Part 2/2 - KIDO'S Chef 木村潤一郎さん, is 2ndly famous for his Nanban Chicken 南蛮チキン. Because his family was 1 of 2 Kitchens 発祥の店 officially credited for creating it at おぐら, 宮崎市 Miyazaki, back in 1956 昭和 31年, before the 2nd sister shop in 1965 started mass selling it. Since I am at it, I guess I should point out 4 points I often noticed 😜:

•Nanban, 南蛮 refers to non Asian foreigners who first entered Japan in the mid 1550's 👱🏻🚢. Term initially referred to barbarian strangers into 🗾🇯🇵
•'Nanban' therefore is a Western Yoshoku 洋食 Concept. Apparently we can't interchange this with Karaage 唐揚げ, because the 唐 means Chinese 👲🏻🤔
•To further this rule, I often hear Hong Kong people complain a Chicken Nanban 南蛮 is not Crispy enough, but in reality it has to be re-soaked in sweetish Vinegar. Because it's a pickling concept picked up from the Portuguese/Spanish, hence why the recipe was called a 'Nanban Zuke 南蛮漬け' 🐟💦💦
•Chef's version here uses Tartar sauce as a 2nd sauce on top as is common. But contrary to popular belief, the other original Miyazaki Nanban Chicken said to be co-created by 'Nao Chan 直ちゃん' side had only Vinegar, but no Tartar sauce. So both are considered legitimate.. You just don't see it much outside of Miyazaki.

The version here is obviously legit. Served as a whole filet rather than as individual chicken pieces. I would prefer the Tartar sauce to have more egginess or Pickles 🥒 though. For some reason, I preferred the sauce slightly more when it was served at nearby 元気一杯 & the ex 富士の幸 (closed), which Chef here also had linkages to before. But we are lucky to have access to this direct Recipe Linage in Hong Kong! 😬

I recently went to Momochan, a pork free Japanese Restaurant at The Square, Jaya One to sample their festive offerings.

Serving Japanese Donburi, Teishoku, Japanese Karaage and Japanese Desserts, Momochan focuses on giving customers a good and as authentic as possible Japanese food experience. The restaurant also offers a pet-friendly section for patrons to dine and chill with their furkids.

Some of the festive offerings that I enjoyed are Shitake Nanban, Karaage Winglets, Plain Chawanmushi, Southern Fried Chicken, and their Christmas Beef Special.

I like the Australian Tenderloin dish, where chef pan seared the beef first, sous vide it then char grilled till nicely done. Japanese ponzu and grated radish sauce was served together to add little sourish taste to your festive meat dish.

●鶏もも肉:約900g
●豚ロース肉:約700g
●麹味噌:大盛り大さじ4
●白味噌:約大さじ3
●青唐辛子お好み量(豆板醤、唐辛子でも十分美味しいよ♪)
●ごま油
●にんにく:3片
●お酒:大さじ2
●みりん:大さじ1
●醤油:大さじ2
●砂糖:大さじ1
※焼く時に漬けタレは出来るだけ取ってから焼いて下さい。

二種類の味噌に醤油や青唐辛子、にんにく等で作られた複雑で深みのある秘伝のタレは
どんなお肉に漬けても、ご飯が鬼のように進む!最高の味付けになってます。
発酵調味料で漬けられたお肉は本当に柔らかジューシーに焼けてとても美味しいですよ♪
お肉だけじゃなく、ご飯につけて焼きおにぎりにしても最高に美味しいです!
作り方は簡単ですが一度食べたら
他の味付けでは満足出来なくなるほど超やみつきになりますよw

[Ingredients]
● Chicken thigh: about 900g
● Pork loin: about 700g
● Koji miso: 4 heaping tablespoons
● White miso: about 3 tablespoons
● Green chili peppers to taste (Dou ban jiang and chili
peppers are also delicious)
● Sesame oil
● Garlic: 3 cloves
● Sake: 2 tablespoons
● Mirin: 1 tablespoon
● Soy sauce: 2 tablespoons
● Sugar: 1 tablespoon

The complex and deep secret sauce made with two kinds of miso, soy
sauce, green chili peppers, garlic, etc., goes like the devil with
rice no matter what kind of meat you marinate it in! It has the best
seasoning.
The meat marinated in the fermented seasoning is really tender, juicy,
and delicious ♪
Not only is the meat delicious, but it's also great dipped in rice and
made into grilled rice balls!

全国で有名なお弁当屋でお持ち帰り!『ほっともっと店』に伺いました。ほっともっと(HottoMotto)といえば「ほっかほっか亭」の持ち帰り弁当新ブランドとして平成20年にスタートした新業態の弁当屋さんです。創業者はもともと明治時代より食に関わる家系だそうで、食に対するこだわりをモットーにしています。「ほっともっと」は全国に約1500店舗ほどあり、持ち帰り弁当屋としては日本一の店舗数を誇っています。まさに弁当業界のパイオニアとも言えるお店で、久しぶりに唐揚げ弁当を買ってみました!
【今回の注文】・特から揚弁当 6個入り(税込:454円)大きめの唐揚げが6つ入るボリューミーなお弁当。揚げたての唐揚げはジューシーな肉がポイント高い。ご飯とおかずが別に入ってくるスタイル。付け合わせのポテトサラダと漬物はデフォでほとんどの弁当に入ってくる。量がちょっと少ない気も。・チキン南蛮弁当(税込:463円)タルタルがすでにかかっている。肉が薄く、フリッターのような食感がもう少し唐揚げのようなガリッとした食感だともっとよかった。南蛮ソースの量が少ない。タルタルも別添えでもう少したっぷりあると良かったかも。別で添えられたご飯がやや柔らかめで雑に入っていたのでもう少し丁寧に盛り付けて欲しかった。
