Yung Kee Restaurant’s (鏞記) double boiled winter melon soup (in melon bowl ) retains the charm of the good old times. Using pure frog broth as soup base, it is clear and fragrant, genuinely thirst quenching and relieves summer heat.
Ronald Kam, the owner of Yung Kee told me that in the old days, it was very common to use frog broth as a base for this dish. Back then, most people were farmers, hence field frogs were easily found and readily available. It was cheap too. As time went by, as fields diminished, so did field frogs. People turned to using chicken or pork broth instead, so did Yung Kee. For this special edition, Ronald ordered fresh field frogs to make broth. I was never a big fan of double boiled winter melon soup. I found it tacky – the subtle taste of winter melon often overpowered by the flavour of meat and ham. Yung Kee’s version in pure frog broth proved how ignorant I was. The soup was a breath of fresh air. I finally understood the origin beauty of this dish!
鏞記還原了舊時代冬瓜盅有氣質的味道——用純田雞湯做湯底,得出清澄芳馨的效果,喝罷真正消暑生津。
鏞記老闆禮哥說,在舊時代,田雞湯做冬瓜盅湯底很普及,一來務農社會,田雞是個唾手可得的食材,二來廉價。但隨著時代變遷,田雞隨著田地一併漸漸消失,純田雞湯底去做冬瓜盅反而難,便開始用上湯來做此菜。鏞記也一樣,平常他們賣的冬瓜盅,是上湯兑二湯來做湯底,此次的特別版,禮哥特地訂新鮮田雞來做湯底。我從來都不特別喜歡吃冬瓜盅,總覺得上湯味裡頭的肉味、火腿味的濃帶三分俗氣,有點偏差的冬瓜盅的原意,這個純田雞湯底的冬瓜盅,如此清麗馨美,我真是孤陋寡聞,吃到了這個「消失中」的版本,才理解冬瓜盅絕妙的美!

夏至養生重點:「護養陽氣,清熱養心」
冬瓜:清熱解毒、利水消腫
夜香花:清肝明目、寧心安神
夜香花冬瓜粒湯飯
材料:冬瓜半斤(約300克)、草菇5粒、瑤柱2粒、豬肉50克、夜香花40克(約1両)、白飯1碗
豬肉醃料:鹽、糖、豉油、麻油、生粉各少許
做法:
1. 材料洗淨,瑤柱浸泡在水中至軟身,瑤柱水留下備用;冬瓜去皮去瓤後切粒;草菇切半;豬肉切丁,加入醃料醃最少15分鐘備用。
2. 鍋裡加入約1公升水,加入冬瓜、瑤柱及瑤柱水,以武火煮至水滾,調中火煮10分鐘。
3. 加入草菇及豬肉粒煮約10分鐘,直至冬瓜軟腍後,加入夜香花煮5分鐘,加適量鹽調味,將湯連材料淋在白飯上即成。

Cordate telosma: Clears the livers and improves vision. Calms the mind.
Rice in Winter melon and Cordate telosma Soup
Ingredients: 1/2 catty winter melon(around 300g), 5 straw mushroom, 2 dried scallops, 50g pork, 40g cordate telosma(around 1 tael), 1 bowl of rice
Pork marinade: salt, sugar, soy sauce, sesame oil, corn flour to taste
Preparations:
1. Wash all ingredients thoroughly. Soak the dried scallops into water until softened. Save the soaked water for later use. Peel and pith the winter melon and dice it. Cut the straw mushroom into halves. Dice the pork and add pork marinade and marinate for at least 15 minutes.
2. Add around 1L of water into the pot. Add winter melon, dried scallop and the soaked water. Cook on high heat until boiling. Turn to medium heat and cook for 10 minutes.
3. Add straw mushroom and diced pork and cook for 10 minutes. When the winter melon is softened, add the cordate telosma and cook for 5 minutes. Add salt to taste. Pour the soup and ingredients over the rice and ready to serve.

南豆袪濕湯:
材料:
南豆1兩
薏米1兩
蜜棗3粒
冬瓜2斤
赤小豆1兩
木棉花1兩
豬骨600克
處理:
1. 真空煲內煲一煲滾水,豬骨出水3分鐘。
2. 南豆、薏米、赤小豆及木棉花,清水浸5分鐘,倒去水分,浸第2轉。
3. 豬骨已出水,清水洗乾淨。
4. 蜜棗,洗淨。
5. 木棉花已浸了第2轉,清水沖洗乾淨。
6. 南豆、赤小豆及木棉花,洗乾淨。
烹調:
1. 所有材料,放入真空煲,加入水3升。
2. 冬瓜,切好,同放入煲。
3. 用“濃香煲湯”功能,煲40分鐘。
4. 過了40分鐘,湯已煲好,但不要打開蓋,焗1小時。
5. 完成,可享用。
White hyacinth bean soup:
Ingredients:
White hyacinth beans 1 tael
Barley 1 tael
Candied dates 3 Nos.
Winter melon 2 catty
Rice beans 1 tael
Bombax ceiba linn 1 tael
Pork bones 600g
Preparation:
1. Boil up a pot of water in vacuum cooker. Soak pork bones for 3 minutes.
2. Hyacinth beans, barley, rice beans and bombax ceiba linn, soak in tap water for 5 minutes. Pour away water. Soak in tap water for the second round.
3. Pork bones has been soaked well. Rinse thoroughly.
4. Candied dates, rinse them.
5. Bombay ceiba linn has been soaked for the second round. Rinse with tap water.
6. Hyacinth beans, rice beans and bombax ceiba linn, rinse thoroughly.
Steps:
1. Put all the ingredients into vacuum cooker with water 3L.
2. Wintermelon, cut well, put into cooker.
3. Use "porridge/soup" function, cook for 40 minutes.
4. Soup has been cooked well after 40 minutes. Leave it for 1 hour.
5. Complete. Serve.

