Pistachio Crusted Salmon with Green Curry 🌿 If you’re looking for a quick and delicious dinner recipe, then look no further! 😍
Recipe here:
1 tbsp Green Curry Paste
1/2 cup Coconut Milk
1/4 Medium Zucchini (spiralled)
250g Salmon
1 tsp Dijon Mustard
Pinch of Salt & Pepper
2 tbsp Pistachios (chopped)
1/2 tbsp Honey
1 tsp Olive Oil
1 tsp Lemon Juice
Chopped Coriander and Fresh Chili for garnish
Directions:
1. Preheat oven at 180 degrees celsius.
2. Mix green curry and coconut milk in a baking dish.
3. Add zucchini, then salmon and spread dijon mustard on top.
4. In a small bowl, mix pistachios, honey, olive oil and lemon juice. Carefully ad the mixture on the salmon.
5. Bake in the oven for 15 minutes.
6. Sprinkle with chopped coriander and fresh chili.
7. Yum! 🤗
