今天晚上就是耶誕夜了～～🤶🏽🧑🏻‍🎄🎅🏼
去年耶誕夜的時候，大家時不時就在呼喚的弦樂四重奏終於一起在街頭合體演出，今年耶誕夜按照往例（？）一樣是弦樂四重奏夥伴們一起來玩cover！

今年因為疫情大家都悶悶不樂，台北這個月也是雨不停讓大家鬱悶程度加倍，在聖誕氣氛最棒的12月，特別製作這個cover，希望大家都可以開開心心迎接2021年！

去年在發耶誕cover的時候完全沒有想到即將到來的2020是現在這種模樣。
但是今年經歷了疫情，最大的體悟是：即使沒有過節的習慣，即使深知這些節日已經過度商業化，也還是希望保有生活儀式感，記得自己是有愛人的能力也值得被愛，健康真好🥰

Its Christmas Eve tonight🤶🏽🧑🏻‍🎄🎅🏼On Christmas Eve last year, my lovely string quartet partners finally busked together, and this year we come here together at my channel to cover the Christmas carol.

We are all a bit down because of the pandemic this year, and what makes me sad is the endless rain in Taipei. But hey this is the month of Christmas. So I made this cover, trying to cheer up those who feel the same.

When making the cover for Christmas last year, I think we all had no idea of how miserable our 2020 would be. However, after experiencing all these shitty things this year, I kind of realize that even you don’t feel like celebrating holidays at all, or even you know clearly that these are all commercial and have been overly commercialized, it's still quite meaningful to have the celebrating rituals somehow, so as to appreciate tiny little things in life, to appreciate our abilities to love others and to be loved🥰

About a week ago, I saw a family receiving help from a charity. The volunteer gave them secondhand clothes and a pair of shoes to a little girl. Her father thanked the volunteer while the little girl looked so happy and jumped around in her new shoes. It deeply touched me. How fortunate I am to live in the comfort of my home without needing to worry about food or clothes on these cold winter days. It also reminded me of my childhood.

大概一個星期前，我看到某戶人家獲得慈善機構的協助。志工提供他們二手衣物，並將一雙鞋子送給了一位小女孩。小女孩的父親看見自己的女兒洋溢著幸福的笑容，連忙向志工道謝，一旁的小女孩則穿起鞋子手舞足蹈。這樣的畫面，深深觸動了我。現在的我無疑是幸運的，無須挨餓受凍，卻不禁使我想起自己的童年。

(Last but not least, I must shout out that its soooooooo good living in Taiwan where we struck a nerve for reported the first domestic case in 253 days (from April 12). Though the awesome record was broken few days ago, it does not change the fact that Taiwan is incredibly great.)

冬至大過年（支竹豬手煲）：

材料：
急凍豬手1隻
支竹4支

處理：
1. 支竹，清水浸軟。
2. 豬手，連包裝袋用清水解凍。
3. 大火煲滾1鑊水。
4. 放豬手，出水10分鐘。
5. 支竹已浸軟，剪好長度。
6. 豬手已出水，沖洗乾淨，擎乾水。
7. 預備好煲仔。

烹調：
1. 放豬手入煲仔。
2. 加入：
a. 黑椒醬3湯匙
b. 雞汁1湯匙
c. 冰糖1大粒
3. 加入清水蓋過豬手面，大火煲滾。
4. 滾起後，轉慢火，炆40分鐘。
5. 豬手炆了20分鐘，小心反轉，再炆20分鐘。
6. 炆了40分鐘，還未炆透，用筷子戮一戮，令它更入味，再炆多10分鐘。
7. 過了10分鐘，在豬手的兩邊加入支竹，再加入少量清水（約100毫升），冚蓋，中慢火，再炆10分鐘。
8. 炆了10分鐘，可加入少量生粉芡收汁。
9. 反轉豬手，熄火。
10. 完成，可享用。

Braised pork knuckle with bean curd:

Ingredients:
Frozen pork knuckle 1 No.
Bean curd 4 slices

Preparation:
1. Bean curd, soften in tap water.
2. Pork knuckle, defrost with plastics in tap water.
3. Heat up a wok of water at high flame.
4. Soak pork knuckle for 10 minutes.
5. Bean curd has been softened, cut in lengths.
6. Pork knuckle has been soaked well. Rinse thoroughly and hang dry.
7. Prepare a pot.

Steps:
1. Put pork knuckle in pot.
2. Add:
a. Black pepper sauce 3 tbsp
b. Chicken sauce 1 tbsp
c. Rock sugar 1 big cube
3. Put water just covering up the pork, heat up at high flame.
4. Turn to low flame after water has been boiled up, braise for 40 minutes.
5. Pork knuckle has been braised for 20 minutes, flip it over carefully. Braise for another 20 minutes.
6. Have already been braised for 40 minutes, it has not been braised well. Use a pair of chopsticks pinching it through in order to make the pork more tasty. Braise for 10 minutes more.
7. Ten minutes later, put bean curd on both sides of the pork knuckle, add little water (about 100ml) . Cover up the pot, braise at medium ~low flame for 10 minutes more.
8. Have already been braised for 10 minutes, put little tapioca sauce to make the sauce thick.
9. Flip over the pork knuckle, turn off fire.
10. Complete. Serve.

