LAKSA SARAWAK
Bahan-bahan untuk membuat sup laksa Sarawak:
1) 2 belah dada ayam/isi ayam
2)200 gram pes laksa Sarawak
3) 250 gram udang
4) 2 liter air
5) 300 ml santan
6) 2 btg serai
7) 1 kiub ayam
8) garam secukup rasa
Cara2 unk memasak Kuah untuk laksa Sarawak:
1) Basuh dada ayam bersih2 Kemudian rebus sehingga ayam masak dan agak lembut.
2)Setelah msak kuar dan toskn dada ayam (dah sejuk boleh la dicarik2)
3) Dgn menggunakan air rebusan ayam, celur pula udang kedlm rebusan ayam tadi.
4)rebus kira-kira 1 minit. Selepas satu minit, keluarkan dan toskn udang.
5)dgn menggunakan stew ayam dan udang lebih awal, masukkan pula serai yang telah ditumbuk ke dalam air masak.
6)Masukkan pes rempah laksa Sarawak.
7)Masukkn kiub ayam
Masak atas api sederhana sehingga mendidih.
8)Setelah mendidih, tuangkan santan ke dalamnya dan kacau.
9)Reneh dengan api kecil supaya santan tidak pecah minyak.
10)Kemudian masukkan garam dan serbuk perasa. Setelah mendidih dan masak, matikan api. Kuah untuk Sarawak laksa adalah sedia untuk dihidangkan bersama-sama dengan bahan-bahan lain.
Bahan-bahan untuk Mee:
1. 1 pek vermicelli
2. cukup air
Bagaimana memberi vermicelli:
1. Panaskan air di atas api sederhana. Tunggu sehingga mendidih.
2. Jika ia mendidih, masukkan mi vermicelli dan rebus sehingga sedikit lembut.
3. vermicelli biasanya cepat lembut dalam air panas.
Jadi jgn rebus terlalu lama Jika mi terlalu direbus, vermicelli boleh musnah dan hancur
Bahan-bahan untuk membuat sambal belacan:
3 tangkai Cili padi
5 batang cili merah
1 inci belacan
½ sudu teh garam / rasa
1 sudu teh gula / rasa
1 biji limau nipis
Bagaimana untuk membuat sambal belacan:
1)sediakan Cili padi, cili merah dan belacan.
2)kisar bersama-sama sehingga lumat
3)Tambah garam dan sedikit gula secukup rasa
4) Tambah jus limau, kemudian kacau lagi perlahan-lahan hingga sebati.
Bahan-bahan hiasan laksa Sarawak:
1)ayam yg telah direbus air tadi disiat2
2) udang
3) telur dadar dipotong nipis
4) taugeh dicelu

Lai Yee's Kitchen - Mel's Nasi Kerabu Ikan :
I love Nasi Kerabu for the refreshing green and all those salted flavours together. It is basically a rice salad. It is quite a messy dish but super appetizing. It comes from Kelantan. Basically, what you're eating is a very healthy herb and rice meal with the addition of grilled chicken or fish. Nasi Kerabu is made up of a few components, each prepared separately and assembled on a plate right before serving. There is the blue rice, a fried fish sambal, a herb salad and assorted accompaniments such as salted egg, fish crackers and winged bean. The fish sambal is made up of deep fried cencaru fish that has been deboned and flaked, crispy Geragau shrimp and toasty grated coconut, all bound together by a spicy sambal mix.
Ingredients for 10 pax:
* Kerabu Rice:
. 4 cups rice
. 18g dried blue pea flower
. 2.5 litres hot water
. 3 stalk lemongrass
. 5 kaffir leaves
. 50g crushed ginger
*Cencaru Fish Sambal :
. 2 cencaru fish
. Oil for deep fry
*Rempah:
. 3 tbsp oil
. 1 big onion
. 1 whole garlic
. 1 tbsp toasted belacan
. 1 lemongrass
. 100g toasted grated coconut (roughly pounded)
. 8 tbsp dried fried crispy Geragau shrimp (roughly pounded)
. 1tbsp sugar
. 1 tsp salt
* Sambal:
. 10 presoaked dried chilies
. 1 whole garlic
. 1 whole Onion
. 2 tbsp Belacan
. 3-5 tbsp sugar
. oil
. 1cup Tamarind juice
* Accompaniments:
. 5 cups fresh bean sprouts
. 6 stalks thinly sliced laksa leaves
. 2 stalks thinly sliced torch ginger flower
. 5 stalks thinly sliced lemongrass
. 2 finely sliced turmeric leaves
. 10 pcs four angle beans (thinly sliced)
. 1 shredded cucumber
. 5 Salted Duck Egg (I made my own, for recipe, check my ICTV video)
. Some Fish crackers
. 2 tbsp Sambal belacan
. sugar and salt to taste
You can basically take any herbs from your own garden to add on to create your own version. Once you are ready to get started on your plate of Nasi Kerabu, mix everything together so you can taste the layers of flavours and contrasting textures in each bite. Sedap!!

