onion. Cook for 5-8 minutes or until tender.
9. Add marinara sauce and cook for another 3-5 minutes.
10. Scoop meat sauce into the eggplants and sprinkle with mozzarella and parmesan.
11. Bake for 10-15 minutes, or until cheese is melted.
12. Sprinkle with basil and serve.
13. Enjoy!

タコス丼
4人分
材料:
鶏ひき肉 455g
赤パプリカ(細切り) 1個
黄パプリカ(細切り) 1個
紫玉ねぎ(細切り) 1個
カットトマト缶 800g
塩 小さじ1
コショウ 少々
タコシーズニング 大さじ1
サラダ油 大さじ2
ご飯 800g
黒豆 120g
コーン缶 120g
サルサソース 120g
チェダーチーズ(細切り) 適量
パクチー 適量
ライム(くし切り) 4切れ
作り方:
1.フライパンにサラダ油を引いて中火に熱し、パプリカ、紫玉ねぎ、塩、コショウを加えて炒める。しんなりしたら皿に取り出す。
2.(1)のフライパンを再び中火に熱し、鶏ひき肉、タコシーズニングを加えて炒め、ひき肉が炒まったらトマト缶を加えて5分ほど水分を飛ばしながら煮る。
3.4つの耐熱容器を用意し、それぞれにご飯を敷き詰める。
4.黒豆、コーン、サルサソース、チェダーチーズ、(1)、(2)を乗せる。
5.パクチー、ライムを添えたら蓋をしめて、完成!(冷蔵庫で2〜3日保管可能。)

Weekday Meal-prep Turkey Taco Bowls
Servings: 4
Ingredients
2 tablespoons oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 large red onion, sliced
1 teaspoon salt
1 teaspoon pepper
1 pound ground turkey
1 1-ounce packet taco seasoning
1 28-ounce can diced tomatoes, drained
2 cups cooked rice
1 can black beans, drained and rinsed
1 can corn
1 jar salsa
1 lime, sliced into wedges
Cheddar cheese
Fresh cilantro, for garnish
Preparation
1. Heat oil in a large skillet over medium-high heat.
2. Add the peppers and onions and season with salt and pepper, to taste. Cook, stirring occasionally, until vegetables have softened. Remove from pan, set aside.
3. Add ground turkey to hot skillet. Break apart with a wooden spoon to separate.
4. Season with taco seasoning, stir, cooking until meat has browned and cooked through.
5. Stir in tomatoes. Bring to a gentle simmer for about 5 minutes. Remove from heat.
6. To assemble the taco bowls, add a base of rice to 4 food storage containers. Top each with a scoop of black beans, corn, salsa, cheddar cheese, cooked peppers and onions, and taco meat. Garnish with fresh cilantro and a lime wedge.
7. Store in the refrigerator (and enjoy any extras immediately). Can be kept refrigerated for up to 4 days.

If you don't like cold noodle, you just don't have to chill the noodle, no need chill the meat sauce. Then you can enjoy it with hot. It's even less time consuming that way.

Each one of country has their own recipe, ingredients, and the style. We enjoy both cold and hot version in Japan.
Ingredients I used (serving 2)
~ Niku miso (meat sauce) ~
: 160g~200g ground pork
: 30g minced green onion
: 3g minced garlic
: 3g minced ginger
: 1 tsp doubanjiang (or sriracha instead)
~ seasoning sauce ~
: 2 tbsp or 40g Tenmenjan
: 100ml chicken stock
: 1 tsp sake
: 1 tsp sugar
: 1 tsp soy sauce
- Tenmenjan substitute -
: 2 tbsp red miso(reduced sodium) + 1 tsp sugar
: 2 tbsp Hoisin sauce (never tried before, so I can't promise)
~ veggy topping ~
: Green onion stips (3 inch white part)
: Cucumber strips (1/2)
