[Recipe] Nothing beats having a comfortable dish like a risotto. And how about bringing it to the next level with abalone? Here, I made an indulgent abalone risotto with chicken broth instead cream which makes it not overly rich. Yet the creamy texture is there thanks to mozzarella cheese. This recipe calls for 2 cans of New Moon Australian Abalone, of which 2/3 goes into the rice. By sautéing the remaining 1 whole abalone with butter, you get to enjoy this risotto in varying textures. No salt is added here because the chicken broth contains salt.

Creamy Abalone Risotto
Ingredients (serves 3-4)
Risotto
2 Tb New Moon Cooking Oil
1 New Moon Premium Chicken Broth (400ml)
250g cooked rice ( I use New Moon Jasmine Fragrant Rice)
1 New Moon Australian Abalone (drained weight 120g), sliced
1 Yellow Onion, diced
4pcs whole Mili Champignons ( 1 can has 8pcs - use half and save the rest for stir-fry vegetables), sliced
3 stalk English Parsley, minced
75g Mozzarella Cheese
Black Pepper

Butter Grilled Abalone:
15g butter
2Tb mirin
1Tb sugar
1 Tb New Moon Abalone Sauce
1 New Moon Australian Abalone (120g)

Steps:
Sauté diced onion, followed by sliced champignons mushrooms and abalone in a saucepan
Add chicken broth and simmer on low heat.
Stir in cooked rice. Continue stirring until the broth has been absorbed by the rice.
Add in cheese. Stir till creamy.
Toss in minced parsley. Season with black pepper.
In another non-stick pan, melt butter and grill abalone on both sides. Add in mirin, sugar and abalone sauce. Cook till sauce thickens.
Assemble: place grilled abalone on the rice. drizzle the sauce and garnish with English parsley.

[Recipe] Easy Matcha Coconut Chestnut Kueh Pudding 抹茶椰子布丁粿 🍵 🌴

Not sure if you have tried Kuih Tako- a Thai two-layer dessert comprising of coconut milk and pandan served in a squarish pandan leaf box. It is typically filled with water chestnuts which brings about a refreshing crunchiness.

Here I am giving it a spin by using Japanese green tea instead of Pandan—not only saving the time for extracting Pandan juice but the bittersweet tea taste also makes it less cloying. Texture wise, it falls between a pudding and a Kueh. For the water chestnuts, I use Milli water chestnuts which makes preparation more convenient without compromising on the quality. No sugar is added to the coconut milk layer, but feel free to add them if you like it sweeter. You can also make this in glasses besides jelly mold

Ingredients (makes 16 jellies) :
Set A Coconut layer:
200ml Kara low fat coconut milk
100ml low fat milk
25g mung bean flour
1/4 tsp salt

Set B Matcha Layer:
5pcs Milli Water Chestnuts
10g matcha
25g mung bean flour
35g sugar
250ml water

Steps:
Combine Set A ingredients in a pot and stir well. Heat and whisk till thicken. Pour into jelly molds, filling them only halfway.
Cut water chestnuts into dices and fill them on the cooled coconut layer
Combine Set B ingredients in a pot and stir well. Heat and whisk till thicken. Pour into the jelly molds to fill as the remaining half.
Chill in fridge for 3-4 hours. Unmold and serve

The finger shaped Danish is 'Sukuna's Danish Cornet'. It's whipped cream cornet. The finger is Sukuna's finger. Sukuna is Curse King who is sealed now. He will be back in full force when he get back his all fingers.