RESEPI LAKSA JOHOR
Bahan-bahannya :-
1 paket Spaghetti (direbus)
BAHAN A :-
5 ekor ikan kembong/sardin/parang/tenggiri mengikut citarasa masing-masing(digoreng, dibuang tulang dan ditumbuk atau diblend)
1 paket kecil udang kering (diblend)
Sedikit isi ikan kurau masin (diblend)
Sedikit udang basah (diblend)
BAHAN B (diblend) :-
3 biji bawang besar
3 ulas bawang putih
10 tangkai cili kering
1 inci halia
1 inci lengkuas
1/2 inci kunyit basah
2 batang serai
1 paket santan pekat
1 mangkuk kecil air asam jawa
1 paket kerisik
2 paket kecil rempah kari ikan
Garam halus
Gula pasir
Ajinomoto
Bahan Ulaman/hiasan :-
Limau kasturi di belah dan dibuang biji
Timun hiris
Tauge
Bawang besar hiris
Daun kesum hiri
Bunga Kantan hiris
Lobak asin halus
Sambal belacan.
CARA-CARA MEMBUAT KUAH LAKSA :-
1. Panaskan minyak dan masukkan bahan B dan tumis hingga wangi dan naik minyak.
2. Bila rempah dah garing, masukkan cili blend, rempah kari, kerisik dan kacau hingga naik bau dan naik minyak.
3. Masukkan bahan A (ikan, udang basah, udang kering dan isi ikan kurau masin) yang telah diblend.
4. Masukkan santan pekat diikuti dengan 2
mangkuk air.
5. Masukkan air asam jawa.
6. Masukkan garam, gula pasir dan sedikit serbuk ajinomoto.
7. Masak sehingga kuah pekat dengan api perlahan selama lebih kurang 1 jam 1/2. Kuah akan lebih tahan lama (tidak basi) jika dimasak lebih lama.
8. Setelah masak bolehlah dihidangkan bersama ulam2an dan hiasannya.

Laksa is a popular Peranakan spicy noodle soup dish, available in different variation depending on the country of origin. Although you can find this noodle soup in Singapore, Malaysia, Indonesia and Thailand, the ingredients used in each country is somewhat different. In general, laksa consists of rice vermicelli with chicken or seafood, served in spicy coconut based soup.

Ingredients for soup stock

600g of prawn heads
3L of water
1.5L of coconut milk
2.5 teaspoons of salt
1 teaspoon of sugar
70g of dried shrimps (soak in 1 cup of hot water, drained & minced)
Rempah paste (blended)
- 300g of shallots
- 5 pieces of garlic
- 5 pieces of red chilli (deseeded)
- 20 pieces of dried chilli (rehydrated)
- 3 pieces of lemongrass (use only its stem)
- 6 pieces of candlenut
- 20g of fresh tumeric
- 80g of galangal (blue ginger)
- 1/4 cup of water
- 1 tablespoon of grounded coriander powder
- 20g of belachan (roasted)
Other ingredients
====
Appropriate amount of yellow noodles or rice vermicilli
Beancurd puff
Fishcake
Prawns
Hard boiled eggs
Fresh cockles
Beansprouts
Laksa leaves - minced
