Happy Monday! Time to spam some bento box tutorial again! Yesterday I made some creamy chicken avocado salad. I've also demonstrate an easy way to peel and cut avocado without using a chopping board (be careful not to cut your hands if you are a newbie). It's great to be eaten as a cold salad dish or as a wrap filling.
1. Place salt and garlic in a large pot covered to water and bring to a boil. Add chicken and reduce heat to low. Cook for 15 min until chicken is cooked. Let chicken rest for 5 min. I use half a breast.
2. Shred the chicken into small pieces.
3. Peel an avocado and cut into cubes. I use half an avocado.
4. Mix the avocado with shredded chicken. Season with lemon juice, salt, pepper, fresh cilantro; 1 tbsp mayo and 1 tbsp Greek yogurt.
5. Paprika powder is optional.