盆菜2020

材料：
李錦記蠔皇元貝頂級鮑魚1罐
白切雞半隻
叉燒1斤
豬皮半斤
魚蛋8粒
蘿蔔（大）1個
冬菇8隻
西蘭花（大）1個

處理：
1. 蘿蔔，刨去表皮，洗乾淨，切一舊舊。
2. 豬皮，清洗乾淨，切開一塊塊。
3. 西蘭花，切開一舊舊，盡量切至大小一樣，用粗鹽放水中浸一浸。
4. 煲滾一鑊水，加入粗鹽1茶匙，加入蘿蔔及豬皮，滾起後，再放魚蛋灼一灼。
5. 西蘭花，已用鹽水浸了一會，清水沖洗乾淨。
6. 蘿蔔及豬皮，已灼了一會，再加入魚蛋灼一灼，擎乾水，清水沖洗乾淨，再擎乾水。
7. 打開罐裝鮑魚，逐隻夾起放在碟上。
8. 罐內的鮑魚汁倒在碗中備用。

烹調：
1. 冬菇，白鑊，大火爆香，同時加入蘿蔔及豬皮。
2. 在鑊中加入水250毫升，再加入一半鮑魚罐內的汁及0冰糖1大粒，大火滾起，轉中火，炆10分鐘。
3. 炆了10分鐘，已收汁，加入魚蛋，撈勻，放上碟。
4. 另一邊，中火煲滾一鑊水，加入油1湯匙，放西蘭花灼2分鐘，擎乾水。

預備好瓦煲，內放一個合適的蒸餸架，戴上透明膠手套，依次序放好：
1. 先放蘿蔔。
2. 放白切雞及叉燒。
3. 豬皮，放在白切雞及叉燒中間。
4. 魚蛋，放在豬皮側邊。
5. 西蘭花3朶，放豬皮的另一邊
6. 冬菇放西蘭花，近瓦煲邊。
7. 剩下少許瑤柱絲，都放在材料上。
8. 剩下的西蘭花，沿瓦煲的另一邊，整齊的放好。

鮑魚的烹調程序：
1. 鮑魚罐內的汁加入鑊中，加入一倍份量的水，大火煮滾。
2. 放鮑魚熱一熱。
3. 放鮑魚在盆菜上面，小心排列好。
4. 鑊中的鮑魚芡汁，淋在盆菜上。

盆菜，大火煲滾，完成，可享用。

Poon choi 2020

Ingredients:
Lee Kum Kee Premium Abalone in Premium Oyster Sauce with Dried Scallops 1 can
Steamed chicken half No.
Roasted pork 1 catty
Pigskin 0.5 catty
Fish balls 8 Nos.
White radish (large) 1 No.
Mushrooms 8 Nos.
Broccoli (large) 1 No.

Preparation:
1. White radish, get it peeled. Rinse, and cut into pieces.
2. Pigskin, rinse and cut into pieces.
3. Broccoli, cut them about in the same size. Soak in salty water.
4. Boil up a wok of water. Put cooking salt 1 tsp. Put white radish and pigskin.
5. Broccoli, has been soaked in salty water for a while, rinse thoroughly.
6. White radish and pigskin, have been soaked for a while, put fish balls soaking for a while. Hang dry. Rinse with tap water. Hang dry again.
7. Open the can of abalone, put on plate one by one.
8. Syrup in can, is to be put in a bowl to get ready for use.

Steps:
1. Mushrooms, fry with no oil at high flame in wok. Fry with white radish and pigskin at the same time.
2. Put water 250ml, and half can of sauce with rock sugar 1 big cube into wok. Heat up at high flame, turn to medium flame after boils up. Braise for 10 minutes.
3. Have already braised for 10 minutes, sauce has become thick. Mix well with fish balls. Put on plate.
4. On the other side, heat up a wok of water at medium flame. Put oil 1 tbsp, put broccoli soaking for 2 minutes. Hang dry.

Get ready for a pot, put a steaming rack which can be fitted in the pot. Put on transparent gloves, put the following in order:
1. Put white radish first.
2. Put chicken and roasted pork.
3. Pigskin, put in between the chicken and roasted pork.
4. Fish balls, put besides the pigskin.
5. Broccoli 3 Nos., put on the other side of pigskin.
6. Mushrooms, to be put besides the broccoli alongside the pot.
7. Little shredded dried scallops left, put on top of the ingredients.
8. Little broccoli left, to be put in order on the other side of the pot.

Preparation steps of abalone:
1. Heat up the abalone sauce in can with a can of tap water at high flame in wok.
2. Heat abalone in wok for a while.
3. Put abalone in good order on top of poon choi.
4. The sauce in wok is to be put on top of poon choi.

Poon choi, heat up at high flame. Complete. Serve.
