I’m sure you can tell, the kids love their dim sum. If I didn’t remember wrongly or is it second child syndrome? 😂, Aaron’s first adult food is steamed bun and he definitely enjoyed it!

Banana Boat Ride
This exciting recreational activity is accessible on the island by joining a banana boat ride activity. Banana boats are giant yellow inflatable boats that can cater to 10 to 20 people.

Nasi Dagang Terengganu

Bahan-bahan:
5 cawan beras siam wangi cap Bird of Paradise
2.5 cawan santan cair & 2 cawan santan pekat
3 ulas bawang merah - dimayang halus
1 inci halia - mayang halus
3/4 sudu besar halba
1 sudu besar garam kasar (paras rata) - dicampur ke dalam santan pekat
Cara cara:
Beras dibersih dan direndam dgn air seketika sebelum dikukus. Letak air ke dalam pengukus sehingga mendidih.
Masukkan beras ke dalam pengukus dan kukus sehingga separuh masak (nampak wap keluar lebih kurang 20-30 minit.
Bila separuh masak, angkat kemudian masukkan ke dalam bekas yg besar lalu siramkan santan cair dan kacau rata.
Masukkan semula ke dlm pengukus bersama daun pandan dan kukus sehingga masak.
Bila masak, angkat masukkan ke dlm bekas besar bersama halba, halia, bawang merah dan dgn serta merta siram dgn santan pekat dan kacau perlahan sehingga rata.
Kemudian rata dan kemaskan nasi. Bila nak hidangkan ceduk dari tepi perlahan lahan sambil digembur gemburkan.

Gulai Ikan Tongkol

Bahan-bahan:
1 ekor ikan tongkol hitam (lebih kurang 1 kg)
1 kotak santan kotak - air secukupnya
3 sudu besar cili kering kisar - tambah jika suka pedas
1 pek rempah gulai cap bunga rose (bancuh dg sedikit air)
8 gram rempah masak cap bunga rose
2 keping asam keping
2 sudu besar gula melaka/gula atau secukup rasa
10 biji cili api
6 - 7 biji belimbing buluh
Garam secukup rasa
Bahan kisar:
10 ulas bawang merah
4 ulas bawang putih
1 inci halia
2 hiris lengkuas
Cara cara:
Ikan dibersihkan kemudian direbus bersama 4 keping asam keping dan garam sehingga airnya tinggal separuh. Kalau rebus dan dibiarkan semalaman, lagi sedap.
Dalam periuk lain panaskan minyak, tumis bahan bahan kisar, cili kisar sehingga garing dan masukkan rempah gulai dan goreng lagi sehingga naik bau dan pecah minyak. Nota: Resepi asal Terengganu, santan dimasak sehingga pecah minyak sebelum dimasuk bahan kisar dan serbuk.

Nasi Dagang Terengganu
Masukkan santan, kacau sehingga hampir pecah minyak. Masukkan ikan, asam, gula Melaka dan garam, renih sehingga pecah minyak dan agak pekat. Saya gunakan sedikit air rebusan ikan, jadi rasakan dulu asam garam sebelum dimasukkan asam dan garam supaya kuah tak terlebih masam pula.
Masukkan cili padi dan belimbing buluh. Renihkan sebentar. Bolehlah angkat dan dihidangkan.
