辣醬燒雞翅
材料
A
雞翅 12支 chicken wings 12pcs
B
鹽 1/2茶匙 salt 1/2tsp.
米酒 2大匙 cooking rice wine 2tsp.
紅椒粉 2大匙 paprika 2tbsp.
香蒜粉 2茶匙 garlic powder 2tsp.
薑粉 2茶匙 ginger powder 2tsp.
C
水 100ml water 100ml
米酒 3大匙 cooking rice wine 3tbsp.
醬油 2大匙 soy sauce 2tbsp.
韓式辣醬 60公克 Korean hot pepper paste 60g
作法
1. 雞翅切開,在肉厚處劃刀。
2. 雞翅加入材料B抓勻,醃漬約20分鐘。
3. 熱鍋,倒入約1茶匙油,放入雞翅煎至表面焦香上色。
4. 再加入材料C煮至滾沸,蓋上鍋蓋以中火燒煮約10分鐘入味。
5. 打開鍋蓋,將雞翅翻面再燒至醬汁略收乾即可。

1) 鹽酥雞
材料:
雞胸肉塊 350公克/ chicken breast 350g
地瓜粉 適量/tapioca starch q.s.
蒜末 30公克/ garlic 30g
九層塔 15公克/ basil leaves 15g
醃料:
香蒜粉 1茶匙/ garlic powder 1tsp.
五香粉 1/2茶匙/ Chinese five spices 1/2tsp.
鹽 1/2茶匙/salt 1/2tsp.
醬油 1茶匙/soy sauce 1tsp.
米酒 1大匙/ cooking rice wine 1tbsp.
作法:
1. 雞胸肉塊與所有醃料混合拌勻,靜置醃漬30分鐘。
2. 醃漬好的雞胸肉塊表面均勻沾上地瓜粉,靜置5分鐘反潮。
3. 氣炸鍋炸籃噴上油,擺上雞胸肉塊。
4. 設定220℃、15分鐘。炸至時間結束。
5. 打開,加入蒜末、和胡椒鹽、九層塔,噴上適量油,再用220℃炸2分鐘即可。(噴油再炸九層塔更香)
2) 美式炸雞翅
材料:
雞翅 4支/ chicken wings 4 pcs
醃料:
香蒜粉 1茶匙/ garlic powder 1tsp.
洋蔥粉 1茶匙/ onion powder 1tsp.
辣椒粉 1/2茶匙/chili powder 1/2tsp.
黑胡椒粉 1/2茶匙/ black pepper powder 1/2tsp.
鹽 1/2茶匙/salt 1/2tsp.
細砂糖 1茶匙/sugar 1tsp.
玉米粉 1大匙/ corn starch 1tbsp.
橄欖油 1大匙/olive oil 1tbsp.
醬汁材料:
奶油 30公克/butter 30g
Red Hot sauce 75公克/ Red Hot sauce 75g
Tabasco 1/2茶匙/Tabasco 1/2tsp.
梅林辣醬油 2茶匙/worcester sauce 2tsp.
細砂糖 1/2大匙/sugar 1/2tbsp.
作法:
1. 雞翅與所有醃料混合拌勻,靜置醃漬30分鐘。
2. 氣炸鍋內鍋裝上攪拌螺旋槳,擺上雞翅,再蓋上鍋蓋。
3. 設定模式6、22分鐘,炸至時間結束。
4. 開蓋加入醬汁材料,再自訂行程設定220℃、5分鐘,將醬汁拌炒均勻即可。
3) 韓式炸雞
材料:
大雞腿(切塊) 2支/ chicken thigh 2 pcs
地瓜粉 適量/tapioca starch q.s.
蒜末 20公克/garlic 20g
熟白芝麻 適量/ white sesame 1大匙
韓式炸雞醬 100公克/Korean chicken sauce 100g
醃料:
香蒜粉 1茶匙/ garlic powder 1tsp.
洋蔥粉 1茶匙/ onion powder 1tsp.
鹽 1/2茶匙/salt 1/2tsp.
糖 1茶匙/sugar 1tsp.
白胡椒粉 1茶匙/white pepper powder 1tsp.
米酒 1茶匙/cooking rice wine 1tsp.
作法:
1. 雞腿塊與所有醃料混合拌勻,靜置醃漬30分鐘。
2. 醃漬好的雞腿肉塊表面均勻沾上地瓜粉,靜置5分鐘反潮。
3. 氣炸鍋內鍋擺上雞肉塊,再蓋上鍋蓋。
4. 設定160℃、20分鐘,炸約20分鐘後稍微挪動一下雞塊的位置,炸得更均勻。(也可以不要解釋挪動位置)
5. 炸至時間結束後開蓋,裝上攪拌槳,設定220℃、12分鐘。
6. 剩下2分鐘時開蓋加入醬汁材料,繼續將醬汁拌炒均勻即可。
4) 檸檬炸雞柳
材料:
雞里肌 8條/ chicken fillet 8
地瓜粉 適量/tapioca starch q.s.
醃料:
檸檬皮屑 1茶匙/ lemon zest 1tsp.
香蒜粉 1茶匙/ garlic powder 1tsp.
細砂糖 1/2茶匙/sugar 1/2tsp.
米酒 1大匙/cooking rice wine 1tbsp.
鹽 1/2茶匙/salt 1/2tsp.
調味料:
柚子醬 2大匙/ Korean honey citron jam 2tbsp.
檸檬汁 1大匙/lemon juice 1tbsp.
作法:
1. 雞里肌與所有醃料混合拌勻,靜置20分鐘醃漬。
2. 醃漬好的雞里肌表面均勻沾上地瓜粉,靜置5分鐘反潮。
3. 氣炸鍋炸籃噴上油,擺上雞里肌。
4. 設定220℃、25分鐘。炸至時間結束。
5. 打開,加入所有調味料,再用220℃炸2分鐘即可。(炸好再裹醬粉不易脫落)
