#sayrealone Our friends all know that we love to drink Pokka's Oolong tea. When we eat at any hawker centres, there is always a can of Oolong on our table. If you open our fridge at home, you will confirm see two big bottles of Oolong.
When POKKA asked me to pair their drinks with hawker food, easy peasy! No sugar tea is the way to go lah. I went to my favourite dinner spot at Blk 511 Bedok North Street 3 and paired my favourite dishes with Oolong, Houjicha, Sencha and Jasmine Green Tea No Sugar!

Cafe Mariam only sells two things — Nasi Biryani or Nasi Mandi. Mandi is the Arabic version of biryani and many people consider it a healthier version. Chef Hassan’s kitchen is small, so he comes up with his own technique of smoking it to give his Nasi Mandi its characteristic smoky flavour and taste.
The accompanying meats are spiced and stewed in a pot till soft. Upon order, Chef Hassan starts his fire guns and torches the meat surface till it’s slightly charred on the outside. The meats are paired with green chilli chutney and yogurt. If you ask me, I’ll very much love to combine both nasi briyani and nasi mandi, and savour them together. It’s so good.

In this video, we whipped up the Ultimate Singaporean Breakfast in Neo’s Kitchen. Since so many of you have requested an Economic Bee Hoon video, I decided to make it a challenge but with a twist. A traditional plate would consist of Bee Hoon/Egg Noodles with a bunch of sides like luncheon meat, eggs and stir-fried vegetables, with a healthy dollop of sambal. However, I came across OmniMeat, a plant-based alternative to your common meats, that offered OmniMeat Luncheon, an imitation luncheon meat. They also offered OmniMeat Strip, which is their equivalent to the sliced cuts of meat commonly used in stir-fries. There is a lucky draw for FairPrice gift vouchers, details are below!
For my challenge, I piled on at least 4 portions each of Bee Hoon and Fried Egg Noodles, together with 9 eggs and 3 packets worth of OmniMeat Luncheon onto my giant plate. My mum helped to cook the egg noodles and also stir-fried the OmniMeat Strip with some vegetables, which I added onto the platter. To round it off, I added a healthy serving of sambal.
The luncheon meat had an almost identical texture and colour to real luncheon meat and it would be difficult to tell the difference at a glance. Flavour-wise, it did taste different but not in a bad way. Luncheon meat normally tastes very salty and processed while OmniMeat Luncheon tasted “cleaner” and felt more like it was comprised of actual ground meat. The OmniMeat strips were pleasant and chewy but it was apparent that it was not meat in the flavour. However, it was far superior to most mock meats I have tried with a palatable taste and rich smoky flavour.
This was a straightforward challenge featuring one of Singapore’s most popular breakfast dishes, Economic Bee Hoon. Jazzed up with plant-based meat, an ever-growing trend that is supposed to be better for the environment, this challenge was healthier than most. OmniMeat Luncheon is certainly far healthier than any canned luncheon meat and would be a great addition to your kitchen. Do note that it requires cooking. If you are hosting for Chinese New Year, OmniMeat would be a great option to have in your spread, especially for vegetarian friends and family. OmniMeat also has a range of other Asian-inspired plant-based alternatives that would not be out of place at a Chinese New Year party. For this episode, we went down to Menbaka Fire Ramen at Cineleisure Orchard to destroy a 15-bowl Flaming Ramen Challenge! Menbaka Fire Ramen is a renowned Ramen purveyor based in Kyoto, Japan and this is their first outlet outside of Kyoto. Their ramen comes heavily flavoured with Negi (Japanese Scallion), with your choice of a Shoyu Broth (their speciality, at $17.90), a Tonkotsu Broth ($18.90) or a Vegetarian Broth ($16.90). The highlight of your visit would be a fiery display of the Chef pouring burning Negi Oil onto your bowl of ramen, resulting in a tower of flames. They allow you to sit right in front of this show and will film the entire thing for you if you wish.
For my challenge, I ate 15 bowls of Shoyu Fire Ramen. Each bowl came with the Shoyu Broth, Ramen Noodles, Char Shu and a heavy sprinkling of Negi, before being topped by their signature Negi Oil. The flaming Negi Oil added a smoky flavour to the Shoyu Broth, reminiscent of wok hei but with a scallion tang. The broth was rich and flavourful, not overly salty but with noticeable layers of flavour-building. The Shoyu Broth is made from chicken, soy sauce and with 2 different kinds of fish, which formed the umami richness. I was surprised by the amount of Negi (and additional Negi Oil) added, but it helped to mellow the strong Shoyu Broth flavours. The ramen was excellent, al dente, yet springy and mildly flavoured, perfect to soak up the rich Shoyu Broth.
With the Shoyu Broth being very heavy, I opted not to guzzle all the bowls which allowed me to push to 15 bowls of Shoyu Fire Ramen. Menbaka Fire Ramen is a quaint restaurant that pairs adrenaline-pumping theatrics with excellent Shoyu Ramen at a very reasonable price. Aside from the good ramen, do visit for the unique experience and Instagrammable photos!

Chwee Kueh (water rice cake) is a breakfast dish commonly eaten in Singapore. The rice cake is made with rice flour and water steamed in a metal mould, giving it its signature shape. It is topped with chai poh (preserved radish) that is flavoured with garlic and soya sauce before being fried in oil. Chilli sauce is usually served on the side.
For my challenge, I visited a specialist Chwee Kueh shop at Taman Jurong to get 100 Chwee Kueh to destroy. The shop is run entirely by an old man who has been making Chwee Kueh for decades and has been at this location for 5 years. His Chwee Kueh is very affordably priced at 5/10 for $1.50/$3. There are more famous and Michelin-awarded places out there, but I want to help less well-known and legacy businesses.
The rice cakes on their own are actually rather bland and light, which is normal for rice cakes as they are meant to act as vessels for the toppings. The preserved radish were very savoury and barely sweet, unlike some of the more famous ones. As they were practically deep fried in oil, it was a very oily and cloying topping. The chilli compensated the heaviness of the topping well, with a lightly spicy and heavily smoky flavour.
At 100 rice cakes weighing around 5KG, it was quite a challenge to complete as the oily and heavy preserved radish got to me quick. While adding the chilli sauce helped, I still had to push myself to complete the challenge. As always, if you order a reasonable portion of 5 or 10, this would be a hearty breakfast to start the day with. Do support local businesses and this old man by visiting his Chwee Kueh shop!