夜香花冬瓜湯(2~3人份量):
材料:
夜香花120克(大約2~3兩)
冬瓜1斤
瘦肉120克
皮蛋1隻
鹹蛋1隻
薑3片
調味料:
鮑魚汁1/2茶匙
生粉1/2茶匙
處理:
1. 夜香花用清水浸10分鐘。
2. 洗淨瘦肉。
3. 冬瓜去囊、去皮,切細粒。
4. 薑,切3片。
5. 瘦肉切片。
6. 瘦肉調味:
a. 鮑魚汁1/2茶匙
b. 生粉1/2茶匙
攪勻。
7. 皮蛋,剝殼,1開4舊。
8. 鹹蛋,剝殼。
9.夜香花已浸好,沖洗乾淨。
烹調:
1. 煲1公升水,放薑片落煲。
2. 放瘦肉、冬瓜皮、及鹹蛋黃。
3. 滾起後,收至中慢火,再滾5分鐘。
4. 放夜香花及皮蛋,滾2分鐘。
5. 過了2分鐘之後,一邊放鹹蛋白,一邊攪拌,完成。
Winter melon soup with telosma cordata:
Ingredients:
Telosma cordata 120g
Winter melon 1 catty
Lean meat 120g
Century egg 1 No.
Salted egg 1 No.
Ginger 3 slices
Seasoning:
Abalone sauce 1/2 tsp
Tapioca starch 1/2 tsp
Preparation:
1. Soak telosma cordata in tap water for 10 minutes.
2. Rinse the pork.
3. Clear the seeds, peel off and dice the winter melon in small cubes.
4. Cut 3 slices of ginger.
5. Slice the pork.
6. Season the pork:
a. abalone sauce 1/2 tsp
b. tapioca starch 1/2 tsp
Mix well.
7. Remove shell of century egg, divide into 4 shares.
8. Remove shell of salted egg.
9. Rinse telosma cordata thoroughly.
Steps:
1. Boil up 1L water, put ginger slices then.
2. Put pork, skin of wintermelon and salted egg yolk.
3. Turn to medium low flame after boiling up. Cook 5 minutes more.
4. Put telosma cordata and century egg, cook 2 minutes more.
5. Stir the soup, at the same time, add salted egg white. Serve.

材料:
冬瓜4斤
蓮子1小碗(乾蓮子先說用熱水浸泡,新鮮蓮子洗淨去心)
百合1小碗(乾百合先用水浸泡,新鮮百合清水洗淨瀝乾)
瘦肉1小碗(份量隨意,切粒,加少許鹽糖胡椒粉調味)
冬菇幾隻(浸軟切粒保留浸冬菇水)
江瑤柱4粒(先用熱水浸軟保留瑤柱水)
蝦乾1小碗(洗乾淨備用)
雞湯適量(可用盒裝雞湯或清水代替)
做法:
1.冬瓜洗乾淨去瓤,放入煲中,冬瓜中間放入瑤柱及瑤柱水,蝦乾,然後加雞湯或清水到剛剛蓋過冬瓜。中慢火煮大概1至1.5小時。
2.加入冬菇粒、蓮子、百合、瘦肉再煮半小時。有需要可加少少海鹽調味。
Stewed Winter Melon Soup
Ingredients:
Winter melon 4 catty
Lotus seed 1 small bowl (Soak dried lotus seed in hot water. If the fresh lotus seed, wash it and remove lotus plumule.)
Lily bulb 1 small bowl (Soak dried lily bulb. Wash the fresh lily bulb and drain it.)
Pork lean 1 small bowl (Dice and marinate with a little salt, sugar, ground pepper.)
Shiitake mushroom few (Soak it and dice, hold the mushroom water.)
Dried scallops 4 pcs (Soak dried scallops in hot water and hold the scallops water.)
Dried shrimp 1 small bowl (Wash it.)
Chicken broth some (Use a box of chicken broth or water)
Steps:
1. Wash winter melon, take out the seeds. Put it into the pot. Add dried scallops with soaked water and dried shrimp in the middle of winter melon. Then pour in chicken broth or water, and cover the surface of winter melon. Boil for 1-1.5 hours with mid-low heat.
2. Put the diced shiitake mushroom, lotus seed, lily bulb, pork lean into the winter melon, and cook for 30 mins. Season with sea salt if necessary.
