Black Pepper Spiced Pineapple Tart - a mix of caramelized and non-caramelized pineapples, black tea ganache, freshly grounded black pepper.

Made with black tea (紅茶)powder from Kyoto and fridge pack sliced pineapples from @dole.singapore which are actually the perfect sizes for such tarts. I once had black pepper in a pineapple pastry from one of the Tokyo patisseries and decided to remake it this time by pairing it with a strong flavored tea which will not be covered by the sweetness of the fruit.

Q: Why did China suspend imports of Taiwan pineapple?⁣
A: China said there were various types of mealy bugs found in several batches of fresh pineapples shipped from Taiwan in 2020.⁣
⁣
Q: How many times did mealy bugs were found?⁣
A: In 6200 badges last year, mealy bugs were found in 13 badges. The pass rate is 99.79%.⁣
⁣
Q: How to solve the problem of bugs?⁣
A: The standard international practice is to accept the batches after they've undergone fumigation. It is solved already in 2020.⁣
⁣
Q: How much will be affected by the halt?⁣
A: Total produce per year is around 430,000 tonne. Around 12% were exported, while 91% within went to China. From the data last year, it involved 41661 tonne, which had a value of NT$1.49 billion (US$53.39 million). In other words, the halt affects around 10% of Taiwan total produce.⁣

Q: Other than pineapple, what kinds of fruit were mainly exported to China?⁣
A: Betel nut, wax apple, custard apple, grapefruit and orange. Over 90% of export went to China.⁣

上次和大家分享了我爱喝的气泡水们，后台有好多小伙伴都说跃跃欲试想要一一尝试，当然也看到有人说初次接触气泡水不太习惯，所以今天再来分享一下我日常会用气泡水/苏打水做成的饮品，主料就是各种水果，每一款都很好喝又很健康，还可以根据我的方法举一反n，制作你自己喜爱的口味～

▋食材Ingredients

★ 蜜瓜球球气泡水：

黄绿两种蜜瓜200g，400g green and yellow honeydew melon

蜂蜜1大勺，1 tbsp honey

柠檬汁1小勺，1 tsp lemon juice

薄荷叶随意，some mint leaf

气泡水600ml，600ml sparkling water


★ 冰冻葡萄气泡水

葡萄150g+200g，150g+200g grape

糖1大勺，1 tbsp sugar

青柠檬汁1小勺，1 tsp lime juice

气泡水500ml，500ml sparkling water


★ 西瓜牛奶气泡水

西瓜150g，150g watermelon

牛奶200ml，200ml milk

糖1大勺，1 tbsp sugar

气泡水500ml，500ml sparkling water

香草精1滴，1 drop vanilla extract


★ 超级柠柚气泡水

柠檬1个，1 lemon

青柠1个，1 lime

西柚半个，half grapefruit

糖2大勺，2 tbsp sugar

冰块200g，200g ice

气泡水500ml，500ml sparkling water


★ 百香菠椰气泡水

百香果1个，1 passion fruit

菠萝1/4（200g），200g pineapple

糖1大勺，1 tbsp sugar

椰汁200g，200g coconut milk

气泡水500ml，500ml sparkling water

1. 水滾下鍋，水量要足，熱傳導好不黏糊
2. 小火煮，輕輕攪拌，保持微滾不黏底
3. 煮至湯圓膨脹即可撈起，避免久煮
4. 起鍋後泡冷水30秒降溫，表皮更Q彈

1) 燒冷冰
材料：
煮好的湯圓 適量/ tangyuan
碎冰 適量/ice
檸檬汁 適量/lemon juice

黑糖漿dark brown sugar syrup
材料：
水 800ml/water 800ml
黑糖 300公克/dark brown sugar 300g
二砂糖 300公克/light brown sugar 300g

作法：
1. 黑糖漿材料的水煮滾，放入黑糖、二砂糖，煮至糖融，再靜置冷卻至略濃稠，即為黑糖漿。
2. 大碗中放入滿滿碎冰，淋上黑糖漿，再放上剛煮好的湯圓，淋上檸檬汁即可。
小標：冰冰涼涼超好吃

2) 奶茶湯圓

材料：
煮好的湯圓 適量/tangyuan
紅茶 200公克/black tea 200g
鮮奶 200公克/milk 200g

作法：
1. 杯中放入紅茶，倒入鮮奶，再放入煮好的湯圓即可。


3) 酒釀荔枝湯圓

材料：
煮好的湯圓 適量/ tangyuan
荔枝肉 適量/ lychee
酒釀 適量/ fermented rice
桂花釀 1小匙/ Osmanthus syrup 1tsp.
糖水 適量/ syrup
碎冰 適量/ice

作法：
1. 碎冰放入碗中，加入適量糖水、荔枝肉。
2. 放入放上酒釀、湯圓，再淋上少許桂花釀即可。


4) 水果湯圓

材料：
煮好的湯圓 適量/ tangyuan
芒果丁 適量/ mango
鳳梨丁 適量/ pineapple
西瓜丁 適量/ watermelon
蘋果丁 適量/apple
糖水 適量/ syrup
冰塊 適量/ice cube

作法：
1. 糖水和冰塊放入碗中，放入所有水果丁。
2. 再放入煮好的湯圓即可。
