CÁNH GÀ TRÀ HUN KHÓI - TEA-SMOKED CHICKEN WINGS
ƯỚP CÁNH GÀ - MARINATED CHICKEN
- 10 cặp cánh gà - 10 pairs chicken wings
- 2 muỗng súp gừng - 2 tbsp ginger
- 3 muỗng súp tỏi - 3 tbsp garlic
- 2 muỗng súp mật ong - 2 tbsp honey
- 2 muỗng súp dầu hào - 2 tbsp oyster sauce
- 4 muỗng súp rượu trắng - 4 tbsp wine rice
- 3 muỗng súp nước tương - 3 tbsp soy sauce
- 1/2 muỗng súp hắc xì dầu - 1/2 tbsp dark soy sauce
THÀNH PHẦN HUN KHÓI - TEA-SMOKED INGREDIENTS
- 100 gr gạo - 100 gr rice
- 80 gr trà lài - 80 gr jasmine tea
- 60 gr đường vàng - 60 gram brown sugar
THỰC HIỆN
- Trộn đều tất cả các thành phần ướp cánh gà. Cho vào ngăn mát tủ lạnh ướp khoảng 4 tiếng.
- Lót 1 lớp giấy bạc dưới chảo và cho các thành phần hun khói vào trộn đều. Sử dụng 1 vỉ nướng giống như clip để cách với lớp hun khói.
- Sau đó, xếp cánh gà vào và đậy kín chảo bằng 1 tấm giấy bạc.
- Nấu ở lửa nhỏ 30 phút, sau đó tắt bếp và giữ yên giấy bạc trong 20 phút để hun khói.
- Ăn kèm với tương ớt, tương cà hoặc tương mận
METHOD
- Marinate all ingredients of marinated chicken. Refrigerate for up to 4 hours
- Put aluminium foil below of pan or pot then put all tea-smoke ingredients. Take equipment same video clip put in then arrange all chicken wings.
- Low heat 30 mins then turn off heat and keep aluminium foil for 20 mins.

材料:
鶏むね肉 1枚
ブロッコリー 50g
片栗粉 大さじ2
サラダ油 大さじ2
Aマヨネーズ 大さじ1
A 酒 小さじ2
Aしょうゆ 小さじ2
Aおろししょうが 1片分
Aおろしにんにく 1片
Bマヨネーズ 大さじ2
Bケチャップ 大さじ1
Bオリーブオイル 小さじ2
B砂糖 小さじ2
B酢 小さじ1
B塩 少々
Bコショウ 少々
作り方:
1. 鶏むね肉は一口大に切る。ブロッコリーは小房に分ける。
2. ボールにAを全て入れ、1の鶏肉を加えて揉み込んだら、30分漬ける。
3. 漬けた鶏肉はキッチンペーパーで水分をしっかり取り、片栗粉をまぶす。
4. フライパンに油を熱して3を入れ、中火で片面にしっかり焼き色がついたらひっくり返してブロッコリーを加え、2分程度(鶏肉の裏面もしっかり焼き色がつくまで)炒めながら焼く。
5. ボールに Bを全て入れて混ぜ合わせたら4を加えてソースをサッと絡める。器に盛ってボールに残ったソースを上からかけたら、完成!

Chicken n Broccoli with Japanese Mayo Sauce
Servings: 2
INGREDIENTS
1 chicken breast
50g broccoli florets
2 tablespoons potato starch
2 tablespoons vegetable oil
A
1 tablespoon mayonnaise
2 teaspoons sake
2 teaspoons soy sauce
1 piece grated ginger
1 clove grated garlic
B
2 tablespoons mayonaise
1 tablespoon ketchup
2 teaspoons olive oil
2 teaspoons sugar
1 teaspoon vineger
Some salt and pepper
PREPARATION
1. Cut the chicken into bite-size pieces. Break broccoli into small pieces.
2. Mix all ingredients A (including grated ginger n garlic) in a bowl. Marinate chicken pieces in the bowl for 30 minutes.
3. Pat-dry the chicken with paper towels. Coat with potato starch.
4. Heat vegetable oil in a pan. Cook the chicken pieces over medium heat until golden. Turn the chicken, add broccoli. Stir-fry for about 2 minutes. (Make sure both sides of chicken are cooked.)
5. Mix all ingredients B in a bowl. Put chicken and broccoli (4) into the bowl and coat with the sauce. Transfer to a plate and pour the sauce over the chicken.
6. Enjoy!

