預防顯老頸紋
頸部皮膚薄,皮脂腺相對少所以保水力較弱,加上終日低頭看電話,缺乏保養下頸紋就出現了!頸紋分橫紋和直紋,橫紋被稱為「年輪」,看樹的年輪可以看出樹齡,而頸的「年輪」就因為老化、肥胖、常低頭、坐姿差等原因而造成;直紋被稱為「火雞紋」,因為皮膚衰老鬆弛而造成。頸紋一旦形成就很難完全消除,所以預防勝於治療,以下給你一些頸部保養小貼士。
1. 防曬
別小看無處不在的紫外線,它會令皮膚提早老化,下次用防曬霜時勿忘塗抹頸部。
2. 護膚
皮膚一旦缺水就容易老化,平日護理臉部時就把護膚品順手抹一抹頸部吧!
3. 穴位按摩
塗抹護膚品時順道給頸部來個按摩,從天突穴(胸骨上窩中央)開始往上推至廉泉穴(頸前正中線喉結正上方),由下向上輕推,旁邊由鎖骨向上推至耳背, 促進 氣血運行有助預防皺紋出現。
4. 換姿勢
如果固定一個姿勢太久便容易產生皺紋,例如低頭玩電話、習慣 傾向一側睡 ,最好不時轉換姿勢。
5. 臟腑調理
中醫理論認為臟腑功能失調就容易令皮膚乾燥,皺紋提早出現,所以要注意臟腑健康,可從每日一杯米水開始健脾養胃。

Prevent neck wrinkles
The skin on our neck is quite thin, and it has fewer skin appendages like sebaceous glands. Hence, it could not effectively retain moisture in the neck region. Besides, the habit of tilting down our heads to look at our phones could also lead to neck wrinkles if we do not take care of it!
There are horizontal and vertical neck creases. Horizontal neck creases are also known as the ‘growth ring’, which is a reference to the scientific method of dating tree rings to the exact year they are formed. The causes are mainly aging, obesity, tilting the head downwards, and bad sitting posture.
Vertical creases are also referred to the ‘turkey neck’, which is caused by sagging skin. It is very difficult to get rid of these wrinkles once they are formed, hence, it is better to prevent it in advance. Here are some tips for you to take care of your neck.
1. Apply sunscreen
Do not underestimate the power of UV ray as it can cause the skin to age faster. Do not forget to apply sunscreen on your neck.
2. Take care of the skin
The skin will age fast if it lacks moisture, so apply some facial cream on your neck too!
3. Massage the acupoints
After applying skincare products on your neck, give it a massage. Start by massaging the ‘Tian Tu’ acupoint (the middle of the suprasternal fossa) and move up to ‘Lian Quan’ acupoint (the centre of the neck and above the Adam’s apple). Gently massage upwards. Then, massage from the collarbone all the way up to the back of the ears as this can improve the circulation of the qi and the blood to prevent wrinkles from forming.
4. Adjust posture regularly
It is easy for wrinkles to develop if we remain in the same posture for a long period, for instance, tilting our heads downwards when playing with our phones and sleeping on one side. It is best for us to adjust our posture regularly.
5. Take care of the internal organs
Chinese Medicine believes that our skin would dehydrate if the internal organs failed to perform optimally, hence contributing to the formation of wrinkles. We need to take care of the health of our internal organs, and drink a cup of rice water a day to strengthen the spleen and nourish the stomach.

Merry Christmas!
I had a quiet but very traditional Christmas dinner/lunch at home this year.
To me there are 3 things which are essential to a proper and authentic Christmas dinner:
1) The main course must be a roast. Some people use turkey, but it is more for Thanksgiving, the most traditional dish is either ham or roast pork.
I originally planned to make a medium size roasted pork knuckle, but somehow ended up getting a 2.5kg hind leg quarter, so the dish is more like a roasted pork leg rather than just the knuckle. And I marinated it in a brine of salt, herbs and spices, vinegar and brandy for 36 hrs, so the taste and texture ended up close to a ham.
2. For a proper Christmas roast, I feel that it is very important that the meat must be very tough, preferably tasteless, like turkey breast or very dry roast pork. I think that this is a very Christian thing, denying yourself of earthly pleasures, instead, praising self sacrifice and sufferings.
By this golden standard, I passed with flying colours! While the outside meat was quite tender but very salty, especially the crackling, the inside meat was still quite tough and bland in taste.
But just like eating tough turkey breast, one can always be polite and avoid commenting on the taste of the meat. Instead, focus the priase on the richness of the stuffings, the tastiness of the gravy, or how pretty the Christmas paper napkins are. In my case, I cooked a home made apple sauce, which was indeed very good, and complemented the tough meat in a very nice and balanced manner. Of course the acidity of the apple sauce cuts through the fattiness of the meat, haha...
3. The final test of a good Christmas dinner is of course the leftover. A good Christmas roast must last for a week, and will reincarnate (sorry, wrong religion) in several different dishes, as it goes through the different phases of its karma existence.
We have already eaten this roast twice already today, lunch and then just now finishing dinner. Of course by definition, it gets better and better over time, after each rendezvous with the oven, much like an aging fine red wine (if you believe this, I've got 10 GEM board stock beauties just for you!).
Tomorrow, I very much look forward to my ham sandwich lunch, likely to be followed by a ham stew dinner. Day after tomorrow, we can still make a very nice soup stock with the bone (we don't have a dog)...
I have a very simple Christmas wish this year! Please let this pandemic pass ASAP, beacuse I don't want to do anymore #homecooking, much prefer going to Tin Lung Heen or Tak Sifu, to eat their very much NON Christmas, but much tastier Char Siu!

3)一個好的聖誕節晚餐的最後考驗當然是剩菜。一個好的聖誕節燒烤必須能吃足一個星期,並且能轉世用來烹調不同的菜式,以幾種不同的方式輪迴(對不起,錯誤的宗教信仰)。
我們今天已經吃了兩次這碟烤肉,包括午餐和剛吃完的晚餐。當然,每次再烤會越烤越美味,就像陳年的紅酒一樣(如果你相信,我會為你推介10隻GEM板靚股!)。
另外,我非常期待明天的火腿三明治午餐,晚餐可能還會有燉火腿。後天,我仍可以用豬骨煲靚湯(我們沒有狗)...
最後,我今年有一個非常簡單的聖誕節願望!就是希望疫情盡快完結,因為對比起#homecooking煮家常菜,我更想去天龍軒或德師傅吃他們非聖誕節,但更美味的叉燒!

If you don't like cold noodle, you just don't have to chill the noodle, no need chill the meat sauce. Then you can enjoy it with hot. It's even less time consuming that way.

Each one of country has their own recipe, ingredients, and the style. We enjoy both cold and hot version in Japan.
Ingredients I used (serving 2)
~ Niku miso (meat sauce) ~
: 160g~200g ground pork
: 30g minced green onion
: 3g minced garlic
: 3g minced ginger
: 1 tsp doubanjiang (or sriracha instead)
~ seasoning sauce ~
: 2 tbsp or 40g Tenmenjan
: 100ml chicken stock
: 1 tsp sake
: 1 tsp sugar
: 1 tsp soy sauce
- Tenmenjan substitute -
: 2 tbsp red miso(reduced sodium) + 1 tsp sugar
: 2 tbsp Hoisin sauce (never tried before, so I can't promise)
~ veggy topping ~
: Green onion stips (3 inch white part)
: Cucumber strips (1/2)