玉ねぎ(1cmくし形切り)1/2個
溶き卵 1個分
片栗粉 適量
揚げ油 適量
(A)
しょうゆ 大さじ1
みりん 大さじ1
酒 大さじ1
ごま油 小さじ1
おろしにんにく 小さじ1/2
(B)
ケチャップ 大さじ4
砂糖 大さじ3
コチュジャン 大さじ1
酒 大さじ1
モッツァレラチーズ(細切り) 適量
白ごま(仕上げ)少々
作り方:
1.トックは水につけてやわらかくしておく。
2.鶏もも肉を一口大に切って袋に入れ、(A) を加えてよく揉んだら10分ほど冷蔵庫に入れて、味をなじませる。
3.ボウルに(2) と溶き卵を入れてよく混ぜ、片栗粉をまぶして、170℃に熱した揚げ油できつね色になるまで揚げる。
4.小鍋に湯をわかし、(1) を好みの固さに茹でる。玉ねぎも加えてさっと火を通し、それぞれ水気をよく切る。
5.フライパンに(B)を入れて中火にかけ、煮たったら(3)、(4)を入れて全体を絡めながら炒める。
6.モッツァレラチーズを加えて、全体をざっと混ぜる。チーズが溶けたら白ごまを振って、完成!

INGREDIENTS
1 Chicken thigh (around 250g)
100g Tteok (Korean rice cakes)
1/2 Onion
1 Beaten egg
Potato starch
Frying oil
(A)
1 tablespoon Soy sauce
1 tablespoon Mirin
1 tablespoon Sake
1 teaspoon Sesame oil
1/2 teaspoon Grated garlic
(B)
4 tbsp Ketchup
3 tablespoons Sugar
1 tablespoon Gochujang
1 tablespoon Sake
Mozzarella cheese (shredded)
White sesame seeds
PREPARATION
1. Soak the tteok in water to keep it soft.
2. Cut chicken thighs into bite-sized pieces, put them in a bag, add (A), knead well, and put them in the refrigerator for about 10 minutes to marinate.
3. Put (2) and beaten egg in a bowl, mix well, sprinkle with potato starch, and fry in oil heated to 170 ℃ until golden brown.
4. Boil water in a small pot and boil (1) to the desired hardness. Add onions and cook quickly, once cooked drain the water.
5. Put (B) in a frying pan and heat it over medium heat. When it starts boiling add (3) and (4) and cook while mixing.
6. Add mozzarella cheese and mix thoroughly. When the cheese melts, sprinkle the white sesame seeds and you're done!
7. Enjoy!

This Thai Style Mango Crispy Chicken is not exactly what you'll find in Thailand but we can assure you that it's really yummy. Remember to make the sauce and the salad really cold before spreading them over the air fried crispy chicken then serve. This crispy chicken recipe is really yummy and very easy to prepare. If you do not have an airfryer, you can also deep-fry the chicken as usual over the stove. You can also try baking the chicken in an oven. You can use the same temperature but adjust the baking time accordingly. If you're using an oven, remember to preheat the oven for at least 20 mins before baking.

Air Fried Thai Style Mango Crispy Chicken
ingredients
Serve 2 - 3 pax

Marinated chicken - marinate for at least 30 minutes
————
1 boneless chicken thigh (~220g)
1 teaspoon salt
A few dashes of white pepper
1 tablespoon ginger juice
1/2 egg white
1 tablespoon cornflour
Before you airfry the chicken, coat it generously with some cornflour.
Rest it for 10 minutes first then brush or spray some oil on the chicken before you air fry it.
Air fry the chicken at 180C (356F) for 20 minutes first. Then flip the chicken to the other side and air fry for another 20 minutes at 200C (392F).
Once the chicken is done, rest it for a while before cutting it up. This will help to lock the juice of the chicken.

1.5 tablespoons tomato ketchup
1 tablespoon sweet chilli sauce
1/4 salt
1 tablespoon vinegar or apple cider
1 red chilli (deseeded and julienned)
1/4 Japanese cucumber (deseeded and julienned) You can also use regular cucumber.
1/2 green or ripe mango (julienned)
